RECIPE: LionsHead Meatballs - Eating Well

Hi Ann ! It's definately close to the EW recipe, which I found at their site. This really is an outstanding dish...a very nice appetizer. We started off using the Boston lettuce to wrap them, but they just got in the way and we ditched them and just ate the meatballs with the sauce. I don't care for ginger, so i omitted it. Just saw it called for lemon zst and basil, but we didn't include those either. LionÂs Head Meatballs Makes 10 meatballs, for 5 main-dish or 10 appetizer servings Ingredients 1 cup "lite" coconut milk 2 ½ tablespoons reduced-sodium soy sauce 1 tablespoon curry powder 1 pound lean ground pork or beef ½ cup chopped scallions ¼ cup minced leek, white and pale green part only 2 tablespoons cornstarch 1 tablespoon all-purpose flour 1 tablespoon toasted sesame oil 1 tablespoon finely chopped fresh ginger 2 teaspoons seeded and minced fresh chile pepper ½ teaspoon salt ¼ teaspoon ground white pepper 2 teaspoons extra-virgin olive oil 1 medium head Boston or iceberg lettuce ¼ cup chopped fresh basil or Thai basil 1 tablespoon freshly grated lemon zest Instructions Combine coconut milk, soy sauce and curry powder in a large saucepan. Set aside. 2. Place pork (or beef), scallions, leek, cornstarch, flour, sesame oil, ginger, chile, salt and pepper in a large mixing bowl. Knead by hand until thoroughly combined and the mixture becomes sticky. Divide into 10 equal portions, about 1/4 cup each. Roll each portion into a ball. 3. Heat olive oil in a large nonstick skillet over medium heat, swirling to coat the sides. Add the meatballs and cook, turning occasionally, until browned on all sides, 8 to 10 minutes. Transfer to a plate lined with paper towels. 4. Bring the coconut-milk mixture to a boil over medium-high heat. Add the meatballs; cover, reduce heat to low and cook for 8 minutes. 5. Line a serving bowl with lettuce leaves. Arrange the meatballs on top. Garnish with basil and lemon zest. Serve hot with the coconut-milk sauce drizzled over the top or on the side for dipping. Tips Cover and refrigerate the meatball mixture (Step 2) for up to 2 days. LionÂs Head Meatballs Tips Cont. That's something they suggested - maybe the guy had done these tiles last, and had to mix up a last little bit of thinset and got it too watery. The top-right tile in the pic easily moved with very little touch (I poked them a bit to see if they were "set", since the rest of the areas were solid). The rest didn't budge, though, so I can't even guess what actually happened. :) Stopped by during lunch and all the tiles in that area were pulled down & they were prepping for re-application tomorrow. We have probably 25 - 30 linear feet of wall done in this tile, and this small area (about 4 sq ft) is the only part that didn't look great.

Afters everal holiday meals where the fruit salad was left in the basement refrigerator or the casserole in the oven, I make a list of what we are going to eat.... There was a time when the last pan of rolls was left in the oven but someone turned that oven off ( I have 2 ovens) and I didn't discover them for weeks when I went to use that oven and smoke came out while it was pre heating.....and then there was the christmas that a toddler turned the oven off about 10 minutes after the turkey went in. That was when I discovered that a turkey can be cooked at 450 and it's delicious!

So who do I have to knock off to meet the ace man, even if for a little target practice? [G]

And what an awesome Andy Warhol-ish picture of you rubbing elbows with the family. So Rocco's meatballs didn't make the cutÂÂthey're all winners in our circle.

Btw, Woodie and Rob may keep Tyler and Rocco. I want CarmeliniÂs and bad a$$ Tony BourdainÂs spicy meatballs delivered to me on a silver platter. Swear to Gad.

Thanks Maggie May for letting us tag along!

But if I'd known Anthony Swoondain was a choice, 'cause that is who I would've picked. AW man. Podunk Nashville, TN. I'll never rub elbows or any other body parts. Phooey.

Oddly, Giada also had balls...I do have a pic with her but bad enough I put a double chin pic with Tyler...no way I post my giant Irish head with Giada's teeth and boob package.

Ok, and I'll just say everyone was so nice .... except those top chef judges!!! ...omg Gail and Jeffrey...just sayin...is just a meataball not the nobel peace prize:)))
