stupid stuffing pan question

I'll be making a lot of stuffing for Thanksgiving. Usually I put it in a 9"x13" pan or in the bird (plus a smaller baking dish for extra). I'd rather not stuff the bird this time so want to cook (bake, roast, etc :) ) it separately.

But this year is my first with a single--and smaller--oven and I won't have space for a casserole dish if I also want the turkey cooked. Hmm...you don't need the back story!

Can I do the stuffing in a deep pot? About 4.5" deep, 10" round cast iron. Has anyone tried this type of stuffing baking? I assume it'd stay a bit moister than spread out, but would it work? Is there a reason we usually spread it out? I don't think I want to make a test batch. It's a LOT of stuffin'!
