questions before we throw some paint down

Got the BIN to start priming the trim and will be using BM Fresh Start Primer on the new drywall. We will be painting over a satin off white paint and wanted to know if we would be alright with out priming that surface. We have patched some small areas with drywall compound and have them sanded smooth and will prime them. Will the primed areas show thru when we apply the new paint? Going with the BM Regal eggshell Prismo Dunes on the walls, trim will be BM Waterborne Satin Impervo Sail Cloth (would like an opinion on the satin opposed to a semi gloss) and we need assistance on the ceiling color. We are leaning towards the a super flat white, but just want to make sure that it will look alright. We have a large room that gets substantial light and wondered if the white ceiling would be too much? We want to do the best job we can and will be applying two coats of paint on the walls and trim. What is considered a quality roller to obtain a nice job? I had read somewhere on here that the Purdy White Dove is considered an excellent choice with a 3/8" nap. I can purchase the Purdy line close to home, but would like to obtain a great finish opposed to convenience. Last, some freinds had their interior professionally painted and the painter had applied caulk around all of the trim. His finished work was outstanding and we wondered if the caulk helped in cutting in the wall paint against the trim?

Many thanks to all and especially the "Paintguy" for taking the time to answer our questions.
