For Easter dinner. I just realized that Easter is creeping up on us. We're leaving for Florida and won't be back until the 30th. Dinner will be here when I get back. I'd better get organized.

Hmmm. There is no box to check for *None of the above*. A lot of people work on Easter being one of the busiest days of the year for sales in some industries.

I'll be working. Just like every year.

Lizbeth-gardener, funny you should ask that question. Yes, it's different from the cream of mushroom soup version. I make it slightly differently every year because I have been trying to prove to one family member that scratch versions are better than canned versions. It's usually some version of this recipe: Green Bean and Chanterelle Casserole from Wild Mushrooms, in the Northwest Homegrown Cookbook Series, but doubled 1 1/2 pounds green beans, trimmed 2 tablespoons unsalted butter 2 leeks, white and pale green parts only, split, cleaned and sliced 1 pound chanterelles, brushed clean, trimmed and coarsely chopped 1/2 cup dry white wine 1/2 cup dried bread crumbs (from a boule or focaccia) White Sauce: 3 tablespoons unsalted butter 3 tablespoons all-purpose flour 1 1/2 cups whole milk Pinch freshly grated or ground nutmeg Salt and freshly ground black pepper For the white sauce, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook, whisking constantly, until the mixture foams up and begins to smell slightly nutty, 2 to 3 minutes (the flour should not brown). Slowly whisk in the milk and cook until the sauce thickens, whisking often to avoid any lumps or sticking, 6 to 8 minutes. Take the pan from the heat and whisk in the nutmeg with salt and pepper to taste. Set aside. Preheat the oven to 350 degrees F. Generously butter a 12-inch oval baking dish or other 2-quart baking dish. Bring a large pan of salted water to a boil, add the green beans, and cook until they are bright green and nearly tender, 3 to 5 minutes. Drain well. Melt the butter in a saute pan or large skillet over medium heat. Add the leeks and cook, stirring, until tender and aromatic, 2 to 3 minutes. Set aside about 1/2 cup of the chanterelles and add the rest to the skillet. Cook, stirring often, until the mushrooms are tender and any liquid they give off has evaporated, 5 to 7 minutes. Take the skillet from the heat and stir in the white sauce, white wine, and salt and pepper to taste. Add the beans and stir to evenly coat them in the sauce, then transfer the mixture to the prepared baking dish. Pulse the bread crumbs and reserved chanterelles in a food processor to a fine crumbly texture. Scatter the mixture over the green beans and bake until bubbly-hot and the topping is nicely browned, 30 to 40 minutes. Spoon onto individual plates to serve. Makes 6 to 8 servings However, I have done the Emerilized version (only two guests liked it; too untraditional), the healthy version (almost one liked it), the version above, but with canned fried onions (they mostly liked it), another version with fontina cheese melted into it and heavy cream instead of milk (what's not to like?). For the past couple of years it has been difficult to find chanterelles in my neck of the woods (I go to Central Market in Austin), but I usually combine three types of mushrooms, e.g. shitake, cremini, and oyster. We do have wild mushrooms at my place, but I've never had the nerve to harvest them (some around here do, and have for generations). I happen to think this casserole is better made one day in advance and refrigerated, then reheated for Thanksgiving.

Colleen as you know Meredith is in Australia and I must say loving every moment! It's true she missed our Canadian Thanksgiving and Halloween too but she has learned so much about the diversity of our world. Australia has been such a welcoming country to our young people, an experience she will never forget. My worse fear is that she won't come home! She is a wee bit uptight about not having snow and a Christmas tree for Christmas but she promises me that she'll be over it in a flash as she lays on the beach with all her new found friends! PS: I make your chocolate cake too, it's the best!

This one party has 15 couples giving the party. We have one shower given by 4 ladies, and one couples shower given by three couples. We also have the 3 relatives that will host the bridal brunch. ----------------------------------------------------------- gellchom - The $50 gift certificate was very generous! As host in the past, we have received: Basket of mums Silver coffee scoop (I use in my sugar canister and love it!) Silver ice scoop Monogrammed linen hand towels Monogrammed soaps Monogrammed napkins Flowered bud vase Candle snuffer Set of paper products Two other parties were given, but I cannot for the life of me remember what the hostess gifts were. They must not have been very memorable, or nothing was given - wish is fine. LOL As you can see from the above list, I am stumped to give something new and different. The gifts came from the same group of friends, so I cannot copy the ideas (other than the napkins - which are always a welcomed gift - if you entertain a lot.)

In cases like this I always like to think "I'm probably not their cup of tea either". You might want to attend at least one party though, even if briefly. You seem to care about the host so just be honest and say you are not much on big crowds but consider her a good friend so are making an exception. Then, she probably will not expect you more than once a year. Also, sometimes when you get to know a blowhard a bit better there are some good qualities hidden below the surface. I have a friend who's SO is too embarrassing to go to dinner or public places with (we won't) but after getting to know him find him to be a very caring kind person with a heart of gold. He's simply used to places in the Bronx or with his large family where he can be loud and say anything that pops in his head. We were once almost kicked out of a restaurant if you can believe it. We do go to their house for dinner about once a year though. The woman has been a friend for years and years. Sometimes getting to know people you wouldn't normally hang with can be interesting fun once the top layer is peeled off. In your instance (someone else's party) you can always leave when you want.

We're invited to Harry's sister's home in GA but I'm not sure if we're going or not. We have DSD and family here the last week in March and they won't leave until April 1, I think. Then at the end of April, we have my nephew's wedding in South Carolina so we may just stay home.

Yes, I am working. As most know from my previous posts I work in restaurants. All those holidays where people gather with family at restaurants means that there are those who MUST work those busy days or get fired. I guess I could have picked "Going to a restaurant" as my option in this poll. LOL.

I along with billions of others in this world do not Celebrate the Easter Day anyway, so it is just another day for me. I do have co-workers who are very bitter about holidays like Mother's Day and Easter becoming restaurant destination holidays and they are kept from celebrating with their own families at home with family traditions.

Thanks for checking my profile and noting my birthday! I don't make a big deal about my birthday either. My family never celebrated birthdays when I grew up and again, it is just another day for me.

Oh...I'm absolutely sure it will be here...although I wouldn't mind one bit if one of my daughters wanted to host it...8)

They just think it doesn't feel right unless it's at mom's..

And I guess as long as I can I will...

Of course they all bring their share of food.

I'm breaking the mold this year. I'm doing a Japanese-style tempura dinner for Easter.

I will try cooking some thinly sliced lamb along with the other tempura ingredients.

To acknowledge our Christian faith on the holiday the basket of Easter eggs and an empty cross will be the centerpiece.

Our oldest child asked us to host an Easter dinner this year for her family and her older brother and his girlfriend. Since they all graduated from college, they weren't interested in coming here for Easter as a rule. But now the two that live close by are interested, which is nice. She requested ham, which will make it easy. I am thinking asperagus, au gratin potatoes, Waldorf salad, and a chocolate dessert of some kind.

Unless plans change in the next few days, I'll be doing dinner at my house again this year. Although I love cooking and having all of the family at my house, I'm more than ready for one of my DIL's to take on some of the holiday cooking.

We usually go south for a few days but will stay close by as we are expecting a new grandbaby any day around that time. Need to be here to keep grandaughter and the twins when she goes. Also have a birthday party for another grandaughter on that Saturday. Not sure about Easter sunday. We will just have to see what comes...

I do celebrate Easter and I will be hosting.

In fact, Easter is my favorite holiday of the year. As a Christian, the message of the holiday is so joyous; a true celebration. In addition to that, it's Spring and flowers are coming up, bushes are budding, weather is getting better - it's all perfect as a new and fresh start.

We do celebrate the Resurrection of our Lord Jesus! We will start the day with a sunrise service at the river. Then there will be church services with lots of music :^) Whoever is available from both of our families will be at our house for lunch: Pa's special ham, home made biscuits, bunny rabbit macaroni salad, deviled eggs and the special coconut covered bunny cake. The "littles" will hunt eggs in the back yard, and we will all attend a joyous outdoor Resurrection Celebration in the evening!

Sheilajoyce, your menu sounds like mine. Never thought about Waldorf salad but it sure sounds good and am thinking about including it this year. Haven't decided on dessert. Last year it was angel food cake from scratch with a lemon curd and strawberry filling. Very good. Maybe I'll do it again.

Dilly Dally, I went out to dinner for Mother's Day once about 35 years ago. It was so awful I vowed I would never go out on a holiday ever again and I haven't! Maybe that's the secret to keeping people home on holidays... LOL

I hear ya, georgysmom. I advise friends to never go out on any of those holidays including New Years Eve. You will never get the same dining experience you would get on a regular day. The staff is stretched to it's breaking point with the extra business, and sometimes untrained temp workers are hired for the day adding to the mess and confusion in the kitchen and in the dining room. The waitstaff used for special holiday Sunday brunches includes the night time dinner staff and most of them have worked the Saturday night before until the wee hours of the morning only to have to return early at 6AM or 8AM to set up for holiday brunch. No sleep makes for a very cranky waitstaff.

There is usually a special holiday menu printed up with lackluster, quicker to prepare entrees, most often with cheaper ingredients substituted for the expected.....fake crabmeat instead of real crab in omelettes for instance. And the menu prices for both drinks and entrees are jacked up besides.

If one must go out to eat on a holiday I would recommend avoiding those restaurants with special Easter brunch offerings. You will probably get a more relaxing experience dining at an Asian restaurant or a vegetarian restaurant or any place not "known" for it's advertised special Easter brunch. Also very high end restaurants, and very casual family diners do not get swamped on holidays either. It could be fun going to a Hindu restaurant or sushi bar restaurant for with the family for Easter and avoid the crowds, long lines, chaos, and parking problems associated with the typical places.

Another "none of the above"...except I will probably eat out...since I do every day...but nothing extraordinary. I'll be glad when I have a kitchen again.

Hosting here. DD and 4 grands. We will have an egg hunt (weather pending) and filled baskets. I don't do alot of candy, I fill with inexpensive little gifts.
Also the grandsons birthday that day, so we will celebrate it. Busy day!

Just a long weekend for us to relax. No plans for anything here. Probably just put pot roast in the slow cooker and enjoy an extra day off!
