Thanksgiving 'fowls'...

as in 'fouls', lol.
Like the common mistake when my sister left the giblet bag inside the turkey....and used old rancid olive oil in EVERYTHING. (she no longer hosts holiday meals)
And one year my dad used salt instead of sugar....
(mom had put salt in a sugar container when the bottom of the salt container got wet...)

I do most of the cooking now but work and a snow storm changed our plans and we stayed home...predicted in advance following the weather.

We had fresh ducks delivered. Extra liver, feets, and necks.
Brined late wed night, hung thurs morning...made stock for gravy and for a wild rice and mushroom dressing...roasted root veggies, bourbon cranberry...all our favorites.

I pulled out misc zip-locks of bread for the dressing from the freezer...all fresh and homemade from the past few weeks, and homemade stock to thaw a bit. All in a big bowl as i prepped the sauteed veg...celery onion leeks mushrooms. Wild rice and mixed grain cooked. What i thought was my toasted brown bread was actually dog treats, lol. dehydrated lamb lung, haha. Caught it just in time after a sniff test.

Reminds me of the holiday a few years ago when my pup was a puppy and i had little cracker training treats on the counter for guest to use when she was jumpy...dad found them and thought they were a a nice savory human snack.

The "foul" we had this year was a serious hack to Sony Pictures where Kevin works on Monday. The hack was evident Monday morning when Kevin got to work and saw only a red skeleton on the computer screens with the text "Hacked by #GOP", which I thought was the Republican party, but evidently not. He called me at my work and asked if I could see any news of it on my computer, since all the computers were down at Sony, but the news had not yet broken, although it did later in the day. He was pretty much unable to work, but he did work with others in trying to figure out how to deal with the situation, and by 3:00 PM everyone went home. He was then on call Thanksgiving Day, in order to deal with demands from Toronto, since Canada had already had their Thanksgiving holiday, and he had to go to work at another location (Howard Hughes Plaza) today, as there is another Sony office there (electronics - not movies).

So his holiday was cut short, and so it was good that we went to the buffet at Alpine Village yesterday.

Weather continues to be hot (mid 80s), and I am waiting for it to cool off a bit before I can go back to some yard work and gardening.

DD got overzealous with the marshmallows on the sweet potatoes. There is a red dish under all of those melted marshmallows

We put a cookie sheet on the rack below when we noticed the meltage. Miraculously, not a drop fell. But those potholders had to be washed ASAP

A story atleast some of you will appreciate: A Thanksgiving Story By Andréa Nannette Mejia It was the day before Thanksgiving - the first one my three children and I would be spending without their father, who had left several months before. Now the two older children were very sick with the flu, and the eldest had just been prescribed bed rest for a week. It was a cool, gray day outside, and a light rain was falling. I grew wearier as I scurried around, trying to care for each child: thermometers, juice, diapers. And I was fast running out of liquids for the children. But when I checked my purse, all I found was about $2.50 - and this was supposed to last me until the end of the month. That's when I heard the phone ring. It was the secretary from our former church, and she told me that they had been thinking about us and had something to give us from the congregation. I told her that I was going out to pick up some more juice and soup for the children, and I would drop by the church on my way to the market. I arrived at the church just before lunch. The church secretary met me at the door and handed me a special gift envelope. "We think of you and the kids often," she said, "and you are in our hearts and prayers. We love you." When I opened the envelope, I found two grocery certificates inside. Each was worth $20. I was so touched and moved, I broke down and cried. "Thank you very much," I said, as we hugged each other. "Please give our love and thanks to the church." Then I drove to a store near our home and purchased some much-needed items for the children. At the check-out counter I had a little over $14.00 worth of groceries, and I handed the cashier one of the gift certificates. She took it, then turned her back for what seemed like a very long time. I thought something might be wrong. Finally I said, "This gift certificate is a real blessing. Our former church gave it to our family, knowing I'm a single parent trying to make ends meet." The cashier then turned around, with tears in her loving eyes, and replied, "Honey, that's wonderful! Do you have a turkey?" "No. It's okay because my children are sick anyway." She then asked, "Do you have anything else for Thanksgiving dinner?" Again I replied, "No." After handing me the change from the certificate, she looked at my face and said, "Honey, I can't tell you exactly why right now, but I want you to go back into the store and buy a turkey, cranberry sauce, pumpkin pie or anything else you need for a Thanksgiving dinner." I was shocked, and humbled to tears. "Are you sure?" I asked. "Yes! Get whatever you want. And get some Gatorade for the kids." I felt awkward as I went back to do more shopping, but I selected a fresh turkey, a few yams and potatoes, and some juices for the children. Then I wheeled the shopping cart up to the same cashier as before. As I placed my groceries on the counter, she looked at me once more with giant tears in her kind eyes and began to speak. "Now I can tell you. This morning I prayed that I could help someone today, and you walked through my line." She reached under the counter for her purse and took out a $20 bill. She paid for my groceries and then handed me the change. Once more I was moved to tears. The sweet cashier then said, "I am a Christian. Here is my phone number if you ever need anything." She then took my head in her hands, kissed my cheek and said, "God bless you, honey." As I walked to my car, I was overwhelmed by this stranger's love and by the realization that God loves my family too, and shows us his love through this stranger's and my church's kind deeds. The children were supposed to have spent Thanksgiving with their father that year, but because of the flu they were home with me, for a very special Thanksgiving Day. They were feeling better, and we all ate the goodness of the Lord's bounty - and our community's love. Our hearts were truly filled with thanks.

In my family, in the Pacific Northwest of the United States the Thanksgiving meal always included: A big plate of crudites with onion dip. a crystal platter with black olives, enough for every child to slide a big black olive over each of her fingers. a big roast Turkey, when Grandma was alive it would be a 24 pound bird. with stuffing made with toasted bread cubes, onions, celery and sage and other herbs and chicken broth. gravy made with giblets. Mashed white potatoes made with butter and cream. Sweet potato sliced and baked with lots of butter and with small marshmallows baked on top. Cranberry sauce. One puts this on the turkey. I saw a movie set in England where someone very kindly tried to reproduce a Thanksgiving meal for his American wife and he served raspberry jam with the turkey. a heartfelt sentiment which is more important than food. If I were in England and couldn't find cranberries I'd look for lingonbery jam, for they are a bit closer to cranberries in taste, though the berries are smaller. Brussels Sprouts Rolls or biscuits and butter. and for dessert pumpkin pie with whipped cream on top. Now that I've lived in California for 30 years I've seen many Thanksgivings that had all of the above foods but also had in addition to pumpkin pie, a very rich pie made of pecans. Most of , no- all of the African Americans I've known always have sweet potato pie in lieu of pumpkin pie and in my opinion it is a far superior pie. Nowadays we usually start with a big salad often a Caesar salad as it is simple and the rest of the food is so rich. I love Thanksgiving, it is such a heartwarming holiday with none of the commercial stress of Christmas when one is rushing around trying to find a parking space and then the right gift for every one. Although it takes a large effort to cook a large Thanksgiving meal. I often feel closer to God on Thanksgiving for God is Love, and love is a familiar feeling on that day along with gratitude. Most Thanksgivings I've been at have always had one or two persons who were invited at the last minute when someone found out they had no family locally to go to . I love green bean casserole, but I make it with fresh green beans plus a mushroom veloute sauce, and that's it. I only blanch the green beans, add the sauce and bake for no more than 15 minutes, so that the beans will still be crisp. I do hate canned green beans, as they are NOT crisp, and have a can flavor, unless they have been canned at home. My father preferred canned green beans and canned peas, but I cannot stomach either of those. They always had a tinny flavor and were too mushy. I will not go near the sweet potato thing with marshmallows. I don't really like sweet potatoes except in tempura. In fact, I prefer green beans in tempura also, and so maybe I will make a Japanese style Thanksgiving dinner with sashimi instead of turkey, or maybe shrimp tempura. I could possibly make chicken tempura, but I'm not sure how it would hold together. I like broccoli tempura also. For dessert, I will probably make French vanilla ice cream with bits of leftover Halloween candy sprinkled in.

Well, it depends on the turkey. Is your butcher getting you a heritage breed or the standard Broad Breasted White, which makes up about 200 MILLION turkeys per year. The Toms get to be approximately 10 pounds at 8 weeks, 20 pounds at 12 weeks, and 45 pounds at 20 weeks. Hens are smaller, of course, 8 pounds at 8 weeks, 15 pounds at 12 weeks, and 26 pounds at 20 weeks. It's kind of scary, how fast they grow. They don't live long lives because 70% of the meat is in the breast and they have skeletal problems due to the structual abnormality. Heritage breeds grow much more slowly, and a Tom will reach 22 pounds, a hen about 12 pounds in 18 MONTHS (not weeks, like the BroadBreasted White). While the BBW gets that 10 pounds in 8 weeks, a heritage bird will weigh closer to 3 pounds. People argue that the slower growth adds significant flavor to the flesh of the bird, others say they can't tell/don't care. It's all a personal choice, but the BBW are huge birds, and that's why it's rare to find a small one around 10 pounds here. That's only a 2 month old bird and the producer knows that it only takes a month to double that size, so they let them go a bit bigger. I did buy a 12 pounder a couple of years ago, amazed that I found one that "small". It was mostly bones, I was shocked at how little meat there was on that bird. DD made a beautiful Salted Caramel Chocolate Chip Cheesecake and got a little overzealous with the Sea Salt. Way too salty! LOL

I always make giblet stuffing. My mind was wandering on all the things I had to do next. I put a whole pound of chicken livers in the dressing. (I usualIy only put a handful in. I had to keep adding butter. That didn't work. I ended up putting the giblet water in it and I put in too much. It was quite soggy, but it still tasted pretty good.

Reminds me i need to order more...CharleeBears, turkey liver and cranberry flavor. Amazon has them.

Bet that marshmallow smelled great, but nasty if it hit the floor of the oven. I put a sheet pan under everything i put in the oven...

All the hardwood charcoal was nearly burned up by the time she checked on them so she used the oven

The worst was the time my folks tried to cook a turkey on a camping trip in a fire pit and it rained. The sweet potatoes made it though and we pre made everything else. I remembered all five of us squeezed in the old van with the rain coming down and plates on our laps. The rest of that trip was beautiful though. After that mom said no more thanksgiving camping.

Several years ago, brother & SIL gathered all the left-overs from plates into a container to take home as a treat for dog. They forgot to take it home from fridge, and SIL's Dad heated it up for lunch next day. NOTHING gross in container, but he started wondering about it when he came across hunk of dinner roll with a bite out of it.

sd, what doesn't show in the photo is the beach towel on the floor to catch any marshmallow drips. At the point that photo was taken, we were contemplating removing the entire rack. The fuzzy hand and potholder in lower center of the photo is DD getting ready to grab the cookie sheet to make sure it stayed under the dish.

In the end, it became obvious that to remove the rack it would have to be tilted up too much and the sweet potatoes were in danger of flipping off the back. So, LS just sacrificed the potholders to the marshmallow mess (they washed up fine later that day).

I thought the dish was too small for the sweet potatoes anyway, but there was enough kitchen angst going on without my adding my opinion of the dish.

Ours was a doubling error for the pumpkin booze pie. My niece quadrupled the evaporated milk instead of doubling it. It was a very runny batter but decided to bake it anyway since the batter was in the shells. Amazingly, the custard set and it was good.

Too bad she didn't quadruple the cognac. LOL

Years ago Mom wasn't feeling well so my Dad and Uncle (mom's brother) volunteered to clean the turkey. It being their first time the task took quite a while and they imbibed a tad too much as they worked. They stripped the meat from the bones beautifully and had two piles, one of meat and one of bones and scraps. Dad reasoned that since Mom was sick she wouldn't feel up to making stock so they made the executive decision to toss the bone pile. In their stupor, they tossed the meat and kept the bones. Mom was not happy.

Needless to say Dad and Uncle were relegated to dish duty after that!

I think of that story every Thanksgiving. It always brings back fond memories and makes me laugh.

All of this nostalgia about Thanksgiving reminds me of the movie "Pieces of April". A fine film about Thanksgiving and about people.
