Too salty!!! Need quick help, please.

I am heating up a batch of Picadillo from the freezer for a pot luck in one hour. It seems salty to me and I wondered if the potato trick actually works. A search of the net returns mixed advice.

Well if you put slices of potato in that stuff and cook it the potato will become somewhat salty.....where does that salt come from???

I think I probably put too much salt in myself. The dish also has capers and olives, so it is easy to go overboard. If it were just for us, I would not be so concerned. But, because it will be shared, I am a little annoyed and would like to fix it.

I know you can also add sugar to counterbalance too much salt, but that seems a bit scary.

Brined for 10 days? Do you mean they were fermented? Pickles are brined for a few hours or maybe overnight except for fruits and a couple of candied sweet pickles. If you are fermenting them and added too much salt to begin with for the weight of the food then since it has only been 10 days - which isn't very long - you can just add more cukes and okra to dilute the salty flavor and even add a bit of sugar and let it keep fermenting longer until the salt level drops. But if you want to stop the fermenting process instead, then yeah you can rinse and pack in the 1:1 vinegar/water mix of your choice. White gives a sharp, cider gives a more mellow flavor. But it won't eliminate all of the over-salty flavor. If you mean something other than fermenting could you tell us exactly what recipe you are using? Dave

Need help quick! New sink is too deep for existing vertical drain

Thank you for your reply. I don't have a disposer and hadn't thought about adding one with everything that's going on in the remodeling. There will have to be a spout to attach the dishwasher drain hose, though. The sink will be undermounted and is 9" deep. The cabinet is 30" tall, so I guess that puts the bottom of the drain at about 19-20" above the board that you see. There are about 5 inches below what you see in the picture, under the board that's cut out around the pipes. The board is removable, so maybe the plumber can work with that extra room. Would a disposer fit if there are 5 more inches? The other thing is, I don't really know anything about requirements. Do you see a vent on this? It's in sort of an island and there aren't any other holes or pipes besides what you see in the photo. I saw on other posts that it can be a challenge to vent an island sink, but it's required. Is that right?

Thanks for your responses everyone. I think we will buy it--which means we will eventually have to buy something for the other wall in order to achieve a sense of balance. These two walls flank the opening into the entry hall so I think it will look funny if there's a painting on one wall but nothing on the other. We had slept on it, then went back to the gallery. Then realized that it might be too big so had to wait for our housesitter/puppysitter to take measurements and send them to us--all with a considerable time change, so a couple days have gone by. As for finding another place in the house, our house has very little wall space. But the dining room is not spoken for yet, so it could go there, worst case scenario. It's rare that we agree on art, so I'm happy we found something that appeals to both of us. We actually like so much of this artist's work that it was difficult to decide. (Of course, DS does not like the painting, which is typical of him these days. But he's only 15.) Thanks again for your advice!

Well, it wasn't that bad, actually. Several people had seconds/thirds and a few asked for the recipe. Thanks for the help.

Oh, I have some nice, tasty potatoes for tomorrow. :-)

I've grated potato and added it to reduce salt. Has worked for me every time.

I often find that one person's"too salty" is another's "just right"....mainly from being served something that was so salty I couldn't eat it and have others at the table say it was good.
