We're having leftovers. Sunday I had my niece and her husband over for dinner. I made a double recipe of the lemon shrimp and ditalini salad, sliced tomatoes and cucumbers with a vinaigrette and corn bread. We had ice cream and sliced strawberries for dessert. I have some shrimp salad and tomato salad left over so that is what we are having. I had also been watching the food network and Trisha Yearwood was making her hot corn dip so I made that for a starter with a glass of wine. I have some of that left over also so one night we'll have a corn chowder for dinner. I try to keep dinners pretty simple when I'm away.

Wish our taxes were somewhere other than the kitchen table. Every year we go through this. He gathers everything up in February, lays it on the table then procrastinates till the last minute.

Just tore up some salad greens, added onion and cucumber, and will add grilled chicken, grapes, toasted walnuts with raspberry dressing to it at serving time. Also have a couple small sweet potatoes in the oven for on the side. A chocolate zucchini bread is thawing for later.

Vegetarian lasagna. The recipe was a bit bland when I made it, but DH prepared it one day adding some garlic, made it really tasty! The recipe calls for regular uncooked lasagna noodles, saves lots of time.

Another person who made lasagna today.....but I had meat in mine.

What will you get from Wendy's Patti? I usually get a plain baked potato and a small chili.

I finished up my taxes yesterday. When I go into town later this week, I'll make copies and send them in.

Today was mostly taken up it seemed like with taking Norm to have his cataract removed and runny here and there afterward. Supper was just pot pie and applesauce.

I have some boneless pork loin chops I will pan sear, add some sweet onions and saute them. I will steam cauliflower to go with it and a small salad.

We split a Tbone steak, mashed potatoes and broccoli. I made some pretty good lemon squares today that we have for dessert.

I just had Endless Zatarain's Jambalaya. At least it seems endless but I am not complaining. Started out with a smoky barbecue chicken breast, added the rice and some green peas, a bit of cheese and had canned pears and/or jello with it. I have been eating it for several nights now and there is still more. Am thinking of adding cooked carrots next, and maybe some 321 cake. When the weather cools a bit, I will be back to soup and cornbread.

A friend and I went to a Vietnamese buffet restaurant for lunch today. We ate and chat for hours, it's a normal thing when we get together. My stomach is still digesting all that food. Grapes is all that my body wants for dinner tonight.

Baked potato tonight

Jody is having a Marie Callender chicken pot pie...I am having a MC microwave dinner. He got home so late...would have been home at 4 but found elderly neighbor broke down on the road between here and town. So he spent three hours working on his truck on the side of the road. (The man has 8 sons, most of whom live within spitting distance of the old man, but they don't help him, but Jody does.) He said he didn't want any supper, but I told him I'd fix him a pot pie. Well...I gave him a choice of the pot pie or the dinner, and he picked the pot pie. ;)

Marilyn, that sounds so sad about your neighbor's family. One time, I had to drive one of my neighbor to the hospital for some testing because her sons neglected taking her. Another time, I took another neighbor to the emergency because no one in her family was around. We live by the hospital and it was faster for me to take her than an ambulance. Plus, her condition wasn't severe enough to need the help of paramedics.

Neighbors can be great supports. I make a point to know all of my neighbors. I am blessed with great ones. We all help and watch out for each others freely.

Your neighbor is sure blessed of having you to lend a hand.

Tonight we had hotdogs and peaches for dessert. Mike drove 300 miles today. We are camped near Baton Rouge, LA and will be in FL tomorrow. Beautiful weather so far and not much humidity.
