DH is not a big ham fan. So this year i decided to make a corned beef hash casserole. He loved that idea. My mom will bring the cream spinach. It is my grandmas recipe. I can eat a whole bowl of it. Very Yummy! I will also have other veggies to chose from. For dessert the kids want peanut butter swirl cookies, chocoate chip sandwich cookies, and bunny cut outs that they can decorate themselves. I will alos make the raspberry lemon triffle.
I better get started. Easter is in 5 days. YIKES!

Ham, potato salad, pickled eggs and beets, kielbassi, paska bread, nut roll......spring veggies....whatever else I find interesting.

I actually think my family is foregoing Easter this year. My mom just had major surgery last week and isn't up to doing anything, and the rest of my family is too far away. Wow, this will probably be my first ever Easterless Easter.

Whatever I finds appealing, quick and easy, at Fresh Market.

I dont know the recipe. But i do know that it is made with cream cheese and frozen(not fresh) spinach. My grandma has always made it for every holiday. Usually i will eat a big bowl of it and forgo all the other foods. My mom has the recipe now since my GG is getting up there in age. She doesnt cook as much as she use to. That crean spinach will truely be her legacy.

Ninos, can you tell you struck a chord with all of us? LOL. If you are going to your recipe box for the corned beef hash recipe (which sounds wonderful, BTW), don't forget my request for the trifle recipe! I hope you didn't have anything else to do today, LOL.

I'll be having their favorites. I usually ask the grands what they want. They all love deviled eggs. I can never make enough!! We'll have a ham, and the GDs want broccoli-rice casserole, and I'm making Glenda's pineapple dish and DD#1 will want squash, and the GSs want baked corn. DD#1 will bring a fruit salad, rolls, and a dessert. I'll probably try that rabbit cake. I asked them all the other day and DGS#2 said he wanted chicken and dressing, so for him I have made chicken and dressing. It won't be wasted!!It is in the freezer as of 5 minutes ago!!

Here's recipe for creamed spinach that I use!
IF I was having company, it would be on my menu!

Creamed spinach
2 packages frozen spinach, (10 oz each)
6 ounces cream cheese, softened ^^I use fat free
1/2 cup butter, melted, divided
1 cup seasoned bread crumbs
Dash of nutmeg: optional
PREPARATION:
Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter and nutmeg.
Spoon into casserole dish.

Toss remaining butter with breadcrumbs and add to top of casserole
Bake at 350 degrees for 25 minutes.
Serves 4.

Glenda--do you use chopped spinach or leaf? Your recipe sounds really good. I think the little bit of nutmeg makes a big difference. I also like it doesn't make a ton, as much as I like it.

Well, after thinking it must be CHOPPED!

If it was leafy, would still have a stem, so CHOPPED!

Ernie & I are going down to Sea Critters-a waterfront restaurant in Tierra Verde with a couple from Toronto. We love their Seafood Boil..it has lobster tail, King crab legs, scallops, clams, mussels, shrimp, potato & corn on the cob..delish!

Sorry! I take my DS to school in the afternoon and then i hit the grocery stores. I found one recipe. I will post the other one tomorrow since im a slow typer and i have a PTA meeting tonight.

This is the recipe that i developed when my Lemon Layer cake did not turn out. Instead of throwing it out i turned it into a triffle. DH then said it would be even better with raspberrys.

Raspberry Lemon Triffle
1 homeade or store bought white cake

1 C. fresh lemon juice(6 lemons)
1 tsp. geletain(powered)
1 1/2 C. sugar
1/8 tsp. salt
4lg. eggs
6 lg egg yolks(reserve whites for icing)
1 stick butter cut into cubes and frozen

1 pint raspberrys

2 lg egg whites
1 c. sugar
1/4 c. water
1 Tbsp. lemon juice
1 Tbsp. corn sryup

Make cake according to package using 2 round 9inch pans. For filling measure 1 tbsp. lemon juice into a bowl; sprinkle with geletin. Heat remaining lemon juice, sugar, and the salt;stirring untilsugar disolves and mixture is hot but not boiling. Whisk in eggs and yolks in sepated bowl then slowly add to hot mixture. Careful not to curddle the eggs. Cook over medium heat for 4-6 minutes. Till curd leaves a trail on the back of a spatula. Remove from heat and add geletin then butter. Pour into a container and cover the surface with plastic wrap. refrigerate for 4 hours.

For the frosting use a stand mixer bowl over simmering water, combine all ingrediants. Stirring constantly cook till mixture reaches 160 degrees(5-10 minutes). Remove from heat and with wisk attachment beat till soft peaks form(5 minutes). Increase speed to high and beat 5 minute more.

Begin to break up your cake into large pieces. Fill the bottom of your triffle bowl with cake and layer with curd. Sprinkle with raspberies and repeat layers. Top the triffle with the frosting and chill.
