Strawberry Glaze help

I'm making a cheesecake for TG, and want a strawberry glaze to go on top. In my head, I'm thinking of something like cherry pie filling, the red tinted clear liquid, with whole strawberries. I have this recipe, and it turned out more like a strawberry puree. Can anyone tell me what I am doing wrong, and what it is I am looking for? Thanks for any help!!! Christy :)

STRAWBERRY GLAZE FOR CHEESECAKE

1 pt. fresh strawberries

3/4 c. water

2 tbsp. cornstarch

1/2 c. sugar

Red food coloring

Crush 1 cup of strawberries; add water and cook 2 minutes; sieve. Mix cornstarch with sugar; slowly stir in hot berry mixture. Bring to boiling, stirring constantly. Cook and stir until mixture is thick and clear. (Add a few drops red food coloring if desired.) Cool to room temperature. Place remaining strawberries atop chilled cheesecake; pour glaze over. Chill about 2 hours. Makes 10 servings.

You're on the right track. Smiles. You just need to change a few things up. Use a couple tablespoons of the water
to mix the cornstarch up and set aside. Then instead of crushing the berries, just halve them if small and slice in thick slices if large. Cook the berries with the sugar and water for a couple of minutes until sugar is dissolved and berries are cooked a little. The 2 minutes they talk about sounds about right. I'd add a teaspoon or 1/2 teaspoon of lemon juice to brighten it up. Then gently stir in the cornstarch mix and bring up to thickness. Add your food coloring to get that bright red color if you want. That should give what I think you want. The liquid won't be totally clear since that commercial look is achieved by making the syrup without the berries in it, but it won't be muddy like the puree either. Good luck.

A very similar result can be obtained my melting some strawberry jelly in a sauce pan and then cooking somes trawberries in it for about 2 minutes. place the berries ont he cheesecake and spoon the glaze over the top.

Here is a recipe for strawberry topping which should work. It is from Linda Amendt's book "Blue Ribbon Preserves" Strawberry Topping Makes about 4 half-pint jars or 2 pint jars 5 cups hulled and sliced fresh strawberries 1-1/2 cups sugar 3/4 cup water 2 tablespoons strained fresh lemon juice In a 3 quart saucepan, combine sugar and water. Over low heat, stirring constantly, heat until sugar is completely dissolved. Stir in the crushed strawberries. Increase heat to med high and bring to a boil. Reduce heat and simmer for 5 minutes, stirring frequently to prevent sticking. Stir in the remaining strawberries and lemon juice. Simmer, stirring constantly, for 1 minute. Remove the pan from the heat. Ladle strawberry topping into hot jars, leaving 1/2 inch headspace. Using plastic knife, remove any trapped air bubbles. Wipe the jar rims and threads with clean, damp cloth. Cover with hot lids, apply screw rings. Process half pint jars in 200 degree hot water bath for 10 minutes, pint jars for 15 minutes.

My only advice is to think ahead if you will have other whites in your kitchen, especially the trim. Trying to match whites is the path to insanity, lol, but it's good to make sure everything is complementary before you start (i.e. have either warm or cool tones but not both). I have off-white cabinets, white tile, and white trim, all of which are different shades; but it looks fine together, at least to me. (The trim molding attached to the cabinets is the same color as the cabinets.) So whether you use white or cream-colored cabinets, think a bit about your countertop and backsplash and paint first to be sure you'll be happy with the direction it's all going. Otherwise white vs cream is just personal opinion. I am very happy with the off-white cabinet color in our kitchen; it's not as far from white as "cream" but it still fits with the rest of our warm-toned interior. I am not a big fan of glazing but again, that's just my opinion (it wasn't an option with my cabinets anyway so I can't say I have thought much about it).

The cream-colored cabinets in the bathroom I just moved into had a "glaze" that was so poorly done, it just looks like pin stripes around the borders. Has nothing to do with a distressed antique look that was probably the intent. I am going to try to match the paint to remove the pin-stripes or paint the whole cabinet over. When I was shopping around for new cabinets at my old house, samples of glazing were very varied. Most did not really look distressed or antiqued --they just looked multi-colored.

2 years ago we went on a kitchen tour. Saw lots of these lovely glazed cabinets. In fact those cabinets helped convince my dh that painting our dark oak cabinets would be a good idea. So we started the process of painting our cabinets ourselves. Then I began to experiment with the glazing. It just made them look dirty and I decided that I liked the look of the white alone, so we went with just white. I'm so glad now I didn't glaze them. I am tired of the glazed cabinet look, but not tired of white cabinets without the glaze. (Not just referring to my kitchen, but we just went on the kitchen tour again and were in different kitchens--didn't see too much of the glazed this go 'round, but did still see lots of the creamy white cabinets) I would be afraid that it might become the same thing as when my mother did that "antique-ing" thing on her cabinets way back in the 70's.
