Yes, I keep them in the fridge. After they are made (and chilled briefly) I wrap any leftovers individually in plastic wrap then put them in the fridge. I've never tried to freeze them since they never last more than a cuople of days around my house. LOL!

Thanks Alexa. That's what I ended up doing with them, (chilling briefly, then wrapping, then putting back in the fridge). They are excellant, and you're right I doubt if they will last long enough to freeze. I made about half the frosting recipe and still had some left over. Do you use the whole recipe? Seems like it would be an awful lot of frosting.

Well - yea I do make the whole recipe of frosting LOL! Usually I make them a little smaller (about golf ball size) and the frosting seems to get used up faster. That and my kids are usually hanging around with spoons in hand to grab a scoop when I am not watching LOL!

I haven't tried making these yet, but I've C&Ped the recipe to make with my grandsons next week. I see Cookie dough and Filling but I don't see "frosting"; am I missing part of the recipe?

Also, about how much dough is used for each "cookie" to get the 36 needed to make 18 pies?

And, about what is the expected diameter of each pie?

PS I've never had a Whoopie Pie in my life and have no idea what they're suppose to be...... I guess I had a deprived childhood. ;-)

Sorry the frosting is the same as the filling. I used about two tablespoons per cookie. They don't spread a whole lot when baking. They are probably about three inches in diameter. They puff up quite a bit.

Westelle, I've never actually eaten one, but I've seen them.

They are basically two soft cookies with a creamy white filling, sandwiched like an Oreo or that ilk. I'm betting I'd love them, which is why I'm not making any!

Whoopie pies are traditionally a soft dark chocolate cookie sandwich with white fluffy filling, but now they are branching off into pumpkin, lemon and other flavors.

All this talk of whoopie pies and no pictures, sheesh. (grin)

Here is a note that Alexa put at the bottom of the recipe she posted several years ago.

Note: I used rounded spoonfuls of batter rather then heaping and ended up with 26 completed cookie sandwiches. Also, I just added a shake of nutmeg to the filling. 1/2 teaspoon seemed like overkill to me.

And a pic...I think I got 24 complete pies when I made them, I guess it varies some. I used a small ice cream scoop so they were all the same size.

I had both the chocolate and the pumpkin on vacation in Sept. when we went out east. We had them both in Maine and in Pennsylvania. Although we liked the pumkpkin, We preferred the chocolate ones. They tasted a lot like those cakes called Suzie Q's that we used to buy when I was younger. I have found recipes that use marshmallow cream, but the ones we had did n't taste like they had marshmallow cream in them.

The recipe I have uses a small jar marshmallow creme (or fluff, depending where you live), 3/4 c shortening, 3/4 c conf. sugar and 1 tsp vanilla. Disgustingly bad w/ all that shortening, but one of my childhood favorites. I've not had them in years, but I don't think the filling really tastes like marshmallow.

Just thinking about it makes me want some. I'd have to figure a slightly healthier version of the filling though. I just quit smoking after 19 years, and I have gained a little weight, and am trying to keep it at bay ( I really don't want to have to buy new pants!). I do need my daily sweets though...

Hmmm, since this is my last day at home before starting my new job, maybe I should get my butt out in the kitchen and make these suckers. Once I start my job, I will be back on Weight Watchers, so I better stuff my cravings before then.

The grandsons (7 & 3) and I made these this past Wednesday. Not too bad a project with so much help.

The first day we all thought they were way too sweet, but agreed that they tasted much better after sitting overnight.
