Cooking at Grandma's

My brother and I spent this weekend with Grandma and Elery while my Mom and Dad went to Frankenmuth for their anniversary. They took a carriage ride and had champagne and chocolate, and my brother went on Saturday to help my Papa Don bag corn, so Grandma and I spent the day together.

Grandma has lots of stuff to do, so I helped her. We had poblano peppers from the garden and Grandma said I had to burn the skins off or they would be bitter, so we put them right on the stove, then ran cold water over them and washed off the skins. The tongs got hot so Grandma did most of them on the stove while I washed off the skins. Then we took out the seeds and froze them flat on baking sheets.

Friday night my brother wanted to make a "concoction", so we decided to have a cooking contest. Grandma made the rules, and the only rule was that we had to eat what we made.

My brother had chocolate pudding mixed with Oreos and Biscoff and prunes. It was......interesting. Elery ate a bite and said he liked it, but he only ate one bite. Brother ate the rest and told me it was good, but I didn't try any.

I made crackers with orange marmalade, some prunes on the side (prunes were the "secret ingredient" that we had to use), and Biscoff spread with Reese's Peanut Butter Cups and a maraschino cherry. It was kind of sweet, but not bad. Elery ate all of his share.

I ate it, and it was all right, but I need to do something different with the dessert part, it was too sweet...

We had French Toast and Bacon for breakfast:

Elery was working all day Saturday on the new house, so we had to make him dinner. Grandma said she'd stop at the store, but find whatever we could use from the freezer. I found cheese tortellini, I love that, and I found this:

Oh dear, rabbit. I think I need a drink. Of Sprecher's Blueberry soda, that is:

OK, Grandma says she had a good recipe for Roasted Rabbit with Apples and Leeks. She had apples and some leeks in the freezer from this summer, but we needed a vegetable. We roasted butternut squash that was still in the garage from the garden, but I didn't eat it. Elery and Grandma did.

The rabbit had smoked paprika and garlic and fennel. I had to grind the fennel seeds in Grandma mortar and pestle. Fennel seeds are hard to crush up.

And this was dinner!

Now I have to go to bed, and let Grandma finish fixing the pictures, because I have school tomorrow.

Today we had chocolate chip pancakes and ham sandwiches on Honey Wheat Bread that Grandma made last night and we pressed 15 gallons of cider. It was very sweet and good this year.

Yes, I was having cooking withdrawal, LOL, so Makayla and I cooked.

Today was Brother's birthday, he's 9 now, so we had cake at Amanda's, I'll bake cakes for the big party on November 1.

i used a roaster up until a few years ago when it finally died on me. it was like having an extra oven. i replaced it with a new one, but haven't even taken it out of the box except to look at it up close and personal. it's certainly not the product of days gone by - solid and heavy and built to last, but really, what is these days? i did save the inside (agate) pan though. i never did a turkey, although it's large enough, but i used to do several nice sized chicken in it at one time. happy thanksgiving, sure hope it goes well. maryanne

DC I have used a smaller pot in the pressure cooker for other things - and loved the results of your suggestion to pressure steam meat, with the concentrated stock that results. I never know whether to cover the inside pot or not. I have a set of three stacking SS Indian pots that fit inside my largest pressure cooker and a much larger pot that fits in as a single piece. The same flat lid fits both the stack and the single pot. So to cover or not inside the pressure cooker? I'd like to be able to successfully cook small amounts of rice this way. Getting back to the fruit, I'm not sure if there would be an overall advantage to the pot in pan method here because once you cook the peel you add all the sugar and bring it to a boil until it reaches 212 degrees, so you would still have the stickiest part in the PC. My pressure cookers have very thick laminated bottoms and burning food is not an issue. Teresa, I don't know! I used very differently shaped containers for my lemon slices and for the sugar so I'm not at all sure how the volume compares. I can tell you that a cup of white sugar weighs a little over 7 ounces so if you weighed your oranges and lemons together at the market and took off a little for the cut off ends of the fruit you would have an idea. Or if you have a scale at home and want to try this, just post the weight of the fruit and I can estimate the sugar for you. The method here is that you cook the fruit, and start with something close to double the weight of sugar, stir it in and taste, adding more sugar if you think it is not sweet enough. I was happy with just a little less than twice the weight of sugar to fruit, the recipe suggest twice the weight as a starting point. This recipe is so fast and easy that if it isn't right with a small quantity of fruit, the worst that can happen is that you end up with a syrup with pieces of peel which would certainly be good for lots of things. When I us the recipe again I'll pay more attention and let you know. Annie, you may know if most fruit preserve recipes use an equal volume of sugar and fruit. The amount that I did definitely took less than thirty minutes from washing the lemons to putting the filled jars in a HWB so not a lot time is involved to experiment. And the results are good! Lee

The OP asked why I would spend so much money on a place where I spend so little time. First, if it hadn't fallen apart, I would not have considered it. The kitchen is fifty years old, the bathroom leaked into the ceiling, the cupboards have various damage, and the scratched linoleum has chrome edges that take too long to clean. The clutter on the counter is a fire hazard (mail next to toaster oven)which can be improved by layout and more counter space (nagging is ineffectual). So the old kitchen is worn, cramped and dirty. Second, we had a rise in income, and a decline in health. Looking out twenty years, we will be staying home more. I honestly would have preferred to buy myself a porsche, but I'd rather sit in a pretty new kitchen than shift in DC traffic. I had thought about law school, but I need to be home. I now commute with DH, and it turns out that's all the upgrade the car needed to become enjoyable. So no BMW. I dream about buying a horse or two, but that's not compatible with my job, and they don't respond well to health swings (can't ignore them for a month). So given a preference for staying home, and the question of what can I improve to enjoy it more, a better kitchen is a natural. I wonder if the national demographic shift to elderly living affected the USDA results. My new kitchen will be better for old eyes, backs, and knees. And there's the speed oven too. I love (will pay for) the idea of flexible cooking - that supports full holiday dinners, scratch stir fry, or frozen pizza, as needed. There is a trophy aspect, especially to the appliances. I want my kitchen to say I am a successful professional. I want to impress my mother. I also want the new kitchen to last fifty years. So even if I only really cook a few times a month, and DH twice that (for now), I want to make it easy for us to cook whenever we want/can, and have a beautiful room that makes us feel good. Adding things to burned stuff dilutes it slightly but you always wind up with something that's burned. It's like overseasoning, you don't unseason stuff although diluting that will help. You could get a bunch of super hot chili peppers, something along the line of Naga Viper pepper, Infinity Chili, Bhut Jolokia chili pepper, Trinidad Scorpion or Butch T pepper and add to it. With enough, you won't taste the burnt parts! :) Sorry for the loss. It happens. Have a glass of wine and let it go. BTW, don't be too sure about a crockpot. Many of them get so hot they'll burn stuff too if unattended. I've had enough battles with day-long chili "simmering" to know that, which is why I like the Nesco so much better, but anything applying heat can burn something. You need to tend things appropriately. Something like a roast is less sensitive to it of course, but a soup, stew, chili, sauce or something usually needs to be stirred. Hope your day is improving!

Wow. It looks like you all had fun.

M and I were near by last week. When I mentioned calling your Grandma, he didn't answer me. Now he wishes he had, when I told him you made cider! He loves it, and we can only get the pasturized kind here.

Tami, I wish you'd have called, I'd love to see you and the hubs again!

We pressed a lot of Red Delicious apples, some Gala, a mixture from several local abandoned/neglected trees and some MacIntosh just to add some tartness. It was really sweet and the kids loved it. I'd have shared happily. Should I tell you that I have some left in the freezer? I don't can it because that changes the flavor, but I put it into quart canning jars and freeze it, so we can have cider all year.

Maybe that'll get the hubs to stop next time!

dcarch, rabbit is something that really isn't very popular, even here. Hunters all seem to be after deer, no one hunts small game any more.

The rabbit was actually a bit tough, it didn't get a long enough braise, but the flavor was good and the apples and leeks made a nice complementary duo.

Maybe! You never know. He can be very good about me calling someone to meet when we are on the road, but we only had 2 weeks, and the weather decided not to cooperate the last few days. M does like his cider, especially if it hasn't been pasturized. And I would have even eaten the rabbit, even though we have had them for pets and DD still does! The leaks? I would at least have tasted them.

It's been a tiring 2 days. Mom fell last evening and broke her hip. The did surgery about 5pm today, and it went well. She didn't break the "ball" so they could put a rod and screws in. DB & I were at the hospital until after midnight, then there most of the day today. I did not go back up tonight. She wouldn't have even known I was there & I am just to tired. Didn't help that I had a fibromyalgia flare yesterday morning and Tues. night. Makes me even more tired. Now the weather front has moved thru I am feeling better. Hopefully Mom will heal well, and cooperate with the PT. She has some dementia, and is on the highest dosage of the patch for her memory. We have more good days at this dosage, but she was very confused and agitated last night and right before surgery. Doesn't remember falling. Her sister passed away last month, and she hasn't hardly gotten out of bed since. DB had to make her get up when she did. She has given up. Don't know what this will do. She, for some reason, decided to get up, without her cane or walker, to get a drink of water instead of asking someone else to get it, which is what she has done for quite some time.

Oh, Tami, I'm sorry to hear about your mother. It seems that we are more becoming the caretakers of our parents than the other way around.

Take care of yourself too, though, so you are strong enough to help take care of everything else.

You know you can stop anytime, I'll always be glad to see you and M!

What a wonderful cooking spree! I've never eaten rabbit, but I might try it with apples. Sounds good.
