Mandarin marmalade work in progress.

These mandarins have no seeds and the skins were so thin and pithless I only had to slice them thinly. I could even eat the skins raw, no bitterness. I have the slices macerating in sugar and a bit of water overnight in the frig now. I was diligent about hand slicing them until I sliced the end off of my finger. Then the rest, about a 1/4 of the volume went into the FP. Fruit to sugar ratio is 2:1 at the moment. I may add more suger when I cook it but I share my marmalade with others who like slightly bitter marmalade so I suspect I will not add more sugar.

Tomorrow it will go into jars. I am loosely following the recipe in the link.
