Glenda, a question about your pineapple casserole...

can I throw it all together the night before and then bake it the next day? Dd has an awards banquet tomorrow night for cheerleading at 6:30 that we have to bring a covered dish to. I won't get home til about 6, so I wondered if I could put it together tonight, and then have Alyssa throw it in the oven for me before I get home.

I am not Glenda, but I thought I would put my two cents worth in, LOL. I made this casserole this weekend and mixedday I stirred it up, made the topping, sprinkled it on top and baked it, about 10 mn more than called for. Worked well. Dottie

Mickey, I made this the night before I needed to bake it. I just put the cracker crumbs on top just before I baked it the next day. You might want to double this as it will disappear fast.

I hope this isn't too late for you, Linda. It will at least give you an idea of how much you need to make. PINEAPPLE AU GRTIN 2. c self-rising flour 2 c. sugar 3 cans (20 oz. each) unsweetened pineapple chunks 1 c. (4 oz. shredded cheddar cheese 1/2 c. butter, melted 70 Ritz crackers, crushed Combine flour & sugar. Drain pineapple, reserving 1-1/2 c. juice. Add juice to flour mixture. Stir in pineapple and cheese. Pour into a greased 13x9" pan. Cover and bake at 350 for 30 minutes. Uncover and stir. Bake 10 minutes longer. Combine melted butter and cracker crumbs; sprinkle over pineapple. Bake, uncovered, another 10 minutes or until a knife inserted near the center comes out clean. Serves 16.

I reckon this is one of those "secret" recipes that have been shared around for a long time. I first learned it at a duck hunting camp in Stuttgart, Arkansas, quite a few years back, and have been making it ever since. Everyone we serve it to for the first time is enthused, and has to have the recipe. I've made it with Ritz, with Saltines (which is how I learned it), and with wheat crackers. It's all good. And, like Glenda, I usually double it.

Here's one from Paula Deen Pineapple Casserole Servings: 8 Cooking Time: 30 Minutes Ingredients: 1 cup sugar 6 tablespoons all-purpose flour 2 cups grated sharp cheddar cheese 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved 1 cup cracker crumbs (recommended: Ritz) 8 tablespoons (1 stick) butter, melted, plus extra for greasing pan Steps: Preheat the oven to 350 degrees F. Grease a two-quart casserole dish with butter. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended or combine in food processor. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

Liz, I've always sliced the sweets at about 1/4", but I don't think it matters much....thicker slices may take a little longer. I've used partially cooked sweets when time is an issue, too. The measurements are all arbitrary, whatever fits in the dish will work. I wrote down exactly what I used one year when The Kid was off to college and kept asking me for 'real recipes'. Don't think I've used exactly the same proportions since, lol.

I made it the night before too, topped it with crackers just before baking.
I think Glenda reccomended letting it come to room temp before baking, but Dotmoms idea would work too.
It is soooooooooooo good! I am looking forward to Easter so we can have it again!

I made this yesterday just to see what the fuss was about. Main Man loved it. I had to put cottage cheese on my portion. I don't do sweet that well.

Here's one for you.

PINEAPPLE CASSEROLE

2 (20 oz.) cans crushed or tidbit pineapple, drained
1 c. sugar
3 tbsp. flour, blend flour and sugar together
1 stick butter, melted
8 oz. grated Cheddar cheese
1 c. Ritz crackers, crushed

Mix everything together, except cracker crumbs. Pour into casserole or Pyrex baking dish and bake 45 minutes in 300 degree oven. Sprinkle cracker crumbs on top. Leave in oven long enough to get hot.

Here it is: and make it nite before, BUT BE SURE AND TAKE IT OUT A WHILE BEFORE BAKING THE NEXT DAY>
Then top with cracker crumbs. I mix the cracker crumbs with butter in a plastic bag, as well, an put in refrig.

Be sure and grate your own cheese.

And double recipe!

Pineapple Casserole

1 20 oz can pineapple chunks, drain, and reserve juice
3 Tbsp flour
1/4 cup melted butter
1/2 cup sugar
1 cup grated cheddar cheese (grate your own) Pre grated cheese doesn't melt
1/2 cup crushed Ritz crackers **I always use saltines

Preheat oven to 350

Combine flour, sugar and 3 Tbsp pineapple juice. Stir in cheese and pineapple. Spoon into greased casserole dish. Mix crackers with butter, and add to top of mixture.
Bake 25 minutes or until bubbly.

Just wanted to let frazoo know that I have always used Splenda when I made this recipe and it seems fine to me. Of course I have never made it the regular way so...
