Some ham ideas

Yesterday I bought a ham because I wanted the bone for bean soup. Turned out great! Now I have a lot of extra ham.

Here's my question:

I'm looking for a couple of really good recipes that use leftover ham as a main or secondary ingredient. My parents are elderly and have a hard time deciding what they want to make for lunch and dinner each day, so the last couple of years for Christmas I've given them about 25 precooked, frozen food items (side dishes, veggie dishes, main courses) that they can simply take out of the freezer and zap in the microwave.

I make these myself and freeze in smaller containers appropriate for them. They absolutely love it, so I want to make some more this year. In fact, I've already started. My goal is to make one item per day from now until Christmas. I like to do a lot of variety and try to keep the dishes as healthy as possible. I know, ham isn't the best for this, but they do like it a lot. I've made a few soups already, so I don't think I need to make anymore of those.

I might as well include a couple of ham dishes as long as I have all this extra right now.

Any ideas?
