Lemons, Lemons & MO Lemons!

As I type this, I'm drinking the (seriously!) best lemonade I've ever tasted. Found the recipe somewhere on the 'net ages ago and had saved it (thankfully).

Amazingly enough, the evil ex-MIL called me Tuesday and said "I picked all the lemons off the tree - come by and get some". Me, thinking maybe a few lemons. Instead, when I arrived, I received a 5 gallon bucket of lemons. And people, these are Meyer lemons! Thin-skinned and FULL of juice.

Last night I made lemon squares to take to the office this morning. I like to take treats to work. These turned out so well, they will now be added to the regular baking repertoire in our household.

LEMON SQUARES

BOTTOM LAYER:

1/2 cup butter

1 cup sifted all-purpose flour

1/4 cup powdered sugar

TOP LAYER:

1 cup granulated sugar

2 eggs, slightly beaten

2 Tblsp. all-purpose flour

1/2 tsp. baking powder

4 Tblsp. lemon juice

1/2 tsp. grated lemon peel

Combine ingredients for bottom layer and press into a 9-inch square pan. Bake in preheated 350 degree F. oven for 20 minutes; cool.

Meanwhile, combine top layer ingredients and pour over cooled bottom layer. Bake at 350 degrees F. for 25 minutes. Dust with sifted powdered sugar while still warm. When cool, cut into squares.

Today, after arriving home from the office, I discovered Mom had made herself some lemonade from one of the lemons. This, dear friends, is when I had the epiphany moment (!!!) when I remembered the aforementioned lemonade recipe I had saved many moons ago. I printed said recipe and set to work.

Twenty minutes later, I am now enjoying the lemonade. It's pure bliss. It's a mouthful of summer.

And because I'm smart enough to juice out and zest all those lemons, I'll be drinking lemonade in the dead of winter when everyone else is drinking Country Time Kool-Aid CRAP! (tee hee hee!!)

MY FAVORITE LEMONADE

Zest of 3 lemons

1 cup Lemon Juice, with pulp, seeds removed

SIMPLE SYRUP:

1 cup sugar

1 cup water

Refrigerate lemon zest and juice, covered, until needed.

To make simple syrup, bring sugar and 1 cup of water to boil. Stir to dissolve sugar. Remove from heat, add lemon zest and cover for 15 minutes. Strain and discard lemon zest. Allow syrup to cool.

To make lemonade, add 1 cup lemon juice and all of the simple syrup to the pitcher. Fill pitcher the rest of the way with water. Stir well. Refrigerate until serving. Makes about 2 quarts lemonade.
