Spinach Salad w/ Winter Squash

I saw a salad in the display case at Whole Foods last week that inspired me to try putting winter squash in a salad.... it was great! I wish I had taken a photo as the colors of the green spinach and the orange squash were so appetizing. I served this with a couple of slices of foccacia and it was a lovely lunch for two. Adjust the amounts for a bigger group.

Ingredients:

1 small Kuri red winter squash (probably could use any small winter variety)

1 small bag of baby spinach

2-3 T chopped red onion

1/2 of a large apple (a sweet variety such as Honeycrisp)

1/2 stalk celery sliced

Newman's Raspberry Vinaigrette

Maple syrup and parmesan (optional)

Halve the squash and bake til soft but not mushy. Remove peel and cut into cubes.

Drizzle with a little maple syrup (or maybe brown sugar) and let cool.

Put spinach in a large salad bowl. Top with red onion, celery, apple and finally the cooled squash.

Dress with the Newmans raspberry vinaigrette (don't use too much- just enough to moisten everything) and very gently toss.

Garnish each serving with a sprinkle of fresh parmesan.
