How to marinate grilled chicken breasts for green Chimchurri sc?

I'm having new guests over tomorrow night, so I don't want to blow this dinner. I had planned to grill flank steak with green chimchurri sauce. I made this sauce before and loved it. Primarily the sauce is spearmint, parsley, lots of lime, garlic and poblano pepper (no vinegar). It has a wonderful fresh taste.

I just found out that one of the guests doesn't eat red meat, so I thought I'd use this sauce with grilled chicken breasts. Any ideas how to marinate the chicken beforehand. I think I could do a simple marinade of evoo and lemon juice an hour beforehand, but I'm not sure. I'm not versed enough at cooking to wing much of anything. My recollection was that marinating in lemon juice should only be for an hour or it turns the chicken to mush. Is that right?

Maybe I should marinate in lime juice? Should I also use olive oil? Anything else? And how long?

I'm also serving mashed potatos (not bc. it goes, but bc. everyone wants it). Any ideas for a good vegetable that is EASY and could conceivable be served plain (perhaps with a bit of butter or evoo) or topped with Chimchurri sauce for those who want.
