New Recipe Review - October 2011

If I'm not mistaken we don't have an October thread yet, so here goes. I didn't make this entire recipe. It really appealed to me but I wasn't sure my wife would like it so I just gave the shrimp alone a trial run. I was right on both counts: They were delicious but my wife wouldn't like it. I can only imagine how good it would be with the chutney. I hope someone else tries it for me!

Grilled Shrimp Skewers with Cilantro-Mint Chutney

Level: Easy

Serves: 4 servings

Ingredients

Shrimp:

2 tablespoons red chile powder, such as ancho or New Mexican red

2 tablespoons garam marsala

2 tablespoons canola oil

Juice of 2 lemons

Kosher salt and freshly ground black pepper

1 pound large shrimp (21/24), shelled, deveined, tails left on and patted dry

Cilantro-Mint Chutney:

1 cup tightly packed fresh cilantro leaves

1/2 cup tightly packed fresh mint leaves

4 scallions, chopped

1 Thai chile, finely minced

Zest of 1 lime

1 to 2 tablespoons honey

1 to 2 tablespoons canola oil

Kosher salt and freshly ground black pepper

Special equipment: 6-inch skewers, soaked in cold water for at least 1 hour

Directions

For the shrimp: Whisk together the chile powder, garam marsala, canola oil, lemon juice in a medium bowl and season with salt and pepper. Add the shrimp and toss to coat in the mixture. Let marinate for 15 minutes.

Prepare a charcoal grill for direct grilling, high heat.

For the chutney: Combine the cilantro, mint, scallions, chile, 1 tablespoon each honey and canola oil, lime zest, and some salt and pepper in a food processor. Process to make a smooth paste. Taste; add honey, if desired, or more oil to make a sauce that will cling to the shrimp.

Thread 2 skewers through 3 shrimp so that the shrimp lay flat. Sprinkle with salt and pepper. Grill until golden brown and slightly charred on both sides and just cooked through, about 1 1/2 minutes per side.

Remove the shrimp to a platter and serve with the cilantro-mint chutney.

Thanks for starting October's thread, FOAS.

Every month, or so, we take something down to the guys at the firehouse in the morning. It's a volunteer fire department & only a block from our house. They've helped us out several times with flooding and when I've needed emergency medical assistance.

I saw this recipe in the new King Arthur catalog & immediately knew it would be a hit...and it was!

Maple-Bacon Biscuit Bake

These are like a maple-bacon "sticky bun". Need I say more?!

Syrup:

1/2 Pound Bacon, cooked until medium brown
1/3 Cup Brown Sugar
1/4 Cup AP Flour
1/4 Cup Real Maple Syrup
2 Tablespoons Melted Butter

Biscuits:

2 Cups AP Flour
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/4 Cup Cold Butter
1 Cup Cold Milk or Buttermilk

Preheat the oven to 475 degrees. Lightly grease an 8"x8" square pan or a 9" round pan.

To Make Syrup:

Chop the cooked bacon into 1/2" pieces. Combine the bacon with the remaining syrup ingredients, stirring until well combined. Spread in the bottom of the prepared pan.

For the Biscuits:

Whisk the dry ingredients together in a bowl. Work in the butter until the mixture is crumbly with some larger pieces of butter remaining. Add the milk or buttermilk, stirring to make a sticky dough.

Drop the dough in heaping tablespoonfuls atop the syrup in the pan.

Bake the biscuits for 10 minutes. Turn the oven off, and leave them in the oven for an additional 5-10 minutes, until they're golden brown. (I've never cooked biscuits using this baking method before but they came out perfect.)

Remove the biscuits from the oven, and immediately turn the pan over onto a serving plate. Lift off the pan, and scrape any syrup left in the pan onto the biscuits. Pull biscuits apart to serve.

Yield: 16 small biscuits.

I baked in a round cake pan so I could turn them out onto a paper plate since we were transporting them to the firehouse. We made 5 pans of these rolls and, as expected, they were snarfed down in seconds!

I made a new recipe yesterday to take to my Garden Club meeting. Strawberry-Cheesecake Muffins and it was a hit so here is the recipe. I made a double batch and had some batter left over. Also when you put the cream cheese part in just use 1 tsp not the Tablespoon in the recipe!!!
Ingredients

Strawberry-Cheesecake Muffins

1 package (3 ounces) cream cheese, softened
1/4 cup confectioners' sugar
2-1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
1-1/4 cups milk
1/2 cup packed brown sugar
1/3 cup butter, melted
1 teaspoon grated lemon peel
1/4 teaspoon almond extract
1/4 cup strawberry jam

Directions

In a small bowl, beat the cream cheese and confectioners� sugar until smooth; set aside. In a large bowl, combine the flour, baking powder and salt. In another small bowl, whisk the egg, milk, brown sugar, butter, lemon peel and almond extract. Stir into dry ingredients just until moistened.
Spoon half of the batter into greased muffin cups. Top each with 1 tablespoon cream cheese mixture and 1 teaspoon jam. Top with remaining batter.
Bake at 375� for 18-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

After being intrigued with stinky's idea of an Asian meatloaf, I looked up a recipe, and the below this weekend. Prep time is not 15 minutes, it's more like 30. It serves 12, not 6. I couldn't puree as the equipment had gone caput. I loved the way this tasted. Both the sauce (which is completely necessary, a foil against the sweetness of the loaf) and the meatloaf. It filled two meatloaf pans. Will I make it again? Doubtful, unless I can cut down the prep time. Both the loaf and the sauce are very labor intensive. For the amount of time, all you get is meatloaf. Not that that is a bad thing, but it sure isn't boeuf bourginon. We had Nita's Rigatoni and Sausage last night. I doubled everything but the pasta, as per her notes. It was pretty good. Made a lot. I did catch DH sneaking a can of tomato sauce into the leftovers. Gotta have red sauce with pasta. LOL From NitaAZ Rigatoni and Sausage Penne Rigatoni 1 lb. 1-pound Italian sausage without casing 1 red bell pepper, diced 2 cups onion, finely chopped 1 tablespoon chopped garlic 1 teaspoon Basil salt and pepper Ã¯Â¿Â½ cup olive oil 2 large bunches spinach or one large bag Boil water, add some salt and Pasta and boil for 15 minutes until al dente, drain and put back in pan. Brown sausage, remove to a bowl. Add some oil to pan and cook onion until glazed. Add in red pepper, garlic, Basil, salt and pepper and heat through for a few minutes. Add meat back to pan and reheat. Dump all into pasta and add about Ã¯Â¿Â½ cup olive oil; stir. Throw in fresh spinach and stir around until it is wilted but not too wilted. Serve with freshly grated Parmesan cheese. A salad goes great with this meal. If you want to spice it up some you can use hot sausage or a mixture of both hot and mild. You can also add some red pepper flakes for some heat. * We like it best if you double everything and only use the one-pound of pasta. I donÃ¯Â¿Â½t do the hot and spicy.

Well, my first time posting this I had everything about done and my browser shut down for no apparent reason other than I was installing the latest Java update, which they bug me about nearly every day. I knew there was a reason I was ignoring it!! I'm really determined to post these recipes though, because they were really good and I think I mentioned that I would like to have a larger repertoire of Indian recipes. I like the idea of Indian food but am rarely pleased with my execution of it. I'm usually not crazy about the mix of spices, but these two dishes were so good I couldn't stop eating them. Easy peasy too, so give them a try if you'd like to try something Indian. However, be forewarned they are hard core vegegarian. The best BF could say about them is he didn't dislike them! Masoor Dal (Spiced Red Lentils), from an unkown blogger. Check out the link to the blog, the photos and description are what made this worthwhile. Prep Time: 10 mins Cook Time: 30 mins Serves: 6 Ingredients 1/2 teaspoon turmeric 1 teaspoon coriander powder 1 teaspoon cumin powder 1 teaspoon paprika (can use chili power for more kick) extra virgin olive oil 5 cloves garlic, grated 1 inch piece ginger, grated 1 small onion, diced 1 jalapeno pepper, seeds removed and diced 1 14.5 ounce can Petite Cut tomatoes, liquid drained 2 cups masoor dal (red lentils), rinsed 5 cups water 1/2 cup cilantro leaves, chopped salt and pepper to taste Directions Measure out the spices into a small bowl and set aside. In a large pot or dutch oven on medium heat, add olive oil. When the oil starts bubbling stir in spices and cook for a minute. Add garlic and ginger and cook for another minute. Add onions and peppers and stir until the onions starts to soften. Add in tomatoes and cook until the tomatoes start to breakdown and get pulpy. Add in lentils and water and bring to boil. Also, I didn't drain the chopped tomatoes, I used the juice as part of the liquid to cook the lentils, but added towards the end, as acids make bean skins tough. Easily cut in half but I forgot to do that at the outset. Ethiopian Cabbage Dish by stamarex. I made it Indian by adding garam masala Ingredients 1/2 cup olive oil (I only used 1/8 cup in the crockpot) 4 carrots, thinly sliced 1 onion, thinly sliced 1 teaspoon sea salt 1/2 teaspoon ground black pepper 1 teaspoon ground cumin 1/2 teaspoon ground turmeric 1/2 head cabbage, shredded (I diced) 5 potatoes, peeled and cut into 1-inch cubes (I used chunks of red potatoes with the skins mostly on) I added 1/4 tsp. garam malsa to the mix. Directions Heat the olive oil in a skillet over medium heat. Cook the carrots and onion in the hot oil about 5 minutes. Stir in the salt, pepper, cumin, turmeric, and cabbage and cook another 15 to 20 minutes. Add the potatoes; cover. Reduce heat to medium-low and cook until potatoes are soft, 20 to 30 minutes. Lpink's notes: I made this in the crockpot. I layered the veggies with the spices, except I didn't use salt and pepper I used seasoned salt, which had garlic, onion and lemon in it too. I used much less oil and mixed it with an equal amount of veg. broth at the bottom of the crockpot. I had to sprinkle a little more broth over it as it got closer to being done, so I used maybe 1/3 cup of broth overall. I put this in the crockpot initially on low, but turned it up afte a while since I only had 3-4 hours to cook it.

Jenn that salad sounds DELISH! My mom gave me a bag of walunts and I already had two bags in the freezer, so I'm collecting walnut recipes, lol! Speaking of walnuts, the salad I made for Thanksgiving was delicious. I didn't follow it to a T though. But I love beet salads and this one is lower fat than my traditional beet salad which has goat or feta cheese in the mix. BTW, this was also great mixed in with some homegrown cabbage the next day as a kind of coleslaw. Beet and Walnut Salad - Rachel Ray 1/2 cup chopped walnuts 1 heart romaine lettuce, chopped (I used a gourmet lettuce mix, including red leaf, mache, romaine and frise, my favorite. Also added chopped cabbage the next day.) 1 can sliced beets (14 ounces), drained and chopped (I left out this time, subbed a red pepper for color) 4 radishes, chopped 1/2 small red onion, chopped 2 ribs celery, chopped (I subbed two pickling cucumbers, very yum!) 2 tablespoons black cherry, seedless raspberry or apricot preserves (I used blackberry) 2 tablespoons vinegar, eyeball it 1 teaspoon poppy seeds, (optional, but makes the dish, IMHO) 3 tablespoons extra-virgin olive oil (EVOO) Salt and pepper Toast the nuts in a small pan over medium heat, 3-4 minutes, then let them cool. Combine chopped lettuce, beets, radishes, onion, celery and toasted walnuts in a shallow bowl. Place the preserves into a small bowl and whisk vinegar into it. Add poppy seeds to dressing if you are using them. Whisk EVOO into the dressing and season it with salt and pepper. Dress salad and toss to coat evenly then adjust salt and pepper to your taste. Lpink's notes: I marinated the chopped veggies in the dressing for a couple of hours before putting the stuff on the lettuce. Also, it still tasted kinds bland to me so I added 1 or 2 TBLSP raspberry balsamic vinegar. I can't remember if it was 1 or 2, but it made the salad, that's for sure. Could add more of the preserves and regular old balsamic vinegar if you don't have the snazzy raspberry kind. ________________________________________________________ This dressing was a great alternative to the usual sagey kind, I may make it every year. Wild Rice and Goat Cheese Dressing Recipe courtesy Bobby Flay Prep Time: 25 min Inactive Time and Cook Time: 1 hr 45 min Serves: 6 to 8 servings (Definitely 8!) Ingredients 2 cups wild rice 6 cups water 3/4 pound Spanish-style chorizo, diced, see Cook's note* 5 tablespoons unsalted butter, plus extra for greasing the dish 1 cup Spanish onion, diced 1/2 cup diced carrots (BF didn't want carrots so I used all celery, but it would have been great with carrots) 1/2 cup diced celery 3 cloves garlic, finely chopped 2 tablespoons fresh thyme, chopped (I used 1 1/2 tsp. dried thyme) 1 (day-old) loaf country-style bread, cubed 2 to 4 cups homemade chicken stock (Use the lesser amount) 12 ounces goat cheese (I used maybe 6 oz.) 1/2 cup fresh flat-leaf parsley, chopped (I used 2 heaping TBLSP dried parsley) Freshly ground black pepper Kosher salt Directions: Combine the rice, water and 1 tablespoon of salt in a large saucepan, bring to a boil over high heat and cook until the grains open all the way, about 1 hour, 15 minutes to 1 hour, 30 minutes. The rice should be very cooked (not even the slightest chewy). Drain well, place in a large bowl and set aside. (I cooked the rice in vegetable bouillon, saved the leftover broth for the dressing. I did not add salt and 1 TBLSP seems like a lot, I would never put that much salt in something! I would use maybe 1 tsp.!) Preheat the oven to 375 degrees F. Heat the butter in a large high-sided saute pan over medium-high heat. Add the chorizo, onions, carrots and celery and cook until soft. Add the garlic and thyme and cook for 1 minute. Add the onion mixture, bread, goat cheese, parsley and 2 cups of the chicken stock to the rice. Mix to combine. The mixture should be quite wet; add more stock, if needed. Season with salt and pepper to taste. Transfer the mixture to a large buttered baking dish and bake, uncovered, until heated through and golden brown, about 30 minutes. Remove from the oven and let rest 10 minutes before serving. *Cook's note: We recommend to order from D'Artagnan because it's not raw or totally cured and cooked...it's kind of in between. Lpink's notes: I didn't use chorizo, so I don't know how good it would be with that spicy sausage. I had some maple flavored vegetarian sausage I wanted to use up, and some mild natural pork sausage links. The kind of sausage you use is the key flavor ingredient here, so if you don't think you'll like chorizo flavored dressing, use another kind you like. Also, I think all that goat cheese is overkill, definately not needed or use way less. Lastly, I added about a cup of chopped and sauteed gourmet mushrooms because I thought the recipe called for them when I got them at the store. They were great in the recipe!

I'm a lurker but this is so good I have to share it.

Cauliflower Caponata - Tribune, Sep. 4, 2011 Sunday

1 med. head cauliflower, florets separated, stems diced or sliced or used elsewhere
3-4 Tb. olive oil
3-4 cloves garlic, chopped
1/4 - 1/2 tsp. tumeric
1/8 - 1/4 tsp. cumin
2 Tb. sugar
1/3 c. vinegar (not balsamic)
2 tsp. fresh thyme leaves
1-2 Tb. capers
1 Tb. caper brine
2 Tb. golden raisins, plumped
pinch salt
2 Tb. coarsely chopped toasted almonds (use 1/4 c.)

Preheat oven to 450 F.
[Toss cauliflower with oil; turn onto foil-lined cookie sheet; roast 10 min. stir; roast 10 min. more]
Brown cauliflower in lg. skillet until golden. Sprinkle with tumeric, cumin and 1/2 the garlic as it cooks.
When still crunchy but cooked, sprinkle with sugar, remaining garlic, vinegar & thyme.
Lower heat, cook, stirring, until vinegar lifts & mellows, about 3 min.
Remove from heat; add capers, brine, raisins & salt.
Let cool. Sprinle with almonds before serving.

note: mix in almonds with capers

I made these last week from Cook's Illustrated. At first they were terribly sweet. However the next day they had mellowed and were absolutely delicious!

Ultimate Turtle Brownies

Ingredients

Caramel:

1/4heavy cream plus 2 additional tablespoons
1/4 teaspoon table salt
1/4 cup water
2 tablespoons light corn syrup
1-1/4 cups sugar
2 tablespoons unsalted butter
1 teaspoon vanilla extract

Brownies:

8 tablespoons unsalted butter (1 stick), cut into 8 pieces
4 ounces bittersweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
3/4 cup unbleached all-purpose flour
1/2 teaspoon baking powder
2 large eggs, room temperature
1 cup sugar
1/4 teaspoon table salt
2/3 cup chopped pecans
1/3 cup semisweet chocolate chips, optional (I added this and will again next time)

Garnish:

25 pecan halves, toasted

TO MAKE THE CARAMEL: Combine cream and salt in small bowl; stir well to dissolve salt. Combine water and corn syrup in heavy-bottomed 2- to 3-quart saucepan; pour sugar into center of saucepan, taking care not to let sugar granules touch sides of pan. Gently stir with clean spatula to moisten sugar thoroughly. Cover and bring to boil over medium-high heat; cook, covered and without stirring, until sugar is completely dissolved and liquid is clear, 3 to 5 -minutes. Uncover and continue to cook, without stirring, until bubbles show faint golden color, 3 to 5 minutes more. Reduce heat to medium-low. Continue to cook (swirling occasionally) until caramel is light amber and registers about 360 degrees on candy or instant-read thermometer, 1 to 3 minutes longer. Remove saucepan from heat and carefully add cream to center of pan; stir with whisk or spatula (mixture will bubble and steam vigorously) until cream is fully incorporated and bubbling subsides. Stir in butter and vanilla until combined; transfer caramel to microwaveable measuring cup or bowl and set aside.

TO MAKE THE BROWNIES: Adjust oven rack to lower-middle position; heat oven to 325 degrees. Lightly spray 9-inch-square baking pan with nonstick cooking spray. Cut 14-inch length extra-wide heavy-duty foil; fold cut edges back to form 8 1/2-inch width. With folded sides face down, fit foil securely into bottom and up sides of baking pan, allowing excess to overhang pan sides. Spray foil with cooking spray.

Melt butter and bittersweet and unsweetened chocolates in medium heatproof bowl set over saucepan of barely simmering water, stirring occasionally, until smooth and combined; set aside to cool slightly. Meanwhile, whisk together flour and baking powder in small bowl; set aside. When chocolate has cooled slightly, whisk eggs in large bowl to combine; add sugar, salt, and vanilla and whisk until incorporated. Add melted chocolate mixture to egg mixture; whisk until homogenous. Add flour mixture; stir with rubber spatula until almost combined. Add chopped pecans and chocolate chips (if using); mix until incorporated and no flour streaks remain.

Following illustrations below, distribute half of brownie batter in prepared baking pan, spreading in even layer. Drizzle scant 1/4 cup caramel over batter. Drop remaining batter in large mounds over caramel layer; spread evenly and into corners of pan with rubber spatula. Drizzle additional scant 1/4 cup caramel over top. Using tip of butter knife, swirl caramel and batter. Bake brownies until toothpick inserted into center comes out with only a few moist crumbs attached, 35 to 40 minutes. Cool brownies in pan on wire rack to room temperature, about 1 1/2 hours.

Heat remaining caramel (you should have about 3/4 cup) in microwave until warm and pourable but still thick (do not boil), 45 to 60 seconds, stirring once or twice; pour caramel over brownies. Using spatula, spread caramel to cover surface. Refrigerate brownies, uncovered, at least 2 hours.

Using foil extensions, lift brownies from baking pan, loosening sides with paring knife, if needed. Peel away and discard foil. Using chef�s knife, cut brownies into 25 evenly sized squares. Press a pecan half onto surface of each brownie. Serve chilled or at room temperature. (I like to put them in the microwave for 20-30 seconds and eat them warm- the caramel gets nice and gooey and it�s so good!).

The use of raisins and molasses intrigued me, and I figured this would make a nice dark stew. I was right! We declared this a keeper.

Slow-Cooker Beef and Mushroom Stew (Country Cooking)
Raisins and molasses are the secret ingredients that gives this stew its richness. Adding the mushrooms for the last hour of cooking makes them as tender as the beef.

3 tbsp flour
2 lb boneless beef, cut in 1-2" cubes
2 tbsp cooking oil
4 medium carrots, cut in 1/2" slices
2 medium onions, chopped
1/4 cup cider vinegar
1/4 cup molasses
14 1/2 can diced tomatoes
salt and pepper
1/4 tsp ground ginger
12 oz fresh mushrooms, halved
1/4 cup raisins

Place flour and some salt and pepper in a plastic bag. Dredge beef, shaking off excess flour. Brown in hot oil in a Dutch oven, in batches if necessary.

Place carrots and onions in 4-quart slow cooker; add browned beef.

In medium bowl combine cider vinegar, molasses, tomatoes, salt and pepper and ginger. (I used a bit of cider vinegar to deglaze the dutch oven). Pour some of the deglazed liquid in with the tomato mixture and pour over meat and vegetables.

Cook on Low 8 hours or on High 4 hours.

Add raisins and mushrooms and cook on High 1 hour longer. Serve over noodles or mashed potatoes.

Because this has no potatoes, it freezes very well. I'd like to double it next time, and use a 28-oz can tomatoes.

I don't have a new recipe to share but so far the new recipe list sounds wonderful. I will have to make the mint/cilantro chutney even if I don't make the shrimp. The maple/bacon combo is calling me as well. There is a cafe here that sells a maple/bacon/pecan scone I really like.

Had some friends over last night for our annual pumpkin carving and while we ordered pizza from a local eatery for the main course I also did two salads. The fruit salad was a huge hit so I will share this very simple recipe. My only change was to add about one tablespoon honey to the yogurt sauce. Thanks.

We were participating in a 'progressive brunch' yesterday (our part was joanm's waffles of insane greatness) and one family served this Garden Vegetable Crustless Quiche from Cooking Light. I normally skip over recipes that use 'low fat' subs and 'egg substitute' but this one was sooooo delicious and a keeper!

Garden Vegetable Crustless Quiche

The season's best vegetables and a variety of cheeses make this vegetable quiche a crowd-pleasing and healthy meal that can be assembled the night before, refrigerated and cooked just prior to serving.

Garden Vegetable Crustless Quiche

YIELD: 10 servings
COURSE: Breakfast/Brunch, Main Dishes

Ingredients

1 1/2 cups egg substitute
3 large eggs
1 1/2 cups (6 ounces) shredded reduced-fat extrasharp cheddar cheese, divided
1 1/2 cups (6 ounces) shredded reduced-fat Monterey Jack cheese, divided
1/2 cup 1% low-fat milk
1/2 cup all-purpose flour (about 2 1/4 ounces)
1 teaspoon baking powder
1/2 teaspoon salt
1 (16-ounce) carton fat-free cottage cheese
Cooking spray
4 cups sliced zucchini (about 4)
2 cups diced potato with onion (such as Simply Potatoes)
1 cup finely chopped green bell pepper (about 1)
1 (8-ounce) package presliced mushrooms
1/2 cup chopped fresh parsley
2 tomatoes, thinly sliced

Preparation

Preheat oven to 400�.

Beat egg substitute and eggs in a large bowl until fluffy. Add 3/4 cup cheddar cheese, 3/4 cup Jack cheese, milk, flour, baking powder, salt, and cottage cheese.

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add zucchini and the next 3 ingredients (through mushrooms); saut� for 5 minutes or until tender. Add the zucchini mixture and parsley to egg mixture. Pour mixture into a 3-quart casserole dish coated with cooking spray. Top with the remaining 3/4 cup cheddar cheese and 3/4 cup Jack cheese. Arrange tomato slices over cheese. Bake at 400� for 15 minutes. Reduce oven temperature to 350� (do not remove dish from oven), and bake for 35 minutes or until lightly browned and set.

Note: Substitute corn or spinach for some of the vegetables, if you wish.

I made this today from Simply Recipes to take to the field. My crew really enjoyed it. I served it with green chile chicken casserole, rice and salad.

Spicy, Citrusy Black Beans

Ingredients
4 cups dried black beans
2 1/2 quarts (10 cups) water
2-3 fresh sprigs oregano, or 1 Tbsp dried
3 bay leaves
6 small or 3 large sage leaves
2 teaspoons salt
4 Tbsp olive oil
2 yellow onions, chopped
2 chopped peppers, bell pepper, Anaheim, or jalapeño (your choice, depending on taste for heat), seeds, stems and ribs discarded
6 cloves crushed garlic
2 Tbsp Ancho red chili sauce, or chili powder or Tabasco to taste*
1-2 teaspoons of puréed chipotle in adobo, chipotle Tabasco, or chipotle powder (to taste)
1 Tbsp cumin, (crushed whole toasted cumin seed is best, if possible)
3 Tbsp frozen orange juice concentrate or 1/2 cup fresh orange juice
Juice of 1 lime
2 Tbsp rice wine vinegar
Chopped fresh cilantro for garnish
If using prepared chili sauce or chili powder, and if cooking gluten-free, make sure to purchase gluten-free products.

Method
1 Prepare the beans. Rinse and sort the beans, discarding any stones or shriveled beans. You can soak the beans overnight in cold water (cover with several inches of water) OR pour enough boiling water over them to cover by a few inches and soak them for an hour OR skip the pre-soaking step. Soaking will speed up the cooking process. If you soak, discard the soaking liquid after soaking.

2 Add beans to a large pot with 2 1/2 quarts (10 cups) of water. Add oregano, bay leaves, and sage. Bring the beans to a boil and reduce heat to a simmer. Cook until the beans are soft, but not quite done. The time will vary depending on how large, dry, or old your beans are, and if you have pre-soaked them, from anywhere from 30 minutes to an hour and a half.

3 While the beans are cooking, sauté onions and peppers in olive oil until soft. Add chili sauce, chili powder, and/or chili purée, cumin, and garlic. Sauté until spices are fragrant.

4 Fish out and discard the bay leaves, stems of oregano, and sage leaves from the pot of beans. Remove, but reserve, extra cooking liquid until there is about 1/2-inch of liquid above beans.

5 Add the onion mixture and salt to the pot of beans. Cook another hour or so until thickened. Add reserved liquid if needed.

6 Add half of the orange juice, and simmer. Adjust chili heat at this point ��" you may or may not want to add more of your chili paste. Just before serving, add remaining orange juice, lime juice, and vinegar. Salt to taste. Garnish with chopped fresh cilantro.

Serve with corn tortillas, and/or rice, sour cream, and salsa.
