Huge bird, new ovens for Thanksgiving - help??

We have just remodeled our kitchen and finally have decent double ovens. I'm not a great cook but committed to becoming better. I'm having 16 for Thanksgiving. This is more people (and a bigger bird - 22-25 pounds) than I am used to, plus have the new ovens to deal with. So a few questions: should I use the convection feature of the new ovens (have never really used convection) and if so for how long and at what temp? (FYI we don't stuff our bird). We used to cook our bird breast-side down - thought it turned out juicier that way. Should I do this if I use convection? I generally use a fresh herb rub with some butter, and oranges and maybe wine or something in the cavity. Any other good ways to prepare? I've tried brining in the past but don't think I do it right and have never seen significant results. Thanks so much for your turkey advice!
