Slimy_0kra, you have another unusual vegetable on the way. Two unusual veggies volunteer in my garden every year; Martynia and Litchi tomato. Both are rather anti-social plants (Martynia for its smell, Litchi tomato for its thorns) but I always let a few grow if they come up in an out-of-the-way location... and that is all that is necessary for me to keep a supply of fresh seed. I love unusual greens. Swiss chard is my main green for freezing, but my #2 green is kang kong (a.k.a. water spinach), which is a morning glory relative grown for its edible leaves & shoots. The first planting is from seed, but after the first harvest, I root & plant the stems. After two such plantings, the final harvest of the summer is large - that one gets frozen for the winter. This is a great hot-weather substitute for spinach; as long as it is kept watered, it thrives on hot weather. If you are unable to find water spinach, sweet potato leaves are similar... not surprising, since they are both in the morning glory family. Not all varieties are good for leaves, though; the best ones for that purpose can be found in Asian markets, where you might also find water spinach. Both can be easily rooted from stem cuttings. Egyptian spinach (a.k.a. Saluyot, Molokhia, Jew's Mallow) is another reliable hot-weather green. The leaves are mint-like in appearance, and very mild in flavor. When cooked, the leaves are mucilaginous much like okra, so they are good for thickening soups. They also go great with fish. All of the greens above have something in common - the more you cut them, the stronger they get. Moringa is a fast-growing tropical tree grown for its edible leaves. They are very high in protein, and also have anti-biotic properties. This is probably not a good crop for those with limited space, since the yield is fairly low... but DW makes a soup from the leaves which is to die for, so I grow some every year. Many years ago, I grew some in pots to over-winter; but it was a pain to move those large pots in & out, so now I just grow a lot of plants in the garden, grown as annuals. They will reach 4-5 feet in height by the end of the summer, and yield 3-4 pickings. This year, I will be trying Caihua, a tropical climbing gourd that is edible immature. I have also grown Achocha (which is closely related) and found it to be rather tasteless, so I am hoping Caihua will be an improvement. Bitter melon is a vegetable I grow every year; while we eat a little, we give most of it away to some Filipino friends. It serves other important purposes in the garden: as a wind break (the vines densely cover the trellis); to both attract & isolate pollinators (it blooms continuously all summer); and for the scent of the blossoms, which is very fragrant. Some years I grow Mexican Sour Gherkin and West Indian Gherkin, but not this year. Anyone who has visited the Bean Forum knows I am a bean fanatic, so if a bean relative can be grown to seed in my climate, I will grow it. I am particularly fond of yardlong beans, and grow several varieties each year. Someone on another forum sent me a hyacinth bean which, if accounts are true, could be highly unusual. Most hyacinth beans are climbers, and because they only flower in short days (in or near September) they will not produce seed in Northern latitudes. This one, though, is supposed to be a bush variety which will bear seed in Wisconsin... so I am really looking forward to this trial. This year I will also be growing a yellow mung bean from the Philippines, and a large-seeded reddish-brown garbanzo. And "Madras", an edible-podded radish. Probably a few more oddities, but I've been growing some of them so long I no longer think of them as unusual. Dry them? I did that with potato slices and dipped then into a sulfur based solution to prevent them from blackening. Melons, except water, can be frozen as this was just mestioned yesteray in another thread. Corn will not keep well, unless frozen. I blanch, the cut off the kernals and freeze, also recently mentioned elsewhere. Storage also depends on if its dry, cool, and dark in the storage area.

Lars, we are great fans of Manjula's Indian cooking videos. Did you know she also has a website? Her instructions are clear and I really like watching her videos - so homey and she makes it all so easy. I'll have to try the roti recipe. We have been making naan. So far we have made the chola tikki (a garbanzo-potato patty - so yummy), hari chutney (cilantro - it can also be mixed with yogurt for a dip or frozen in ice cube trays for later use but we have been going through it so quickly that we haven't gotten around to that), chola (a curry with garbanzo beans with tomato), and the potato curry with yogurt gravy (we also did one where we used cauliflower and carrots instead of the potato). I've found her recipes easier to use because she is US based so her recipes have the American names for the ingredients. Some of the other Indian sites have good recipes but it takes extra time to figure out what the ingredient names mean which makes browsing difficult. My son makes something like "Hoppin' Juan" - but we didn't have a name for it. We have also found a lot of good vegetable recipes in Olive Trees and Honey like this one: Sephardic Leek and Cheese Casserole Olive Trees and Honey - 1/4 c olive oil 3 lb leeks ( 1 1/2 lb if you do the zucchini varient), white and light green parts only cut into thin lengthwise slices and washed 1 large onion chopped (optional - I've always used it) 1 c water 2 cups (~1 lb) grated zucchini 2 tsp salt or 4 tsp kosher salt 1 cup (5 oz) crumbled feta or 1 c (8 oz) farmer or pot or 1 c grated kefalotyri or Parmesan cheese or a combination (I've always done the feta) 1 c shreded kashkaval, Goueda, Muenster or Cheddar (did this the first time and thought it didn't add much - other times I've done just the feta) 5 large eggs, lightly beaten 2 tbsp olive oil ground black pepper to taste or 1/2 tsp cayenne 1/4 c chopped fresh dill or 1/2 tsp grated nutmeg (optional) Preheat oven to 350 degrees F and oil a 9 " square or 8 by 11 inch baking dish or two 9-inch pie plates. In a large sauce pan (she must have really large sauce pans - I use a small soup pot), heat oil over medium heat. Saute leeks and onion until softened. Add water, zucchini if using, 1 1/2 tsp salt or 3 tsp kosher salt, cover and simmer until leeks are tender (about 15 min). Drain Combine cheeses, eggs, remaining salt, pepper and dill or nutmeg. Add leek mixture. Put in baking dish. Bake until set and golden brown, about 50 minutes. Variant - you can leave out the cheese and cook 2 lb peeled, diced russet potatoes with the leeks. I would take a pass. Animals are wonderful, but I would be fine without a pet, tho I love our dog Kassi. Are you hosting Thanksgiving this year or will you be a guest? We are having Thanksgiving for just the 4 of us on Saturday. Younger DS will be home from college, and asked if he could go with the girlfriend for part of the day to her family celebration. I just didnÃ¢ÂÂt see the point in making the poor guy struggle through two meals, and I have to work every day that week but Thanksgiving, and DH is having some minor surgery on Friday. So it will be a warm and wonderful day on Saturday with DH, both the boys, and me - and Kassi eating turkey too, of course. We may stop by and see DHÃ¢ÂÂs dad on Thursday for a quick visit. Not sure yet where he is going for dinner. My mom will be with my brother, so I am not welcome.

Name just one? That's hard to do.

I love carrots, cabbage, turnips, rutabegas, and asparagus. I like most vegetables raw rather than cooked.

I like all of them except eggplant and okra. I really like juicy ripe red tomatoes in the summer. Can't wait to see something besides those pink things in the grocery.

Fresh, home grown, tomatoes! Corn on the cob and asparagus are special favorites too.

We like most veggies... broccoli, cauliflour, green beans, peas, brussel sprouts, carrots, spinich, green peppers (and other peppers), onions, radish, lima beans, squash, sweet potatoes, regular potatoes,.... I just can't come up with one at the moment that I don't like, and Gary and Emi are pretty much the same way!

Beans...I love beans and peas....of course I want some cornbread too but the beans are my favorite. I have a good sized garden area and I grow lots of beans, green beans, shellies and dried beans...and lots of peas too.

Definitely cucumbers! Love a fresh, cool cucumber, sliced up, nothing on it. The smell so good. I even love the color, they're beautiful, just the right shades of green.

I guess it would be squash, either summer or winter. I can eat a ton of it. I love all veggies except okra and lima beans.

We love many - my DH likes eggplant, not me... we love any kind of squash, fresh asparagus is a delight in the spring, I used to love corn on the cob but now do not appreciate it getting stuck in my teeth.

My kids also love veggies; DH & I have talked about how many people we know (including his kids) avoid eating many vegetables.

Potatoes, brussels sprouts, broccoli, asparagus, onions, carrots, sweet potatoes.......etc. Especially all roasted together! Yummy.

Hello!

I love this forum, it's light entertainment, just what I'm needing!

Unhealthy: mashed potatoes with lots of salt and tons of butter with regular milk (not cream) some cracked pepper, no gravy. Yum. Tons of fat and calories and sodium.

Healthy: baby spinach. I use it instead of lettuce on sandwiches and will use it instead of lettuce in salads with a bit of spicy brown mustard mixed in it instead of dressing. Love it. 50 calories per four CUPS and rich in lots of stuff/ no fat.

I enjoy almost all vegetables as long as they are not overcooked,glazed,candied,served under sauce or disguised in some horrid creamy glob of a "casserole".

I like all legumes except black beans.

Tomatoes aren't vegetables, they're a fruit except by Reagan's executive order. Potatoes, technically aren't vegetables either, since their tubers. So, my favorite vegetable, (and I will refrain from inserting a political joke here) would be corn. Large kernel, deep yellow corn. Not the bi-color, or white stuff that pops when you bite it, but corn with flavor that needs to be chewed a bit.

But if you'll include tubers... it's taters! Fluffy, starchy white taters or Yukon Golds! Save the reds for lefse

But Cynic corn is a seed ergo a grain.Because it comes from the reproductive part of the plant it is really a fruit. Corn is a caryopsis.

I treat corn as a bread exchange when I eat it.

I like alot of veggies.

I love fresh green peas, fresh corn on the cob, fresh green and yellow beans. Broccoli, cauliflower. I love fresh tiny yellow or green yuchinni, potatoes and carrots.

Potatoes. Any kind, shape, color, texture, taste. We grow our own and still don't have enough in storage to make it through the year ;o( I just bought my first bag of spuds a couple of weeks ago because we ran out....waaaaah.
