Recipes Using Chicken Livers?

This will probably gross you out if you don't like liver, but I am looking for recipes that use chicken livers. I am not looking for pates or mousses, but more of a meal type of recipe that uses chicken livers in it, probably chopped.

I've done a search and mostly find the traditional pates and mousses as mentioned. Anyone have a good recipe to offer?

I like them fried....just dredged in flour, and then make a milk gravy from the pan drippings, but the other way I fix them sometimes is "dirty rice", which is chopped, mixed with rice, finely chopped green onions, celery...and I can't remember if I used green bell pepper. I seasoned it with some spices...I just used Tony Chachere's creole seasoning. I don't really have a recipe for it, but it is a Louisiana staple...and wouldn't be hard to find a recipe.

A recipe I learned from a from a friend that is supposedly a traditional Persian dish.

Dredge chicken livers in flour and fry with onions. Then pour on top, eggs that have been whipped with a fork. Not very much egg. You are not making "scrambled eggs with livers" you just want enough egg to coat the liver. When you add the egg sprinkle tumeric over the mixture and fold the mixture until eggs are cooked.

Reading the recipe it probably does not sound very exciting but I had this at someone's house for dinner and begged for the recipe. I make it all the time now.

It is also a very economical and very healthy meal.

I am going to use the pre-baked puff pastry idea myself in the future. Here is a to-die-for recipe for chicken potpie from Ina Garten. When I made it, I just used a "red box" pie crust (I'm so NOT a baker). I baked the filling as a whole double-crusted pie. Even though I used a deep dish pie plate, I had filling leftover. I froze that. Can't remember if I've used it yet or not - I'll have to go look lol! Ingredients: 3 whole (6 split) chicken breasts, bone-in, skin-on 3 tablespoons olive oil Kosher salt Freshly ground black pepper 5 cups chicken stock, preferably homemade 2 chicken bouillon cubes 12 tablespoons (1 1/2 sticks) unsalted butter 2 cups yellow onions, chopped (2 onions) 3/4 cup all-purpose flour 1/4 cup heavy cream 2 cups medium-diced carrots, blanched for 2 minutes 1 (10-ounce) package frozen peas (2 cups) 1 1/2 cups frozen small whole onions 1/2 cup minced fresh parsley leaves For the pastry: 3 cups all-purpose flour 1 1/2 teaspoons kosher salt 1 teaspoon baking powder 1/2 cup vegetable shortening 1/4 pound cold unsalted butter, diced 1/2 to 2/3 cup ice water 1 egg beaten with 1 tablespoon water, for egg wash Flaked sea salt and cracked black pepper Directions: Preheat the oven to 350 degrees F. Place the chicken breasts on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken. In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and heavy cream. Add the cubed chicken, carrots, peas, onions and parsley. Mix well. For the pastry, mix the flour, salt, and baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Divide the filling equally among 4 ovenproof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the side, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot. seagrass

Seagrass, I looked at a bunch of methods I found on the Web and picked the simplest one. Lots of recipes call for adding onions or apples to the fat, but I wanted to try it first without adding another flavor, so mine is just fat and nothing else. All you do is collect the fat trimmings each time you make chicken and save them in the freezer till you have at least a couple of cups' worth. If you remove the skin before you cook chicken, you can add cut-up pieces of that as well. Then just put it all in a heavy skillet over low to medium heat and let it melt slowly, watching so it doesn't burn. Some recipes said to add water to the skillet, but I didn't. As the fat liquefies, you can pour it off into a container. Eventually all that will be left are the pieces of skin, which you can cook till they get brown and curly. Then, if you're suicidal, you can eat those. They're called "gribenes" in Yiddish, and they're as delicious as they are lethal. The melted fat gets poured through a very fine sieve, or even a coffee filter if you're compulsive (I was). I have almost all the schmaltz I made that first and only time still in my freezer. I'm not sure how long it's supposed to keep, but it seems fine, and that was quite a while ago. I guess I could make more if I needed it. It's not something we use a lot of, but it's comforting to know I have some if there's ever a national schmaltz emergency.

This recipe from Ann freezes well. I have used milk instead of cream with success. Not as rich but still quite tasty. Enchiladas De Pollo =================== Edited: April 20th, 2006 Deluxe Chicken Enchiladas Source: Barbara Hansen's Mexican Cookery 2 whole chicken breasts chicken broth 1/2 small onion 1 bay leaf 8 peppercorns garlic clove salt 1/2 medium onion chopped 3 tablespoons grated parmesan cheese 1 cup shredded Monterey Jack Cheese 1 4 oz can green chilies garlic 1 13 oz can tomatillos, drained 1/4 cup cilantro leaves 3/4 cup whipping cream 1 egg salt 1/4 cup lard or oil 8 corn tortillas 1 cup cheddar or Monterey Jack Cheese Guacamole 1 cup sour cream lettuce black olives . Place chicken in large pot and cover with chicken broth. Add onion, bay leaf, peppercorns and salt. Simmer until tender. Let cool in broth. Remove chicken and save broth for another use. Shred or cut chicken in to smaller pieces. Add chopped onion, Parmesan cheese and Monterey Jack Cheese. Taste and add salt if needed. Set aside. IN a blender or processor, combine green chilies, tomatillos , cilantro, whipping cream and egg and blend until smooth. Add salt and 68 pepper to taste. Set aside. Preheat oven to 375 F. Heat lard in small skillet. With tongs, carefully place one tortilla at a time in hot lard. Hold for 3 to 5 seconds and drain on paper towels. You want the tortillas to be softened but not crisp. Place some of the chicken mixture on the tortilla and roll tightly. Place seam-side down in a baking dish. Pour cream mixture over the Enchiladas and sprinkle evenly with 1 cup of cheddar or Monterey cheese. Bake about 20 minutes or until heated through and bubbly. Serve with sour cream, guacamole, lettuce and olives. NOTE: Instead of softening the corn tortillas in hot oil use the following Enchilada sauce. (Alternative Enchiladas Sauce) 4 tablespoons oil 5 tablespoons flour 1 tablespoon cayenne pepper 1 tablespoon chili powder 1 teaspoon cumin 1 garlic clove Heat the oil and add the flour, cayenne pepper, chili powder, cumin and garlic. Cook for a few minutes and add the chicken broth. 2 to 3 cups chicken broth. I haven't made this one but it looks good, too. Also from Ann. Enchiladas - Judy's Chicken Enchilada Casserole =============================================== 12 CORN tortillas, homemade or purchased oil 3-4 cups cooked, shredded chicken meat (reserve stock) 8-16 oz Monterey Jack cheese, shredded 1 medium onion, chopped 2 cloves garlic, minced Green chili sauce (recipe follows) Sour cream 1. Make green chili sauce. 2. Put about 1/2" of oil in small skillet. Dip tortillas in hot oil for just a couple of seconds until softened. Place on paper towels in layers until cool enough to handle. With kitchen scissors or knife, stack 4 and cut in quarters. LOWFAT ALTERNATIVE: Microwave tortillas in a stack in a damp paper towel or dish towel until softened, about 1 minute. 3. Preheat oven to 350 degrees and spray a large baking dish with Pam. Place one layer of tortillas in the dish which has a thin layer of sauce spread in it. Top with / 3 of chicken meat and 1/3 of cheese. Spread 1/3 of sauce over it. Repeat to make 2nd and third layers. Sprinkle some cheese on top of sauce, if desired. 4. Bake for 25-35 minutes until heated through and bubbly. Green Chile Sauce: Sautchopped onion and garlic in 1/3 cup of oil until transparent. Add 1/3 cup of flour and stir until heated through. Add 3 cups chicken stock and stir until thickened. Stir in 1 cup regular or low fat sour cream and 2 (4 oz.) cans of chopped green chilies. Add salt to taste, a little more than you like, as it dissipates into the tortillas. NOTE: This is not spicy at all, so if you like it hotter, add some chopped Jalapeno and sautÃ© with the onions, or dried red pepper flakes or hot sauce to taste.

You can use any part of a chicken that you find on sale for making chicken broth. I buy packages of chicken necks & backs just for making broth. Not a whole lot of meat, but it really doesn't matter if you simmer the broth for several hours. By the time you're done, the meat has pretty much given up all its flavor. If your goal is to make broth & use the meat for soup, I think legs, and especially thighs, are a good choice. They are more flavorful than breasts and hold up to long cooking. As far as too much broth, you don't need to fill your dutch oven. Just make the amount of water equal to what you want to finally end up with. Or, you could make a larger amount and freeze the extra broth. However, there's absolutely no reason why you can't use a smaller saucepan with just a few pieces of chicken. I think browning the chicken pieces either in the stock pot or in the oven adds a richer flavor to the chicken broth. I always include a chunked up carrot, onion, and celery stalk, along with a bay leaf, some whole black peppercorns, and a couple of whole allspice. The longer you simmer the broth, the deeper and fuller the flavor. I usually strain the broth using a strainer lined with some cheesecloth & toss all the solids. However, if I have used some really meaty chicken pieces, I remove the bones & skin and set the meat aside for use later. Then I refrigerate the broth overnight & scrape off the congealed fat. If I'm making soup with the strained & de-fatted broth, I'll use fresh vegetables.

I make chicken livers for me and sister Annie, who lives in a home. Most of the aides all say 'eewww' when I bring them in for her. All I do is fry them (no flour) in a little vegetable oil, and add some mushrooms. My Mom used to add some chopped up to her noodles that she cooked in homemade chicken broth. What's funny is that up till I started fixing them for Annie, I'd always turn up my nose at them. Now I enjoy them almost as much as she does.

Dilly, I appreciate your clarifying that I'm not making scrambled eggs with livers. That's funny, because as I was reading the first part of what you wrote I was thinking "scrambled eggs with liver???".

Yes, it is much like making fried rice. Not a lot of egg. Just enough to coat. In fact you can even add leftover cooked rice into the mix if you wish to make it a one dish meal eliminating the need to cook up any sides for the dish. The egg is to bind the livers slightly. You may see tiny bits of "scrambled egg" mixed in but it is not a dish like an omelette.

Oh, and I misspelled *turmeric* above. It is the secret ingredient to the zest of the dish. Lots of turmeric.

And I am sorry I don't have a written "recipe" I just toss everything into the pan by eye. Originally my friend made it in front of me showing me the technique on how to do it and I just remembered the simple ingredients.

I actually HAVE made a recipe similar to this. I liked it, but ex hated chicken livers, I just tried to sneak some in and he knew at first bite. Guess that's why he's gone, tee hee.

*************I DO remember chopping the livers up into smaller pieces.

Chicken Liver Stroganoff

1 lb chicken liver, cleaned and cut in half
1/2 lb mushroom, wiped clean and cut into pieces roughly the same size as the livers
1 large sweet onion, chopped
2 tablespoons butter
1 tablespoon olive oil
1 1/2 teaspoons paprika
1/4 teaspoon cayenne
1 1/4 cups sour cream
salt and pepper
cooked rice
Directions
1Heat large skillet on medium high heat for a minute, then add the butter and oil.
2Saute the onions for 2 minutes, then add the mushrooms and cook, stirring, until the onions become translucent and the mushrooms begin to give off some liquid.
3This should take about another 3 minutes.
4Remove the vegetables from the pan and set aside while the livers are cooking.
5Add the livers to the hot skillet, adding a little more oil/butter if needed.
6Saute the livers for about 3 minutes, but do not overcook.
7Return the vegetables to the skillet with the livers.
8Add the seasonings and stir to combine.
9Add the sour cream and stir to combine.
10Allow to heat thoroughly, but do not let the sour cream boil or it will curdle.
11Taste and adjust seasoning if necessary.
12Serve this stroganoff with hot fluffy rice.

Sorry,no recipes here.I like mine fried.Dip in buttermilk,dredge in flour seasoned with salt and pepper and deep fry.MMMMMM,I want some now! None of my family likes them so I never cook them.One of the chicken places at home has them and I go there when I want them.They are huge and so good.
When I cook calf liver I saute lots of onion slices in a little oil,remove them from the skillet,then dredge ithe liver in flour and fry it until brown.Sometimes I make cream gravy with lots of pepper and put the liver and onions back in,cover and simmer for 20 minutes or so.Or Pour a can of cream of mushroom soup over the liver and cook 20 minutes.I guess you could do chicken livers that way.maybe serve over rice or pasta of some kind.
