Stuffing? Dressing?

Always grew up on bread stuffing in the bird. Want to go the southern route and try the cornbread dressing. Why does some of it look like a grits casserole, kinda mushy and pasty? While others look like they have pieces of cornbread - more like what I'm looking for. Any help is appreciated during this transition!
