Need advice on white/cream paint for beadboard and kitchen

We're in the process of building a 600 sq. foot Great Room, along with gutting my kitchen, putting in new cabinets, floors, etc.

I'll have beadboard in the Great Room, along with the other front rooms in the house, including dining room. I'm not putting the BB in the kitchen.

I've always wanted a white kitchen, along with white beadboard. My dream is finally coming true! The wall color in the GR will be in the dark beige family.

Instead of white though, I've decided to do more of a light cream color, but much lighter than the beigeish walls.

One thing I keep reading about is the "under tones" in paint colors. I'll definitely be sampling the color I choose first, but how do I know what under tones a paint color has?

I'm a virgin at this. LOL. The builder prefers Sherwin Williams paints, so that's what we'll be using. I have the whole spectrum of their color here. Does anyone recommend an off white, or cream color from SW?
