Food Mill Recommendations

I make applesauce and have been using a food mill I bought at a garage sale. It doesn't have disks but it works pretty well but is getting rusty and I think it's time to replace it. I looked up food mills on the internet and the OXO looks promising but one of the reviews said it gets clogged and can slip off the bowl when using. Any recommendations?

Also, I bought some Wensleydale cheese with cranberries at Costco. It is delicious and I was wondering how to serve it to guests? It doesn't slice very well, you just have to chunk pieces off. Is it just served on a place with say, fruit or crackers and guests just chunk off what they want?

Don't know about a food mill...mine is an ancient Foley.
But the Wensleydale is just served on a plate with a cheese wedger thing...you use it to pry out chunks.

I have a lovely Tellier X3 food mill my dh got me last Christmas. It works well and has a couple of little feet that grab the rim of the pot instead of arms that stick straight out. It doesn't work on a wider lipped bowl like my Pyrex mixing bowls though so keep that in mind. I'm so glad I took this forum's advice and kept it (I was having a post-Christmas "we've spent too much money" moment and was considering returning it for an OXO. Don't know what I was thinking, not only was it rude, it would have been really dumb!)

There is a little bit of a learning curve on using these, so don't get discouraged. It really makes the process much faster. Also, if you take it apart BEFORE emptying the tomato skins and seeds (and thereby flinging it all over the kitchen), dogs are a wonder pre-clean for the kitchen. In my case, they ate it so fast I didn't even have time to put down the parts and rinse my hands!

That deal you missed isn't a very good one anyway.. It looks like a very old version of a Victorio food strainer and they were very messy, and leaked out the shaft. The latest version is from Villaware and has a wrap around plastic shield to keep spatter down to a minimum. Also, the berry screen, as an option will get all the seeds out of raspberries and so you have a perfect seedless jam. I use it for my tomatoes and the skins and seeds pass out the end, which, on the newer Villaware, is another 4 inches of clear plastic cone to push out the waste even further from the metal conical strainers. The Villaware also has a rubber seal on the cranking shaft that stops any leakage from flowing out where the handle is attached. Cutting big tomatoes in halves and smaller ones are left whole. I can 'crank out' a bushel in less than 10 minutes. Very little effort compared to a Foley and works great even for small bits like for salsa, and even pumpkin. I sold my old Victorio for $5.00 a few years ago, but still have a similar Back To Basics model, that has the older wing nut screen design of the Victorio., but that shaft still leaks when I do watery stuff like tomatoes and even raspberries.

The Foley Food Mill now comes in stainless steel. I have a friend who has a Villaware Victorio Food Strainer who has let me borrow it a few times for "BIG" projects. More money, but it does the trick on large quantities of food. It's a well-made machine. My friend makes good use of it with her giant garden, fruit trees/bushes, plus she's a great cook. Tomatoes and other vegetables and fruits are easily processed. Great for anyone who makes jams, thick pureed soups, vegetables sauces, and baby food. It's also easier to crank and control than a regular food mill, although the OXO works well, which is what she uses for small jobs. My friend can reduce 5-pounds of tomatoes into puree in just a few minutes with the residue being expelled from the long funnel on the side. I've seen her process 2-pounds of cooked kidney beans for a dip. She also uses it when she needs to make piles of mashed potatoes for the holidays. Turns unpeeled cooked potatoes into a smooth-textured mash. People who like lumpy mashed potatoes may not like the texture. There are additional attachments so you can process a wider variety of foods - salsa screen, medium-coarse pumpkin and squash screen, grape spiral, and a fine berry screen. It clamps onto a table or counter top. When I've borrowed it I've used my wood-topped rolling cart that I use for other things I need to clamp onto a sturdy surface (my many mills, wheatgrass juicer, and grinders). I'd never clamp things on my counter top or table, which is why I have a cart with a wooden top that rolls into my pantry when not in use. You disassemble it for washing by hand. That's the only ones I've had any experience with, other than my own small stainless steel food mill. I googled the Tellier X3 food mill and got the Costco site where it was listed for $339.99!!!!!!!!!!

Yikes! Out of my league.

blueheron, I had an old hand cranked Foley that served me well for many years, then I gave it to Linda (doucanoe) when my mother gave me her old Squeezo.

So, if you want a small hand cranked food mill, the Foley is good, sturdy, lasts a long time. If you want something that does a larger amount quickly look into a Squeezo or Victorio.

I use a couple different sized Foley food mills and they work good. I may even have 3 different sizes. I will have to check. I know for sure I have two, one is rather small. They last for years I think.

If you have a Kitchen Aid mixer, there is a food strainer attachment you can purchase. I used it for the first time this year for tomato sauce and apple sauce and it works like a charm!

I spent hours grinding through tomatoes with my foley-style mill last year, and this year I was done a half bushel of tomatoes in a half hour.

It's really worth it, if you already have a KA mixer.

If you want another food mill, it is best to get an old one (like from the 40s or 50s) on eBay. I bought a fairly expensive new one at a restaurant supply shop, and it broke fairly quickly. Then I bought a cheap antique one on eBay, and it has held up extremely well. This is one of the true cases where they don't make them the way they used to. The old ones were tin plated (and very beautiful), although I don't know what the base metal was. Whatever it was, it is very sturdy - possibly brass or steel. Anyway, they show up on eBay regularly, and so if you don't find one this week, wait a week or so. I think I paid $6 for the one I bought, although shipping was a bit more than that. I use mine mostly for processing chilies to get rid of the skins and seeds.

I have a KA food grinder, but I don't have the strainer - maybe I should get one, but I already have a chinois.

Egads Blueheron! That'd be way too rich for my blood too! The food mill my dh got me was about $140 (it's stainless) but you can get the tin version for about $65. Sorry for giving you a heart attack!
