Chicken Again!

Here's a bird I did at 450 degrees for 75 minuites. Butterlied,Sprayed with Pam, Peppered with salt and Cajun spices..Roasted skin side down. We eat 4 a week!

Your chicken sitting story reminds me of a fun time in my family. My children who were raised on two acres on the edge of a small town never had the advantage of feeding chickens and gathering eggs as we had growing up. When visiting my aunt and uncle, my children were given the opportunity of visiting the livestock, picking beans and watermelons and tromping in the woods. When my uncle took them out to collect the eggs, they returned to tell us that they had been "picking eggs". Of course, from then on we never gathered eggs anymore. We "picked" them too. I love your stories, A lot of them make me remember my happy childhood on a small farm. Thanks and good to "see" you again.

Lennett.. I do have advice for you..Be sure to look before you stick your hand in to get eggs there could be a Snake..Make sure they are penned up good at night the Owls will get them.. During the day the Hawks,Coyote's and Fox will be stocking them. Never thunk one in the head coz it makes them Crazy..I tried this and she started sleeping with the dogs and laying eggs in the garage and on the porch..Keep them out of the Garden they uproot everything. Last of all some Roosters are mean..LOL We had this one he was so mean.. My DD finally caught it and we took and tossed over this old mans fence with his.. Josh maybe you should get a Turken.. Kylie

Are you doing a total renovation? If so, the decision about whether to go with a 48" range (or any stand-alone range) or separate cooktop + wall ovens is a fundamental one which will impact the entire cabinet design, and must be decided very early in the process. If you have the desire, space, and budget for a 48 incher, I'd insist upon it, as one cannot be easily retrofitted into any kitchen when/if the existing cooktop dies. It's perfectly OK to economize by re-using a fridge and dishwasher, as the holes they occupy are standard and new ones can be easily popped in when the old ones die. But cooktops are different. There are no standards for shape/size between brands so matching a new one to an existing cut-out in your counter tops can really limit your choices down the road. Can you get Hubs to buy into these arguments?

Why high heat? At higher temps the meat heats right to the bone and does not have the time to dry out, Try this method and you will never go back to the "Ole 350" way. Also from fridge to table is about 1 1/2 hours,So it's "fast food" After you wash and pan the bird I toss it in a cold oven... No pre-heat! Try a standard grocery store bird and cook it in a cold oven at 450 for 1 1/2 hours till you get used to the quick roast time. These will be the juiciest birds you will ever have. I do parted out birds at 500 with minced garlic and a red wine vinegar finish, but I dont recomend this till you master the simple 450 method. Spice them up good with salt and lots of pepper, The high heat mutes the pepper taste and takes on a unique caricture. Let's see some pics of your High Heat Roasters!

That looks real good, sailfish. My DH doesn't eat chicken and there are only two of us at home now. It isn't worth it for me to cook it for just one but maybe I'll try that when we have people over sometime. It would be quick and easy.

I have a recipe called "Blasted Chicken" which calls for a whole chicken roasted at 450 for 45 minutes. It would be about a 3.5 lb. bird. I tried it, and it works.

Yours looks yummy. Love that crunchy skin. Bad bad bad!
