here for the first time with question

hi, this is the first time i have been here ~~ i just read about a dozen pages!

what brought me here is this: every year i panic when it comes to making gravy on thanksgiving ~~ these are the things i have been thinking about:

#1) is there any preparation i could do in advance???

#2) with the no-stick roasting pan, there aren't really any "nice, crusty bits" to scrape away for the gravy!

#3) have any of you done a *roux* in advance?

#4) i have read that *TIME* if important in getting the gravy right; but how the heck do you keep the turkey warm for a long time???

absolutely any thoughts & suggestions would be greatly appreciated ~~
