My Dad used to love pickled eggs.He also loved pickled pigs feet and souse. Must have been a German thing.

As a child I used to love to see those big jars of pickled eggs and pig feet on the butchers counter. Sometimes my friends and I would ride our horses over just for pickled eggs and pigs feet. I don't see them anymore, and the bottle pigs feet just aren't near as good. Marry would it be possible for you to post the recipe for pickled eggs? I would love to try it myself.

I make pickled eggs for Xmas...in a BIG pickle jar.

Here's my EASY Recipe for them:

Hard boil 2 doz. eggs.
Set aside, cool, peel.

In a saucepan bring to a boil and simmer for 5 min. the following ingrediants:

3 cups apple cider vinegar
1 1/3 cup sugar
1 cup water
4 cans of beets (1 can is 16 oz. or about 3/4 of a cup)

Pour this liquid (beets and all) over the eggs in the jar and let sit on the counter for 5 to 7 days.

NOTE: I picked up a couple of the pickled beets by mistake and I used them anyway with the other 2 cans of regular beets and the eggs 'pickled' much faster.

The longer they sit, the better they are (really purple to the yolk and kinda firm or rubbery.

Here's the recipe that I use.
Pickled Beets

1/2 C. vinegar
1/2 C. water
1 C. sugar
1 t. salt
4 shakes of cinnamon
a tiny bit of ground cloves
Bring to a boil and pour over cooked beets.
Let set for at least 2 to 4 days.
I use 2 cans of beets.
This time I added 8 eggs.
I have a large kind of skinny jar that I am using. I put the eggs in first then the beets and then added the liquid.

I'm adding 8 more eggs this afternoon, because I haven't been able to stay out of them! LOL!

One year I canned pickled eggs in pint jars. In the recipe I used it didn't use beets to make them pink, they were just pickled with vinegar and sugar. They were the best things for potato salad and things like that. I used everyone of them up. I think maybe a pint jar held 5 or 6 not sure now. I do like the pink ones too.

around here we call them red beet eggs...
boil a dozen eggs and peel. set aside.
pour a can of beet juice, vinegar (maybe 1/2 cup) and sugar (a couple tablespoons) into a small pan.
I never measure ingredients, but this should be close enough. you can't really mess this up unless you use too much vinegar.
Bring to a soft boil until sugar dissolves
pour into container with eggs
you may have to add a little water to make sure all the eggs are covered.
Refrigerate.
I leave them sit in the juices until I am ready to eat - at least overnight
I don't like beets, so I take them out...
I think I am stopping at the store on the way home!

My dad loved them too, and pickled pigs feet...but the only pickle I like besides Claussen dills...are pickled okra.

I remember the pickled eggs from my childhood. A family friend used to make them when we had barbeques at their home. I didn't know they were pickled since I didn't eat any of them. I have always thought she just put hard boiled eggs and cans of beets in a big bowl.

I make pickled eggs for Easter every year. It would not be Spring without them. I boil my 1 doz eggs in one large pan as I heat 4 cans of beets with their juice and one small bottle of apple cider vinegar in another large sauce pan. When the eggs are finished boiling, I peel them right away...while they are still very, very hot. I use a ceramic bowl, place the hot, peeled eggs in the bowl and pour the really hot, hot, hot beet mixture over the hot eggs. I let them cool down on the kitchen counter before I cover the bowl with plastic wrap and place it into the frig. I make mine at least 1 week before we eat them. This year I will be making them on March 28th, we will eat them on Easter. Oh My...my mouth is watering now...

okay kt's, , sat back as long as I could before trying this recipe. Here I am a southern gal and never had pickled eggs in my life. Its about 9:30 pm, so I got up a bit ago and boiled the eggs, and made the other mixture to pour over. Doubt if I can wait one week before trying them. Think I will check them out in the morning. Little granddaughter loves eggs so think I will give her some when she comes over to see what she thinks. The kitchen smells wonderful with the scent of the mixture. Will let you all know how I like them. Thanks for the recipes.

My Beloved loves pickled eggs and I make them even when I don't have beets to make them red. I pickle my own beets so that doesn't happen often but still...he loves pickled eggs so we have them most of the time. I love having them so I can use them for a quick ham/chicken/or tuna salad, or just to put them on a regular salad...He eats them for a snack, by themselves with a little salt and pepper.

Won't eat BEETS!

My husband saves the jar and liquid from dill pickles and uses them to make pickled hard boiled eggs and pickled raw vegetables (carrots,celerey,peppers,etc). Just throw them in the jar with the pickle juice and keep in the fridge.

never had a pickled beet. Never had pigs feet and never will! lol

Had to let you all know that I had to try one for breakfast this morning. Knew I could not wait a few days before trying. These are heavenly, just after one day. All of the recipes looked wonderful, I chose Marys, the only problem I find is waiting for a few days, Can't believe that I love something that I have never tried in my life. DH and I were talking last night while I was making this, the only reason we never tried them, only place we ever saw them was in service stations back in the 1950's, and they didn't look appetizing. Think we are hooked on pickled eggs.

Cruising at the deli, they serve pickled cauliflower. I love that!

I make mine about the same as Marry,but no cinnamon or nutmeg.I hate the beets for some reason they taste like dirt to me.Larry hates the eggs and loves the beets.LOL! S it all gets eaten.

I wonder how long they keep after you fix them? I am thinking I might make some for Easter. I will make them with beets probably.

There was always a jar of pickled eggs at my Scottish Grandparents house. They never used beets though. Just vinegar and a little sugar. I love pickled eggs and pickled sausage like the kind you used to find in bars. Can't find it anymore.

In addition to the pickeling spices mentioned above? If you know any bars/delis that sell the sausage links in a gallon jug that has spiced liquid in the jar? Ask if you can have the juice when their jar is empty. You won't believe the added taste it gives to the eggs! You can reuse that liquid many times after, for egg refills! I also place sliced onion rings in my juice..some like them-others just set them aside.

Sharon, when I make fridge pickles in the summer time I always add onions and some green peppers too.
