Another food storage question for you folks

I read Jannie's posting about the mold on the sandwich rolls.

I have a question for you about other bakery items.

When I shop at Wegmans (maybe there's one near you?), I like to pick up a few of their pretzel rolls --the crust is hard, the inside is soft. But that lasts for just a day. I no longer use the plastic bags at the store for them (the salt combined with the warmth of a tied bag was not a good thing!) I took the brown paper bag instead, and when I got home I just rolled the bag shut and left that on the counter. Next day, the remaining 2 rolls were hard as rocks.

I don't know if Wegmans keeps the amount of preservatives limited or whether there's really just no good way to keep these fresh.

Any ideas? I have a metal breadbox, but that didn't help, either. For now, I will just buy one or two to eat that day.

You can try the wax bread bags. I don't know if that will be the answer so I think its best to just freeze the bread and take it out when you want to use it.

All of our bread products get frozen.
I make our bread, cool then slice. It gets frozen and we just snap off the slices we want. Bagels get frozen as well.

I am going to put rice in quart mason jars and store it. Alternatively, you could buy a couple of 5 gallon plastic buckets with gasketed lids, and fit it all into them (probably with room to spare). Won't break if knocked into. If you're worried about the plastic being food-safe (e.g., if the buckets are used and you're not sure what the buckets contained), you could add an inner liner bag. If you're worried about not getting a vacuum in the jars, toss a chunk of dry-ice into the top of each bucket before pressing down on the lids to seal them. It'll sublimate into CO2, which is inert. If you want some easier-to-access storage too, you could mix it up. One bucket for long-term storage, and a bunch of jars for short-term. --Steve

Depending on the hotel you will surely have a room service menu available at all hours of the day, especially in a business hotel. Remember too that the midday meal in Spain is the main one, usually from 1 to 4 pm with supper starting around 8 pm until 11 or midnight. Also most hotels have a bar where snack foods are available at all hours...toasted ham & cheese sandwiches, bocadillos de jamon (ham in a baguette), fruit, juices, coffee and drinks. South of Spain is known for having wonderful almonds and dates which you should be able to buy in the airport when you arrive. Cheese and crackers make a good snack. Try and buy some Manchego semi-curado (semi-cured) cheese once you're there and don't forget to pack a little cutting board and cheese knife. The crackers we see here are usually non-salted and come from England, called cream crackers, but a nice Spanish cracker is called TUC, which are salted and small like saltines. Tins of olives are readily available if you like them. Bring a can opener in case you come across tins that don't open with a tab pull. Hazlenuts, called avellanas, are also seen a lot in Spain. How would you know at that age if the baby has a tendency towards allergies? Well, if there is a family history of food allergies, you start more carefully. And whether there is or not you start with the low allergy foods introducing one at a time following the 4 day rule. And if a food does cause a reaction, you stop using it - it isn't a big deal. One of our children had a milk allergy when we introduced it as a baby so we stopped using it and after a few years tried again with no issues. Why didn't we wait to introduce egg white - a) her mother wanted to introduce it at about 11 months so she could know whether egg in the 1st birthday cake would be okay and b) Passover occurs right around her 1st birthday and there are recipes I use then that rely on egg white like sponge cake so we wanted to know whether that would be an issue. Everyone has to decide for themselves based partly on family history and how the first foods go. I think it is important for parents to have the information to make an informed decision so I reference the Wholesome Baby Food site which presents a balanced view IMO - neither alarmist or ignoring the issue. By the way, one baking tip - a few people have a cinnamon allergy. One of my son's friends does and I found out that it is usually Cassia cinnamon (what you find in the grocery store as cinnamon but it isn't true cinnamon - it is a related plant) that causes the allergy. True cinnamon (or Ceylon cinnamon) doesn't have the compound that is the usual allergy trigger - you can get it at Penzeys or The Spice House. That is what we introduced to our granddaughter first and it has allowed our son's friend to share foods that we make with cinnamon.

so it fits on just one side of it? i'll be getting a corner cab in the upcoming yr - so i don't have to get the LS put in if i can find a good / different use for it... can you tell me what your 'fold' doors measure - each one? my sister's measure 8" each... if it's about that, then i can go to her house and do better measuring for my container. thx so much!

Try this--it's what I always do with crusty Italian rolls. I leave them in the brown paper bag that the bakery uses for them, and I put the whole thing (rolls and brown paper bag) into a plastic grocery bag and tie it shut. It's the best of both worlds, I find. The brown bag absorbs any excess moisture, so your rolls don't get soggy, the plastic one keeps out the air that makes them go stale. I've found that the fresh rolls I buy at the local place (and I do mean fresh, you catch them, juggling the firey hot rolls, as they come off the conveyer belt from the oven--can't get fresher than that) fresh for days, but in brown paper, they last only one day.

Some of the specialty items may not have any preservatives and they will spoil much quicker.

I agree with Azzalea. Leaving them in the store paper bag, then placing in a sealed plastic bag works great for Italian bread and rolls. The paper lets the bread breathe and absorbs any moisture. And the plastic keeps it fresh. Of course only for a day or two. I try not to buy a lot of bread at once. Or freeze if I buy a lot. Like when my local store had Italian bread three loaves for a dollar.

I have one of those tupperware bread keepers I leave them in paper and store them in the sealed bread keeper. Most of the specialty breads with little to no preservative just do not keep well though. So you could try any container that seals well. I always put a paper towel in the bottom.

Sometimes putting them in the microwave for 15-20 seconds helps. I do that with dinner rolls all the time
