Comments (18)Good point, hilarymontville. If I had raised my kids on chicken nuggets, maybe I wouldn't have had to compromise on the kitchen remodel budget. DS2 and I used to have a weekly date at Barnes & Noble for storytime. Afterwards, we would head over to the cafe for a snack. His little toddler friends would order a giant cookie or cupcake. DS2 would order the spinach & artichoke strata, or roasted eggplant panini, etc. The girls behind the counter would get the biggest kick out of him. Other kids pester their moms about the candy aisle at the grocery store, mine wants to hit the $8 / lb olive bar. It makes me sad when parents say, "my kid will only eat hot dogs and mac & cheese." Lyfia, You can also dip the chicken strips into Italian dressing for extra flavor. OK, so if it doesn't have to be "traditional", how about coconut chicken strips? My girls loved these and I started making this with shrimp but quickly changed to chicken: Awesome Coconut Chicken Strips 2 lb chicken breast halves, skinless and boneless (can thaw in coconut milk) 1 1/3 c shredded coconut 16 saltine crackers 1/4 c white flour 1/4-1/2 tsp cayenne pepper 1/2 tsp each-garlic powder, fresh ground black pepper, paprika 1 tsp salt 1/4 tsp onion powder 1/2 c melted butter 3 eggs cut chicken into strips at desired width and pat dry with paper towels mix all the dry ingredients in a bowl wide enough for dipping strips, stir until ingredients are completely mixed. put eggs in a separate flat dish and whisk with fork, put additional flour in flat bowl for dipping dip chicken strips first in flour, then in egg and then in coconut mixture. Place chicken strips in a cake pan or cookie sheet which has been sprayed with cooking spray. Melt butter a drizzle a small amount over each strip Place pan in a 350 degree oven and bake for about 30 minutes gently turning them after 15 minutes. We liked the sweet chili sauce, just the bottled stuff, as a dipping sauce, or some habanero gold jelly heated in the microwave. We also liked this chicken recipe, I'm sure it would work as well with strips as it does regular chicken pieces: PECAN CHICKEN 4 chicken breast halves, skinned & boned 1/4 c. honey 1/4 c. Dijon mustard 1 c. finely chopped pecans Place each piece of chicken between 2 sheets of wax paper, flatten to 1/4 inch thickness using a meat mallet or rolling pin. Set aside. Combine honey and mustard. Spread on both sides of chicken and dredge chicken in chopped pecans. Arrange chicken in lightly greased shallow baking dish. Comments (28)I am so sorry for your loss. We have a 11 year old poodle that has been our "baby", we got him the year we found out we couldn't have kids so he became our world. Five years ago he was diagnosed with diabetes at the time the vet misdiagnosed him and gave him steroids which pushed the diabetes into overdrive so by the time we figured it out he had lost his eye sight. They told us at the time to take him home and make him comfortable. Well me being his "mom" there was no way I was giving up that easily. He's been on insulin for 5 years now and is doing great. But I know the time is going to come sooner than I would like and we will lose our little boy. The thought of that is more than I can bare. I don't know what we will ever do with out him. I made the decision about a two months ago to adopt a little Dorkie, hale doxie, half yorkie. His name is Cooper and he has been such a light in our home. He's even made Buster a little more spry. I knew we would NEVER be able to replace Buster, he's just way to special but I also knew I couldn't live with out a dog in the house. To me having Cooper will make it a little easier when the time comes to tell Buster goodbye. I know in my heart that Buster is loved and has had the best life possible. Comments (19)He sees BM rarely.....and when he goes there, she gets to be 'super mom' even tho she has no job...lives at home w/her mom and dad ... but you know, it's the typical weekend parent lets him stay up as late as he wants...eat whatever he wants etc etc.... then sends him home. I think I can count the # of visits on one hand he's had with her in the last 7 months. Which I know is why he's so immature for his age ... dh coddled him to make up for the lack of mother presence...then found it backfired on him now that ss is (should be) starting to mature and go into his teens.... I am VERY surprised at the difference in the last 7 months.... although there are still set backs...like this morning, when dh reminded him to get in the shower, and he just sat down in the hallway and started crying! Luckily...it was time for me to leave for work! ;) Things I like about ss... hmmm...this one made me think...and then laugh at myself at the same time...things I like about him are sometimes the same things I don't like... for example: I like that he is a sensitive caring person...but he's TOO sensitve...(like he brought up a goldfish that died YEARS ago at the dinner table once...just out of the blue BAWLING...mouth full of food just dropped down as he was wailing away saying "I miss Goldie".... (btw..I've changed my seating at the dinner table so I no longer sit across from him to help my tolerance level stay low during my once favorite family time for me) I'm really glad I found this forum....it's amazing the power of 'writing' and getting feedback... I was so scared to admit my feelings 'out loud' and they were really building and weighing me down.... I can tell a big difference now that I got it out..... this morning, when ss sat himself down in the hallway crying because dh asked him if he got in the shower yet....I just winked at dh..smiled and said "i got to get going, have a great day" ;) vs getting that knot in my stomach of instant stress and walking out wishing things were different....and I know it's because I 'let it go'...See Moreironcook
