I love this. I made it wrong the first time and have been making it that way ever since - LOL.

Apple Dapple Cake

{{!gwi}}

ï· 1 1/2 cups vegetable oil
ï· 2 cups granulated sugar
ï· 3 eggs
ï· 3 cups all-purpose flour *
ï· 1 teaspoon salt
ï· 2 teaspoons vanilla
ï· 1 1/2 teaspoons baking soda
ï· 3 cups finely chopped tart apples
ï· 1 package (6 ounces) butterscotch chips
ï· 1 1/2 cups chopped walnuts
Topping
ï· 1 cup brown sugar
ï· 1 stick butter (4 ounces)
ï· 1/4 cup milk
ï· 1 teaspoon vanilla
Combine oil and sugar; mix well. Stir in eggs then beat until smooth and creamy. Add flour, salt, and soda. Stir in remaining ingredients, blending well. Pour batter into a 10-inch Bundt pan or tube pan; bake at 350° for about 1 hour and 10 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Combine topping ingredients in a saucepan; cook for 3 to 5 minutes, until sugar is dissolved and mixture is smooth. Pour warm mixture over warm cake while it's still in the pan. Cool cake thoroughly before removing from pan.
Note: I didn't read the recipe all the way through and thought the "topping" was a glaze. So I didn't realize you poured it over the cake while in the pan and still warm. I went to make the "glaze" after the cake had cooled. I cooked it down to a caramel and poured it over the cake. It was veru good. We spooned more on after we cut it, too.

Today this is my favorite....but tomorrow it may be pie!

Like Linda C, I have a favourite of the day: Apple and Pear Betty.
I could post an exact recipe, but I don't think I will bother as it's so easy to make without one. You will need:

Equal amounts of ripe cooking apples and ripe pears
cornflakes
sugar
nutmeg, 1/2 to 1 tsp for every 1/2 cup of sugar
a dash of salt
butter

Peel and core the fruit and cut into small bite-sized pieces.

Arrange a layer of fruit pieces in a well buttered deep oven proof dish. Mix together sugar, nutmeg and salt and sprinkle some on top of the fruit. Repeat with lightly crushed cornflakes. Dot with butter. Repeat until the dish is full, ending with butter. Bake at about 350°F until the fruit pieces are soft. Serve with whipped cream, vanilla ice cream or vanilla sauce. Very good cold.

A week or so ago I sliced a large apple in two, cored it, lightly buttered the cut-side, and laid the cut-side on the grill. When there were "marks" on the cut-side I turned the apple-halves over and let them finish baking while I made the steaks.

The grilling seemed to bring out the natural sweetness and also left a smokey flavor. A really good, healthy dessert.

Here is one that combines two of my Fall favorites ... Butternut Squash and Apples :)

1 large butternut squash, peeled and cut into 1 inch chunks
7 Jonathan apples, peeled and sliced

Topping:
1 cup brown sugar
4 Tbsp. flour
1/2 cup butter, softened
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 cup pecans, chopped

Cover the bottom of a large baking dish with squash and top with apples. Sprinkle the topping over the squash and apples and bake in a 350 degree oven for 45-50 minutes or until squash is tender

Wow! These all sound so good. Guess I better start peeling! Thanks.
