Turkey Leftovers - recipes

I can't believe I am the only one with a ton of leftover turkey on hand and I would love some new ideas on what to make with it. PLease post as many ideas and recipes as you have - any I don't make this time I will keep for future use.

Here is one I found....

Turkey Chilaquiles

Bon AppÃ©tit : November 2006

This is a soft-style version of chilaquiles, tortilla chips sautÃ©ed with chiles and meat and topped with melted cheese. Crema mexicana, a cultured Mexican cream, is available in the cheese and deli section of many supermarkets and at Latin markets.

Makes 4 to 6 servings.

2 tablespoons vegetable oil

1 1/2 cups chopped red onion, divided

2 cups diced cooked turkey

1 4-ounce can diced green chiles

3 cups purchased medium-hot salsa with chipotles and garlic (from about two 16-ounce jars)

4 cups unsalted tortilla chips

2 cups crumbled queso fresco or Cotija cheese, or grated 4-cheese Mexican blend

1/4 cup chopped fresh cilantro

Crema mexicana or sour cream

Preheat oven to 450Â°F. Heat 2 tablespoons oil in heavy large ovenproof skillet. Add 11/4 cups onion; sautÃ© until onion begins to soften, about 5 minutes. Add turkey and chiles; sautÃ© 3 minutes. Stir in salsa; simmer until heated through, about 3 minutes. Season with salt and pepper. Stir in chips. Sprinkle with cheese. Place skillet in oven; bake just until cheese melts, about 5 minutes. Sprinkle with remaining 1/4 cup onion and cilantro; drizzle with crema and serve.

That does sound good.

I have quite a bit too..I'll be making soup tomorrow I think. The stock is made, the meat is picked and all the rest of the meat will be used for sandwiches and casserole later. Need to go get some more ziplocks..so that I can portion and freeze.

You can freeze the ham & defrost for any of these recipes: HAM & SWISS TART 2 cups cooked & cubed ham 1 cup grated Swiss cheese 1/4 cup finely chopped celery 1/4 cup finely chopped green bell pepper 2 TBL minced onion 1 tsp dry mustard powder 1 TBL lemon juice 1/3 cup mayonnaise 9" pastry shell Combine first 8 ingredients & pour into pastry shell. Bake uncovered in a preheated 375Â° oven for 25-35 minutes or until golden brown.~~Food for Thought ALSATIAN NOODLES (serves 4) 1 cup cooked thin-sliced ham, cut in 1/4x1" strips 1/2 cup butter, softened 1/3 cup Dijon mustard 1/4 cup chopped parsley 2 TBL chopped chives 2 garlic cloves, minced 1 lb fettuccine In a small saucepan over low heat, warm the ham. In a bowl, cream butter. Add mustard, parsley, chives & garlic & mix well. Cook fetuccine in 4 qts boiling, salted water until al dente. Drain & return to hot kettle. Add 1/2 the butter mixture & all of the ham & toss well. Add the remaining butter mixture, toss & serve immediately.~~Bound to Please HAM & POTATO FRITTATA (serves 6) Can be eaten hot, warm or cold so don't worry about this making too much: 2 medium boiling potatoes, unpeeled 10 eggs 1/4 cup chopped parsley 1/2 tsp dried oregano 3 TBL olive oil 1 small onion, peeled & thinly sliced 1/4 lb thinly sliced ham, cut in 1" squares 1/2 cup grated Parmesan or Gruyere Pepper to taste Preheat oven to 400Â°. Place potatoes in a saucepan of lightly salted boiling water & boil until just tender. Drain & set aside to cool. Beat eggs in a large bowl until well mixed, but not frothy. Stir in parsley & oregano & set aside. Pour oil into a 2 qt baking dish & swirl to coat. Scatter onion slices evenly over bottom of dish. Place in oven 10 minutes or until onion slices are softened & just beginning to brown. Meanwhile, slice potatoes thinly. Remove baking dish from oven & reduce temperature to 375Â°. Arrange ham in a single layer on top of onions. Arrange potatoes ove rham. Pour in the eggs & sprinkle cheese evenly over the top. Season w/pepper. Return baking dish to oven & bake 25-30 minutes or until eggs are set & the fritata is puffed & lightly browned on top.~~ CHEESE SOUFFLE (serves 4-6) 3 cups cubed bread (4-6 slices) 1/2 cup mayonnaise 2 cups milk 7 eggs, slightly beaten 2 cups grated Swiss or Gruyere 2 cups chopped ham 1/2 cup grated Cheddar Preheat oven to 350Â°. Mix all ingredients except Cheddar together in a bowl & pour into a greased 9x13" glass pan. Bake 45 minutes. Top w/Cheddar & bake 15 minutes. Let set 5-10 minutes before serving.~~Bountiful Arbor

Here's the tetrazzini version that we make: TURKEY TETRAZZINI WITH SPAGHETTI SQUASH 1- 3 1/2 pound spaghetti squash salt and pepper to taste 3 tablespoons unsalted butter 3 tablespoons flour 3 cups canned chicken broth or chicken stock 1 bay leaf 3 cups diced cooked turkey 1/2 cup heavy cream or half and half 1 tablespoon Madeira or dry sherry 1/2 cup freshly grated Parmesan fresh lemon juice to taste freshly ground nutmeg to taste 2 tablespoons buttered bread crumbs Bake the spaghetti squash, pierced with a knife, on a baking sheet in a preheated 400* oven for 45 to 50 minutes, or until tender and let cool. Halve the squash lengthwise, remove seeds and strings and scrape the flesh into a buttered 9 x 13 buttered baking dish. Season with salt and pepper. In a saucepan, melt the butter, stir in the flour and cook over moderately low heat, stirring, for 3 minutes. Add the broth, whisking vigorously until the mixture is smooth. Add the bay leaf and salt and pepper to taste and simmer for 20 minutes. Stir in the turkey, cream and Madeira, bring to a boil and simmer for 5 minutes. Add 1/3 cup of the Parmesan, lemon juice and nutmeg and salt and pepper to taste. Discard the bay leaf. Spoon the turkey mixture over the squash and sprinkle with remaining Parmesan and buttered bread crumbs. Bake at 350* for 25-30 minutes until bubbling and golden brown. Serves 4 Best of Gourmet, 1990 This is Ken's contribution, he got this recipe from a newspaper article a couple of years ago and he makes this for us: TURKEY CHOWDER 5 tablespoons butter 2 cups chopped onions 5 tablespoons all-purpose flour 5 cups turkey stock (or chicken broth) 1-28 ounce can whole tomatoes 2 cups diced raw potatoes 1 cup diced red bell pepper 2 bay leaves 3/4 teaspoon paprika 1 teaspoon salt 1/4 teaspoon cayenne pepper 2 cups diced, cooked turkey 1-10 ounce package frozen corn, thawed In large pot, melt butter. SautÃ© onions until softened, all flour and cook for 2 minutes, stirring. Add turkey stock, stir until smooth and thick. Add remaining ingredients, except turkey and corn. Cover and simmer 15 minutes or until potatoes are tender. Add turkey and corn and bring to a boil and serve. 6 servings

I usually make a turkey curry. The dressing and cranberry sauce as well as the gravy all goes with this. The recipe is off a Sharwood Curry Powder advert for chicken curry which I also make but here I substitute leftover turkey. TURKEY CURRY **************** Serves 4. 1 apple, peeled and chopped 1 onion, chopped 2 TBS oil 2 TBS curry powder 1 level TBS flour 15 fluid oz (scant 2 cups) stock (boil turkey bones to make stock) 1 TBS chutney (I use Sharwoods Mango Chutney) 1/4 to 1/3 cup (60 grams) sultana raisins 8 oz (225 grams) diced turkey (include different sized small pieces from the leftovers on the turkey platter) salt 1) Fry chopped apple and onion together in 2 TBS oil. Add curry powder and flour. Fry gentry 1 minute. 2) Blend in the stock, bring to boil. Add 1 TBS chutney and the raisins. Simmer, covered - 30 minutes. 3) Add turkey pieces to the sauce, season with salt and simmer very gently 10 - 15 minutes more. If you have some leftover turkey gravy - that also goes well added into the curry sauce. 4) Serve over rice and pass around cranberry sauce, warmed turkey dressing, mango chutney and chopped walnuts. **************************************** This is also very good: 2 - 3 portions 1 lb turkey breast, cooked and cut into chunks butter - 1 heaping TBS flour - 1 heaping TBS milk - about 1 1/2 cups heavy cream - about 1 1/2 cups 1 chicken stock cube or spoonful of chicken bouillon mix 1 heaping TBS curry powder (I used Sharwoods's mild) fettuccini noodles for 2 - 3 servings fresh ground pepper butter 1) Put water on to boil for noodles. 2) If turkey is not already cooked, it can be done in microoven with 3 TBS water until just done 3) Melt butter in saucepan, take off stove and mix in flour to make a roux, gradually adding warmed milk a few drops at a time and stirring to keep smooth. 4) Put back on low heat and finish adding milk, then cream a little at a time and stirring. Crumble in chicken stock cube and curry powder. Stir to blend. 5) Add turkey chunks and heat gently, keeping warm while cooking noodles in pot of water. 6) Drain noodles, add butter and fresh ground black pepper. Pour sauce over noodles and mix. Serve on hot plates and add grated parmesan. Note: The Spanish and German chicken stock cubes and chicken sauce bases are excellent and quite different than the ones I saw in Canada. SharonCb

Smoked Turkey Carcass - any new ideas?

I make all of my bean soups and split pea soup with purchased smoked turkey legs. We rarely have smoked ham, but eat soup regularly I winter. I pressure cook the beans, and turkey leg in chicken broth with carrot, onion and celery. About 20 min when up to steam. Turkey leg will be almost falling off bone. If a very large leg chop 1/2 and freeze meat for next pot of soup. Tastes as good as ham. If you have a carcass pressure cooking would probably make it go to pieces. Simmer the carcass and strain the bones. pick out useable pieces of meat. For the price of bag of beans nothing to lose.

This year I was Johnny-on-the-spot! I had the carcass cooking by late yesterday afternoon. Today I made a turkey barley soup:

1 cup diced celery, including leaves
1 cup diced onion
1 cup diced carrots
2 TB butter
2 TB olive oil
4 - 6 cups turkey stock (from the carcass and extra chicken stock - homemade)
1 cup barley
2 cups turkey meat, minced
salt and pepper to taste
parsley, chopped
poultry seasoning or dried thyme to taste

optional - sliced fresh mushrooms

saute vegetables in butter and olive oil; add in the rest and simmer for 20 minutes or more until the barley is tender.

Serve with a dollop of sour cream if desired.

I threw this together one year with Thanksgiving leftovers, and it went over very well. I shared it at another recipe site where it became a featured recipe.

You can add or substitute anything you'd like. Measurements are approximate... I used what we had on hand.

Turkey Tater-Tot Casserole

* Tater Tot potatoes, frozen, about 1/2 bag
* Turkey meat, torn into pieces (1-2 cups)
* 1/2 C Peas (frozen or leftover)
* 1 can cream of celery soup
* Milk (scant 1/4 C)
* 1 C (about) grated cheddar cheese
* Turkey dressing, prepared, about 1 cup

Butter an 8 x 8-inch square baking pan (or use non-stick), and cover the bottom with frozen Tater-Tots (or any frozen potatoes). Cover the potatoes with the turkey pieces and then the peas.

Heat the soup and stir in a little milk, just to make enough to cover the casserole; when heated and well blended, pour over the ingredients in the pan. Cover this with the grated cheese and spread the prepared dressing on top.

Bake uncovered at 350F for about 40-45 minutes or until thoroughly heated. (NOTE: You may need to cover with foil during the last part of baking to keep the dressing from over-cooking; just be sure the potatoes are hot since they start out frozen.)

I usually only use leftover turkey for hot turkey sandwiches and then only the breast meat. The rest of the carcass goes in the stock pot for soup. I don't like the taste of turkey or chicken recooked. The exception to that is this casserole. Kind of like a tetrazzini. I make it occasionally with
or tuna.

Tuna Casserole

8 Tablespoons butter
1/4 all purpose flour
2 1/2 cups milk or mixture of milk and cream
2 garlic cloves
2 cans white tuna, well drained (or turkey/chicken)
1 cup mushrooms sliced
1/2 cup chopped green onions
1/2 cup chopped celery
1 tablespoon fresh thyme
8 ounces penne (or use pasta shape of your choice)
1 1/2 to 2 cups fresh breadcrumbs saute in butter
3 Tablespoons parmesan cheese
. Put water on to boil and cook pasta. Do not overcook pasta as it will
cook again in the oven.

Heat milk in microwave with whole garlic cloves.
Make a roux with 4 tablespoons butter and 1/4 cup flour. Add milk or
cream and season with salt and pepper. Simmer for a few minutes and
remove garlic cloves.

Saute mushrooms, onions and celery in butter or margarine until tender.
Add the thyme.
Stir this mixture into the cream sauce.

Add well drained pasta to sauce and stir in tuna. Leave tuna in fair
size pieces.

Place in buttered casserole dish and sprinkle with breadcrumbs to which
you have added the parmesan cheese.

Bake for 30 to 40 minutes or until crumbs are golden in a 350Â°F oven.

Ann, those breadcrumbs look wonderful on the casserole. I've never put buttered crumbs on chicken tetrazzini - but why not?

Teresa, I usually saute a little garlic in the butter for the bread crumbs too. I love the flavour that they add to dishes like this. Works great on cauliflower gratin too.
