What's for dinner Wednesday?

I swear I've been on that phone all day. It's not my favorite thing since I've retired from talking to my customers all day long. Funniest call from from my SisIL in Georgia. First of all, she has a real Southern accent and talks a mile a minute. I was on another call, so the message on the answering machine went like this: Hi, this is CJ. I'm in jail for --DI and I'm trying to raise money for bail. Well, knowing her I KNEW it couldn't be DUI but couldn't understand what she was saying because there was so much noise in the backround. She called a few minutes later and it turned out "jail" was one of those deals where they lock up up to raise money. This was for MDA (that southern accent made the "A" sound like an "I". It was to raise money to send kids with MD to camp this summer. I still have that message saved on my phone to play back when I need a boost in spirits. She's a hoot!

Today is Harry's 82nd birthday. Makes me so mad that he has fewer wrinkles than I do!! :-) We are celebrating this weekend, but tonight I'm making his favorite meal--baked tilipia and spaghetti sauteed with garlic and olive oil with a little parsley thrown in for good measure. Texas toast, also. Since I've given up frying and processed food (for the most part), he has lost a lot of weight and is down to 189. So he's lost the amount of weight of a 6-year old, basically. Proud of him!

How was your day? Know some of you got a good dousing of rain and/or snow. Enough, already!! Whatcha' having for dinner?

Tacos here with melted cheese and all the toppings you can imagine with a huge bowl of homemade guacamole & chips!

we will be having spaghetti and meatballs and a salad. death by chocolate cake and ice cream for a later dessert. :)

I'm not a sweets eater, either, but love warm ginger bread with lemon hard sauce or whipped cream. I think I see some in my near future! Angelaid, I do leave the skins on the sweet potatoes. Getting a real recipe from me is rare, lol. I so often invent toss this and that together. For the glaze, I mixed some peach jam, chili sauce, a bit of apple cider vinegar, minced garlic, and red pepper flakes. The peach was the primary ingredient. It would be good with apricot or even apple jelly or jam, too. Thank you for the cookbook recommendations, Alisande.

Walnutcreek (so good to see you again!) and Shirley, sometimes microwaved dinners are just the thing! OF, I enjoy raking leaves and shovelling snow. Hubby had ice cream for dessert, but that doesn't interest me at this time of year. I'm glad to see you eating a sandwich of sorts, instead of your usual Coke, Deeby :-) I'm planning on having a stir-fry this week Rhizo. Thanks for the reminder. Angela, your post made me laugh! Partymusic, it kind of was like a frittata. I was looking for something meatless because I'm going to have ham with a honey glaze to go with it. It was very good but I'm glad I did a trial run. Will do some tweaking. It had cubed hash browns, zucchini, onions, red bell pepper and spinach in it. I think I will cut the spinach in half. It also called for eggs and egg beaters. I just had eggs but didn't know how much to use in ratio to everything. Next time I will use the eggbeaters, too to give it a little more eggy base. With those adjustments, I think it will be great. I never saw a double yolk hard boiled egg either!

Great meals as usual!!! Shirley, aren't leftovers grand? No thinking of what to cook and easy cleanup. Phyllis, it's nice to take something handy and put your own touches in it. Susan, I had to laugh at you taking yourself physically away from the kitchen to avoid eating more. I agree, the packaged meals are definitely portion-control! Pam, leftover lasagna sounds good! Especially with your snowy weather. Raven the rotisserie chickie and your sides make a great meal! Angela, your dinner sounds so good. I really like the idea of the pasta and shrimp salad. Cherryfizz your meal made my mouth water. Did you use chicken breasts?

Chili, and gingerbread with whipped topp for dessert. I had two bowls of the chili, and I sit here wishing I weighed 189lbs.

Happy birthday, Harry.

I had homemade beef barley soup and a hot ham/cheese sandwich.

We only got 2 inches of snow here. And it's 95% gone by now. I can live with that kind of snow. I feel badly for those that got so much.

Sounds like Harry is having a delicious birthday dinner!

Hartley"s Down Home Cooking: fried chicken breast, mac and cheese, and baby green lima's.

I had a coupon for buy meat and two and get a dollar off, so meal was just a bit over $6.

Now don't you and Harry party too much on his 82nd birthday!

HappyBirthday and congratulations on the weight loss to Harry. Patty, are you still working on losing weight for the sister reunion? We had meatloaf, mashed potatotes and mushy, overcooked Chinese pea pods. Can't convince hubby that veggies don't need a lot of cooking!

All these meals sound wonderful, especially the death by chocolate cake. I would love a piece of that!

We visited McDonald's for dinner today. I had a cashew teriaki (sp?) salad and it was pretty good.

Harry thanks you all for the birthday wishes. He isn't too happy about turning 82 but I told him to get over it :-) Guess I'm the birthday Grinch!

GrammyMyrna, I was thinking of tacos just yesterday, but I'd be just as happy if you'd pass the bowl of guac and chips over my way :-) I do love guacamole!

Woo hoo, Linda! Are you celebrating something today? Sure sounds like a special meal to me. Enjoy that cake and ice cream.

Schoolhouse, now you have me craving gingerbread. With whipped cream slathered all over it. (Hey--as long as I'm dreaming!) I swear I've gained a pound for just about every one he's lost and he eats more than I do. Sigh!

Shirley, sure glad your snow wasn't as bad as our weather man lead us to believe. I thought you'd be housebound for a week by listening to them.

Glenda, Harry was happy with dinner, but I know he would've liked yours a lot better. I usually tell him about your meat and two dinners--which used to be meat and three and were his favorite thing in the world!

Raven, is fresh corn in the stores already? Guess it is about time for it.

Pam, I like mushy vegetables, too. Guess because I grew up on them. Yes, I'm still working on the weight. It's a whole family reunion, not just sisters. There will be around 50 or more of us. I've just had to watch my weight the last few years. Never had the problem before and I don't like it one bit!! :-(

Luann, you have me drooling on my keyboard, girl! Those potatoes with a steak sound delicious. Goodness, asparagus, too. Wowzer!!

One cup EACH chopped carrots, celery, onions, kidney beans,and kale
One cup Rice Select /Royal Blend whole grains
Quarter cup barley
Two cups chopped leftover chicken
About three cups water or broth.

I put the barley in the water first to give it a head start (ten minutes), then tossed in the rice blend and veggies. I seasoned it with curry, but it would be good with other spices, too.

Just a spur of the moment one pot invention to use up leftover chicken.
