Progressive dinner?

I know....I got roped in!!

A friend asked me to co hostess the main course with her....me cooking and her table setting dishes etc and splitting expenses.

The gatherins for hors d'ouvres begins at 4, and then on to individual homes for the salad course and finally on to the main course.

So far decided on is pork tenderloin....my thoughts are to set it to cooking, rubbed with soy sauce for color, in a 275 oven when we leave and hope by the time we are ready to serve it it won't be over done and dried out.

Any other ideas?

And I have the idea of sweet potatoes...peeled, rolled in butter and then in a seasoning mix of brown sugar and chili powder and roasted? but how to hold them? and if pre cooked and nuked wouldn't they get icky?

I plan to serve a side of apples and pears cooked up with a bit of brown sugar and perhaps maple syrup and ginger.

Veggie?...Thinking something that will cook quickly as guests are arriving.

How do people pull this off without doing something like a stew with over cooked veggies?
