Leftover tomatillos?

I am making Ann's Stacked Enchiladas for dinner and around here the only tomatillos I can find are canned. The recipe calls for 4 tomatillos. There are at least 6 more in the can.

Could I freeze them? Or maybe I should make another batch of the chili sauce and freeze that?

I am thinking that since they get chopped and cooked down, freezing would not be a problem, but I could be wrong....

I'm sure you could freeze them quite well. I have often made tomatillo salsa and frozen that.

Yes they freeze great. Remove the husk, if they are sticky, rinse that off and dry, and drop in a freezer bag whole. I freeze lots of them from my harden every year this way.

On freezing... Naturally remove husk and wash I put the quantity I use in a batch of salsa per plastic freezer bag. Remove the air from freezer bag (i use the "holding bag under water and releasing air without the water getting inside" method) THAT'S IT!!!! When you thaw the fruit...there will be juice in the bag...put that in your salsa also. Naturally fresh is best, but this is a easy way to have great homegrown salso the year round. You can use whatever mix of peppers you like/have, just keep the total amount of peppers the same. Yes, you can leave out the cilantro when you can it and add it fresh. It would probably have more flavor that way - I added it when I canned simply because I have some nice cilantro in the garden right now, and it is not always available here in Podunk Junction when I want it during the winter (and I always forget to freeze some when it's growing). The downside of living in a rural town :-) It works great as a green enchilada sauce. I pureed ours after I opened the jar. It was really delicious.

early ssabukis aliana goji faranji Awesome tomatoes! ESA is a cropping machine with loads of small yellow plums. Goji Faranji makes big wonking beefsteaks, sometimes they are a bit ruffly-but this I think is related to hotter weather and when it cools down a bit then the fruits are smoother. If you let GF mature completely on the vine it's incredibly delicious. It's fine too if you pick them a bit green and let ripen on the counter, but leave it on the vine until it feels like a baby's tushie when you squeeze it and you have tomato nirvana.

Hi! My router was goofed up the past couple days at the pole...just got back online this afternoon! I fry the ancho in a screaming hot SS skillet just a couple seconds until it slightly scorches. Be careful...they can put off fumes that can burn your eyes. The frying intensifies the flavor...it's noticeably in the finished product. Same technique as for making mole. Lindac, I make bean soup similar to yours also but I make several different types. We get bored with the same bean soup all winter. The tomatillos are 14 ounce cans. Yes, it was a lot of shredded pork. I had it leftover so I used it up in the soup. Beverly, I think dried ground ancho or poblano would be fine. Even jalapeno would work...it just for a bit of heat without overpowering the soup. AM, Yes...Norwich is only about 20 minutes (10 miles) from us! Call next time, please!! I don't usually jot down ingredients when I make soup. I'm glad I did this time...it's good! /tricia

Yep, fresh or canned freeze beautifully. I would feel like we were starving if I didn't have a stash of tomatillos in the freezer/pantry. :)

Duh, I don't know why I thought you were talking fresh, but yes as everyone says freeze the canned ones too.

Tomatillos vary greatly in size. At 10 per can (and not knowing the can size) they may be smaller than average. Maybe you should use more than 4 for the recipe. It's hard to say from here. I'm guessing an average size tomatillo is about 1 1/2" to 2" in diameter.

I agree with freezing the tomatillos or the sauce. I have canned salsa verde but the level of acid recommended these days makes it much too sour. Freezing is better.
