Here's something delicious....

Make real (not instant) pistachio pudding, and when still warm (not hot), stir in chocolate chips and chopped pistachio nuts.

I think I'll buy some pistachios next time I go to Costco. I love them!

I love pistachios, but do not like having to "dig" to open them.

I had a pistachio layer cake with italian butter cream frosting once. I could have just died and gone to heaven. It was wonderful!

It's cooked pudding and not instant. Still a packaged mix, but heated.

I made this a lot when I was doing the atkins/south beach thing. I would (and still do sometimes) get the jar of already hulled pistachios from WalMart. It's good enough that you don't need to be dieting to enjoy it :-)

Ingredients
15 oz ricotta cheese
3 tablespoons cream cheese
18 packets Nutra Sweet or other diet sugar
½ stick butter
½ cup powdered milk
½ teaspoon cardamom powder
½ teaspoon real vanilla extract, optional
¼ cup pistachios, optional

Directions
Step: 1 Mix all ingredients together in a glass dish and heat in a microwave until crumbly, about 18 min., but can alter depending on moisture level of the cheese. Stir every 3 minutes (a must), garnish with toasted pistachios. This is a very tasty Indian dish, it tastes something in-between fudge, cream cheese cake and custard. Chill in a glass bowl, about an hour roll into golf size balls, makes about 14 servings.

My mother used to make pistachio pound cake.
Loved it!

I got these (well, those, 'cause they're all gone - LOL) from Wal Mart. They were so good. My ex is a truck driver and has hauled lots of loads with Anne's House of Nuts products. He told me that there is one company - from overseas I think, that brings them here, and Anne's House of Nuts packages for a lot of brands. They used to sell them to the drivers at the docks, but now they have a cash-n-carry store which is a little higher. I may visit there. Are they better for you than potato chip????

GneeGirl, don't bother trying to open them. Here's the real way to eat pistachios. It takes a long time, makes them last longer, and you get all the flavor!!!

Pop one in your mouth, shell and all. Suck and slurp and roll it around...make sure you get all the tasty salty taste. After all, we all need more salt in our diets! LOL Finally, when it doesn't taste salty any longer, prise it open with your tongue. Don't chomp it or bite it open, that makes them all disappear too fast.

Finally, have a little bowl ready, spit out the now-salt-free shells, and enjoy the pistachio.

Grab another and start all over again.

I can enjoy a small bowl of pistachios all evening while my husband gobbles his down in 10 minutes. I can eat them and read, or keyboard, or do needlework all without getting my fingers stained and dirty.

I love pistachios. Gotta go to the commissary Tuesday!

I loved them I say loved because without my real teeth I can't eat them anymore. I don't care about puddings and stuff. DS used to send them from Turkey loved to spread them out on a plate and go after the ones with their mouths open if you know what I mean . They reminded me of little fish
