Painting new T&G pine ceiling

I'm so confused--I had no idea there were so many choices in primers! I just had a pine tongue and groove ceiling installed in my kitchen/dining area. Other than finding out that I should have primed it before it went up (oh well), now that I'm ready to prime it, I find that there are a zillion choices of primers to use. I intend to paint the paneling white, if that matters in primer choices. I don't want the knots to bleed through, so from what I can tell, I should use Zinsser BIN. Is this right??

After priming with this (or with something else, if this is wrong), can I use regular ceiling paint, or do I need to use something else?

Does it matter that this ceiling is in the kitchen?
