Good modern cookbook for young cook

Hi all,

My daughter who is almost 21 is doing more cooking and I would like to give her a good cookbook. Nothing too complicated, but useful. I've looked at Pillsbury's Healthy cooking cookbook and it looks good (since she's trying to cook healthily), but I wouldn't want it to be all low fat stuff, with constant use of "low fat" substitutes. Its hard to tell if the Pillsbury cookbook does that or not.

It seems like lots of the cookbooks in the bookstores are wrapped in plastic and you can't check them out.

Any suggestions for a new cookbook that is fairly healthy and simple for a person just starting out? Thanks!
