please??? apparently my computer motherboard died and I can't access my recipes.....sigh.

Here you go pal...Happy Thanksgiving to you and your boys~

Sol's Honey Rolls

1 Cup milk
1/2 Cup honey
1/2 Cup butter [1 stick]
2 Tsp salt
1 -2 tablespoons granulated sugar*
2 pkges. dry yeast
1/2 Cup warm water [110Âº-115ÂºF]
2 large eggs lightly beaten
6- 6 1/2 cups All Purpose flour

Heat the milk, add butter and salt. Set aside while butter melts. Stir in the honey.
In another bowl, combine the warm water, yeast and sugar. Let it sit until yeast is completely dissolved, about 6-7 minutes.
Combine milk mixture with yeast mixture. And stir in the beaten eggs.
Beat in 4 cups flour. Add enough remaining flour to make a soft, but not sticky dough.
Place dough in greased bowl, turning to coat both sides. Cover and allow dough to rise 1 hour. Punch dough down, and allow to rise another hour.
Punch down again, and shape dough into rolls. Let it rise again 45 minutes to an hour or until doubled in volume. Preheat your oven to 375F and bake rolls for 25 minutes or until a deep golden brown. For a very soft crust, brush rolls with melted butter as soon as they come out of the oven.

Note: You could omit the sugar from this recipe altogether. I sometimes use about a teaspoon of the honey called for in the recipe to feed the yeast instead of the sugar.

Here is a basic recipe that I did for Christmas and tinted the filling pink. They are sooooo good! Peppermint Patties: 2 cups confectioners sugar 1 1/2 tablespoons unsalted butter, softened 1/4 teaspoon peppermint oil 1/4 teaspoon vanilla extract 2 tablespoons evaporated milk Chocolate Coating: 9 ounces semi-sweet or bittersweet chocolate coarsely chopped 1 tablespoon shortening Peppermint Patties: Line a cookie sheet with aluminum foil, smoothing out any wrinkles. Lightly dust the foil with confectioners sugar. In the bowl of your electric mixer, beat at low speed, the sugar, butter, peppermint oil, vanilla extract, and evaporated milk until combined. Increase the speed to medium-high and beat until very creamy, 3-4 minutes. Transfer the batter to a bowl, cover with plastic wrap, and place in the refrigerator to chill until firm enough to roll into balls, about an hour. Roll the batter into 1-inch balls and place on the prepared pan. Flatten each ball with the palm of your hand until the patties are about 1 1/2 inches in diameter and 1/3 inch thick. Cover and place in the refrigerator until the patties are firm, one to two hours. Chocolate Coating: Melt the chocolate and shortening in a heatproof bowl placed over a saucepan of simmering water. Remove the patties from the refrigerator and dip, one patty at a time, into the melted chocolate, making sure both sides of each patty are completely coated with chocolate. Let any excess chocolate drip back into the bowl and then place the patties back on the foil. Once all the patties have been dipped in the chocolate, return to the refrigerator to chill until firm (30 - 60 minutes). Store in the refrigerator in an airtight container, using parchment or waxed paper between layers. Will keep about a month or freeze them up to 3 months. Yield: about 30 patties.

AB, I may have a killer headache right now, but that is not going to stop me from commenting on your fine-looking buns [wink]. Blueiris, I wish I could've been in you kitchen to see when/where it all went wrong. You mentioned you've never made rolls before, but if I were to recommend a yeast roll, this would've been the one, because it's pretty straightforward. I will admit, after 20 years of using the same recipe, I've had one catastrophe. Which was the time I forgot to add both the honey and the eggs to the recipe. That was not a good day for me and I left out not one, but two, crucial ingredients. I know this because I found said ingredients later, after the fact. I have since learned to keep better track of every ingredient going into whatever I make. So I'm wondering if there's a possibility you might've forgotten to add a liquid, or any other ingredient? As far as shaping the rolls, that's a technique that's easier to demonstrate, than it is to explain, but I'll try. I normally use an ice cream scoop (as mentioned in the recipe above), to keep the rolls uniform in size. Then I start by stretching the top of the dough and folding it under itself. I do this for a few seconds, until the roll is as smooth and round as I like. But, rolling out the dough and using a cookie cutter like Annie does, obviously works very well. And you can be as rough with it as you want. I've kneaded this dough 18 different kinds of dead, yet, it always turns out light and fluffy. Thank you Beachlily for posting the recipe. Honey Rolls Sol

Mrs. Avery's rolls 2C Scalded Milk, cooled to warm temperature 3T Shortening or Butter, Melted ÃÂ½ C Sugar 1 t salt 2 eggs, beaten 2 pkgs yeast (or 1T bulk yeast) 1/3 warm water 4-5 cups flour Dissolve the yeast in the warm water (about 105 degrees) with a teaspoon of the sugar, wait until it foams. While waiting for the yeast to foam, mix the milk, butter, remaining sugar and salt. After the yeast foams, add the yeast mixture to it, and the two beaten eggs to the mixture. Either by hand or in a stand mixer, blend in flour a cup at a time until the dough is soft and fairly sticky. Turn onto a floured board and knead just until the dough is no longer sticky, but is smooth and satiny. Let rise until doubled, punch down, knead a little, then shape into rolls. Bake at 350 until golden. May brush with egg wash or butter and sprinkle with sesame seeds. Also good rolled in butter and cinnamon sugar. Dough is a good base dough for a variety of sweet breads like cinnamon rolls or brioche. Buttermilk Refrigerator Rolls Also called Angel biscuits....and to die for! 1 Package dry yeast 1/2 cup warm water 1/2 cup melted butter 4 1/2 cups all purpose flour 1/4 cup sugar 1 tablespoon plus 1 teaspoon baking powder 1 teaspoon salt 1/2 teaspoon soda 2 cups buttermilk Dissolve yeast in warm water in a large mixing bowl. Place in greased bowl, cover, and refrigerate until needed. Keeps for one week. Break off a soft ball sized lump of dough and roll into a circle about 1/4" thick. Cut into pie shaped wedges and roll up from the wider edge into crescent shapes. You do not have to let them rise again. Bake on greased baking sheet at 400 for 8-10 minutes.

I'm experiencing the lull before the storm right now, so I thought I'd better take the opportunity to express my thanks for the recipe. I baked the rolls yesterday, and decided my husband and I could share one roll -- just a taste test. When he was done with his portion he told me he'd be happy to finish off the other 19 rolls all by himself and just keep their prior existence a secret from the rest of the family at Thanksgiving dinner. So I'd say they were a hit with him! I liked them too. And with some leftover mashed butternut squash and canned pumpkin, I can see me making a few more batches in the near future. Next time, however, I'll make sandwich rolls because I use those more than dinner rolls. I like having sandwich/hamburger buns in the freezer because they're so versatile. soooo, I'm almost done with the second rise, and ready to punch down and shape into rolls....but we aren't eating til 4. I have to go see my mom who isn't doing too well at all.

Can I put them in the fridge to halt the rising - after I shape - and then let rise for an hour or so just before dinner?

This might be a stupid question but as y'all know, I'm new to bread baking.

Once you shape the rolls, what kind of pan do you put them in for baking? Can you put them in a jelly roll pan (short sides) and have them touching? Do the sides need to be higher as in a 9 x 12 cake pan for example? Or do the rolls need to be separated and not touching?
