confused with lighting, any suggestions?

Worked on kitchen layout with a KD and a GC few months ago (and GW'ers too), cabinets are finally in. Took a few weeks to get contractor quotes and they were all insane. Plan B is to hire subs for some of the work and some DIY with advice/help from neighbors. This brings the labor down 50%. So now I am doing the electrical with help of electrician if needed. Every contractor has own ideas. Since living in NY, not required to be energy efficient and also not spending the extra money. HD said 6" high hats is most common but may be too bright while 4" cans seem too small. Because of the small space, can anyone suggest lighting layout. I have read old posts to determine that I should add task lighting by having cans over the counters and pendants would work great over sink and small peninsula. Under cabinet lighting will be added to.

Specifically stuck on lighting around the stove, refrig, can sizes and if need any general lighting.
