Shakshouka - with pictures!

Since we were talking about shakshouka on the thread about eggs in gravy, I got in the mood and made it today. Yummm. As I'd said in the other thread, my mother used to make it all the time, and in fact, I have the pan she always made it in, so I pulled it out and made me some. For those who weren't following the other thread, it's a simple recipe: oil in the pan, fry up some onions, peppers & tomatoes. Add eggs on top, sunny side up. Serve with toast to sop up all the egg yolk & veggies. Peppers can be any level of heat you like. I use bell peppers & jalepenos.

    Lovely Lowspark. I can almost taste it. Do you like to break the yokes or leave them whole? Evidently there's quite a controversy in the Shakshouka community about that. I made mine a few days ago but started with a more sauce-like tomato concoction. It was yummy and definitely a comfort food. And right now, being on weightwatchers for the first time im my life, I need all the (low-point)comfort-food I can find. ;)

    Lowspark: By Jove you've done it !!!!!
    Now I have to get some Spaghetti Sauce out of the freezer.

    I put a lid on and steam the tops of the eggs . I'll put a pic when I cook mine.

    I leave them whole, that's the way I like them because I like the yolks to be liquidy.

    LOL! No she never whacked us with a pan. Don't know why this one is so dented and mis-shapen. Never thought to ask her when she was alive... Oh well! To me it just gives the pan character. Makes me think of my mother and her shakshouka and all the other wonderful things she cooked!

    I don't believe WFD fell off the bottom.
    Thought I'd pick it back up.
    Haven't been cooking much but tonight I made something a little different.

    Shakshouka Italian Style.

    I used Spaghetti Sauce and added some Roasted Peppers.
    Dropped in 2 eggs and put a lid on to steam them.
    I think the Peppers did it, They were great !
    Had a slice of toasted Wheat Bread for dipping.

    Maureen, I was going to mention that the pan looked well used. LOL I have a couple of "favorites" that look a lot like that too.

    That looks really good, lowspark. I never called mine anything, but we always made a version that included tomatoes, onions, peppers and some shredded potatoes. Maybe for supper....
