Comments (10)I have cooked with Sherry, and she is a lot of fun! LOL Seriously, there are lots of uses for it and if you keep it in the fridge, it should last for a long time. If you are dying to use it ASAP, here are some T&T's. FESTIVE SHRIMP (Serves 4) 1/3 cup butter 2 TBL olive oil 2 shallots, minced 2 garlic cloves, minced 1 lb uncooked shrimp, peeled & deveined 3 small plum tomatoes, seeded & chopped 1/2 tsp dried basil 1/2 tsp dried oregano 1/2 tsp each, salt & pepper 1/2 cup dry sherry 3 bunches fresh spinach, rinsed, drained, stems removed 1/2 cup heavy cream Hot cooked rice Melt the butter w/the olive oil in a large skillet over medium-low heat. Add the shallots, garlic, oregano, basil, salt and pepper. Sauté 5 minutes. Add the shrimp, saute 2 -3 minutes so they are about 1/2 cooked. Remove from pan. Add tomatoes and sherry, simmer for 5 minutes. Add the cream and spinach, simmer so cream reduces a bit. Add shrimp back to pan, simmer another 2 minutes to finish shrimp. Serve over rice. ~~ Posted by Weed Egg Foo Yung From Madame WongÂs Long Life Chinese Cookbook 1/2lb fresh shrimp, peeled, deveined and cut into small pieces 1 tsp salt 1 tsp cornstarch 2 tsp sherry 5 eggs 1 tsp light soy sauce 4 T oil ½ onion, chopped 1 scallion, chopped 4 water chestnuts, chopped ¼ c fresh mushrooms, sliced 1 c bean sprouts 2 c oil for deep frying Dry shrimp, add 1/2tsp salt, cornstarch and 1 tsp sherry. Mix well. Beat eggs in large bowl. Add soy sauce, 1/2 tsp salt, and 1 tsp sherry. Set aside Heat 2 T of oil in wok to 350F. Stir fry onion, scallion and water chestnuts 1 minute. Add mushrooms, stir fry 1 minute, remove Heat 2 T oil in wok to 400F. Stir fry shrimp and bean sprouts 1 minute or until shrimp turn pink. Let cool. Add all ingredients to egg mixture. Heat 2 c oil in wok to 400F. Gently ladle ¼ of egg mixture into wok. Deep fry until golden brown, turn over and deep fry other side one minute. Comments (8)Pea soup is one of my favourite soups! It's a common soup to make in Newfoundloand and we probably make ours a bit different than everyone else. For one, we use salt beef which I don't even think is available anywhere else, or if it is you call it something different. You can also use a ham bone and leftover ham but I prefer mine with salt beef. Here's my tried and true recipe: Pea Soup & Doughboys 2 cups salt beef, diced 2 cups yellow split peas 1 cup chopped onion 1 cup diced turnip 1 cup diced carrot ½ cup chopped celery 2 - 3 potatoes, cut in large chunks salt & pepper to taste Doughboys: 1 ½ cups flour 1 tbsp baking powder ½ tsp salt 3/4 cup water or milk (approx) -Soak peas overnight in cold water. -Place meat in large saucepan. Add 8 cups cold water; bring to a boil. Simmer 30 minutes. -Add drained split peas and chopped onion. Simmer gently for about 1 ½ - 2 hours. Add more water if desired. -Add other vegetables and cook until tender (remember to stir often). Doughboys: -Combine flour, baking powder and salt. Comments (13)"though I don't know how specific the legal definition of pumpkin is" There is NO legal definition of pumpkin :-) It is just a common name assigned to some varieties of winter squash, Cucurbita pepo. I use Libby's as well - 100% pumpkin (or Cucurbita pepo) and I have never found it lacking in flavor or with a tendency to separate. I agree the best and most flavorful pumpkin meat comes from sugar pumpkins but they have a pretty short shelf time however other sweet, orange fleshed winter squash like Hubbard, butternut or acorn can work equally as well.....but maybe not taste quite as pumpkin-y!...See More- 17 years ago
