scum when cooking ham bones...

I am boiling some ham neck bones from that quarter hog, to make soup - and there is brownish scum collecting on the surface.

Should I skim it? I seems to remember a post not too long ago that discussed this - but maybe related to something else and that you weren't supposed to get rid of it. But I might be totally thinking of something else...

Should I mix it in? or skim it off?
