Good Salad Recipe

I made this for Senior club pot luck today and had several ask for the recipe. Dottie

South Of The Border Salad

2 cans whole kernel corn, drained

2 cans black beans, rinsed & drained

1 can diced tomatoes with green chilies, undrained

3/4 cup thinly sliced green onions

1 TBSP minced fresh cilantro or parsley

Dressing

1/3 cup olive or vegetable oil

1/3 cup lime juice

1 tsp salt

1 tsp ground cumin

scaned these salads they all look good thought that I'd tell you that the Alaskian cole slaw is so good sence I went through so fast wasn't sure if this was in it it also is yummy Spinach and Strawberry Salad 2 bunches spinach, rinsed and torn into bite-size pieces 4 C. sliced strawberries ½ C. oil ¼ C. white wine vinegar ½ C. white sugar ¼ tsp paprika 2 T. sesame seeds 1 T. poppy seeds in a large bowl, toss together the spinach and strawberries in a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Just before serving pour over the spinach and strawberries toss to coat. another of my favorites Gabbys Macaroni Salad 12 oz. Bow Tie Pasta, cooked according to direction 12 oz. can of chunky pineapple* 1 C. diced celery* 1 bunch green onions, chopped* 1 C. cashews 1 C. grapes, cut in half* 4 Chicken breasts, cooked and diced Dressing 1 C. Mayonnaise 1 16 oz. bottle of coleslaw dressing Mix dressing and combine with above ingredients, except cashews, and macaroni. When blended, carefully stir in pasta to minimize breakage. Chill in the refrigerator for several hours before serving. Add cashews just before serving. *If you want to make changes, just remember 2 veggies and 2 fruits doesnt matter what, just 2 of each. Also I never seem to use that many chicken breast I'd do it to taste and again maybe experiment wonder how it would taste with say salmon just a thought but again it is a yummy dish as is luck with your event sheila

Hello, Here is a layered taco salad that you might like: Salad: 1 medium head iceberg lettuce, chopped 4 cups cooked white meat chicken, cut into 1/2 inch dice 2 large tomatoes, cored and cut into 1/2 inch dice 1 cup sliced, pitted ripe olives 1/2 cup scallions, sliced including 1 inch of green leaves 10 pieces bacon, cooked, drained and crumbled 1 1/2 cups grated sharp cheddar cheese (about 1/2 lb) 2 cups crushed corn chips In a large salad bowl, preferably clear glass or plastic, layer in this order the lettuce, chicken, tomatoes, olives, scallions, bacon and cheese. Can be prepared up to 12 hours in advance to this point. Cover with plastic wrap and refrigerate. Dressing: 1 large clove fresh garlic 2 medium avocados, peeled and pitted 3 tablespoons strained fresh lemon juice 1 cup sour cream 1/2 cup vegetable oil 1 teaspoon chili powder 1 teaspoon salt 1/4 teaspoon ground black pepper 1/2 teaspoon ground cumin 1/2 teaspoon Tabasco sauce In the bowl of a food processor fitted with a steel knife, drop the garlic in with the processor running to mince it. Then place the avocado, lemon juice, and sour cream in the work bowl and process until smooth. Add the vegetable oil, chili powder, salt, pepper, cumin and Tobasco. Process until well mixed. Transfer to a bowl or jar, cover tightly and refrigerate until time for final assembly. About 5 minutes before serving, remove plastic wrap from salad bowl. Spoon dressing over the top. Funny you ask--that's what's for dinner tonight. I make it like sushipup--lettuce topped with the ground beef/taco seasoning mix, then sliced green onions, sliced black olives, avocado slices, chopped tomatoes and cheese. We just top with salsa and I have sour cream on the side--Harry puts his on top. Serve with the chips--sometimes I crush them or I just leave them whole and eat with it. If I was making it for a group though, I'd make Linda's.

So-called Chinese Restaurant Syndrome and the accusatory fingers pointed at glutimates as something dangerous were ideas not accepted by everyone and anyway were long ago discredited. I believe this was the source of what you called the "not very good reputation". Or were you thinking of something else? And not a good reputation with "certain physicians"? What does that mean? I don't often eat canned soups or other concoctions but you can be sure most have glutimate-rich ingredients with less potentially misunderstood names than MSG. The Japanese have long been on the forefront of identifying and using glutimate-rich ingredients. Japanese food is very glutimate heavy. That's why so many dishes taste savory and delicious. J Kenji Lopez-Alt is a respected and innovative chef who's very into the science of food and cooking. Formerly with the Cooks Illustrated operation, he's now doing other things (including writing books) and is associated with the website Serious Eats. I recently made his stew recipe and it includes some unusual ingredients as well as what he describes as an "umami bomb" to jolt the flavor. Soy sauce, tomato paste, anchovies, Worchestershire sauce (which has anchovies in it). The end result was delicious. The not so good reputation you refer to is what exactly?

What? No Jell-O? No shredded carrots? You call that a "salad"???

But it does sound good. I have some recipes similar, using different kinds of beans, some used red onion but essentially the same idea. Thought I might add some celery and radishes to it and try it that way. But the lime juice and cumin in this one is different and sounds like a winner to me. This just might be the recipe I'll make for the annual picnic this summer... since I don't have any orange Jell-O! :D Speaking of which, did you get your keyboard cleaned up? ;)

BTW, approximately how many bunches of green onions would it take to make 3/4 cup? 2? I realize it depends on how much you chop up, how many are in a bunch and even the size, but just a starting point.

Sounds like a variation of Texas Caviar. Serve with corn chips for dipping. YUM

Well. friend Cynic When i had to make something for the pot luck, I was out of Jello & carrots, so as a last resort had to make this salad. LOL I also thought that some celery in this and even different beans would be good. As for the green onions, I bought 2 bunches, and I had enough for this salad, the big Enchilada hot dish I made for company Saturday night, and still have about 3-4 onions left over, which I;ll put in scrambled eggs this morning, so you would have enough with just one bunch.
Wantoretire, my Sis makes Texas Caviar often. She first bought it at the Deli at Byerlys (an upscale supermarket in MPLS) then got the recipe and makes it at home. She is going to bring some up with her when she comes to visit. I would like to taste it, before I try to make it as the recipe makes a large Quantity and is hard to just make a half of the recipe because it contains cans of engred. Dottie

I'd never had this salad until I got to Texas, and we've been having it ever since! It is delicious, and you can heat it, roll it up in tortillas, and have "Texas style egg rolls". I use parsley because we don't care for the taste of cilantro.

does anyone have the recipe that was popular a long time ago that was lime jello with shredded carrots and celery I think in it.

I thought the lime Jell-O was reserved for fruit cocktail. Wasn't that in the Culinary Nihilist's Cookbook?

Google Paula Deen's broccoli salad recipe. It is wonderful. (I'm at work and don't have it with me.) Very easy and everyone that likes broccoli seems to really like it. They always take seconds and ask for the recipe.

I made it for myself and my vegetarian daughter. Very good! My DH tried it but wasn't impressed. Is that all you're feeding me? was his exact comment.
