I was headed to Xatapa Mexican Restaurant for their fantastic soft tacos, then changed my mind and went for healthier.

Sarris' Cafeteria for roast beef and succotash, and half a corn bread muffin.

Well Glenda, they both sound pretty darned good. Maybe the tacos a tad better, though.

We were going to get soup from our local 'soup lady', but when DH got there, the place was closed. Luckily, only because she's taking a few days off to move to a larger, nicer location down the block.

So instead, I pulled some creamed dried beef out of the freezer--had it over biscuits, with applesauce and corn.

I'll take any one of the meals posted so far.

I had ground turkey/gravy over a potato, steamed some corn.

tonight we are having lemon chicken over rice with peas and carrots. The teenagers are going to make 3 2 1 cakes for dessert.

I pulled some smoked shredded pork out of the freezer, warmed with bbq sauce, and DS made fried potatoes with bread crumbs. We added pickles and that was dinner. DS came over to finish washing the RV and started waxing it, and his girl friend and the boys came for supper. The boys had a blast playing outside.

Had dinner at work, leftover fried oysters from home.

I got lazy tonight so I just sliced a few good size chunks off the smoked ham in the fridge, then put those in my steamer with carrots, potatos and four wedges of cabbage. Steamed that for 45min till the veggies were all tender and served it up...

Prep time, 10minutes
cook time 45minutes (and the cook time is all unattended so your free to be doing something else)

What could be simpler?

Finally did make "Slamma Jamma Parmagiana" (chicken parm).
Good -- and ate at the dining table instead of in front of the TV!

Also had a little bit of carrot cake later in the evening. The cake was from the freezer section of Trader Joe's.
