Orange Spiced Meade

I wanted to shout out and thank Kathy for sharing with me her recipe for Orange Spiced Meade.

Initially, after the first fermentation and bottling, the stuff tasted really nasty LOL and I thought that I had really messed up but now, 10 months later, we opened one bottle and WOW, the color was heavenly and so was the taste. and what a timing, we are going to get some honey today, so we will get more than we initially thought and make some more of this godly nectar, now I understand why it is sometime called that :)

A good source for mead techniques is 'The Compleat Meadmaker' by Ken Schramm. Also, homebrewtalk.com has a mead making forum.

The ingredients seem about right. However, if you plan to make this and there is a winemaking or homebrew supply store nearby, I would bet anything that the resultant product would be improved by using a proper wine yeast rather than the bread yeast called for in the recipe. You can select yeast strains by how much alcohol tolerance they have, how much residual sweetness is left, etc. One major yeast lab, Wyeast, has strains for both sweet mead and dry mead.

Still, if you're happy with the results, go for it.

Have you checked the Modern Roses 12 database to see if there is a Lemon Spice sport of this color? That's really the place to check to be sure. Go to the "Search" function, select "Seed Parent" and "Contains" and enter Lemon Spice. In the meantime, be sure to mark the cane and try budding some new plants from it to see if they come true to the new color. If they do, you may have a real winner.

Reminds me of a scene from Sleepless in Seattle where Tom Hanks gets introduced to the realities of modern-day dating. "What's Tiramisu?... you'll find out" Thanks for the Pumpkin version, FlowerLady: a sweet treat to enjoy while watching a sweet movie. Nell's Brownies sound like they'd be great with the cream cheese frosting, too, if one has the patience to make it. Similar to what's traditional on carrot cake? Maybe we make little almond paste pumpkins instead of carrots to decorate. Ana, who uses oven-roasted, home-grown, butternut squash, cooled and mashed, in place of pumpkin with good results. (A field-cured squash keeps for ~ 3 months at dry room temp in our northern climate. Like under my bed. Good company for the dust bunnies!)

This iris was doomed, apparently. I came home tonight and found the flower in the kitchen sink, the stalk still in its vase on the counter. I can't blame the cats as they were outside. Weird. Well, I hope it does well next year, complete with that great scent. Thanks for your comments!

What to do with a gallon of honey?

Since honey is the only food that will not spoil (although it will "sugar" eventually), I wouldn't worry about storage, I'd just use it. I use at least a couple of cups a week making honey wheat bread, my favorite recipe takes 1/2 cup for 2 loaves. Sol's Honey Rolls are my usual "go to" white bread recipe and also takes 1/2 cup (I think). I make Jessica's Lime Chipotle marinade which takes 1/2 cup and I make a double batch, using up a cup. Of course, there's always baklava, which takes a couple of cups. If I were you, though, I think I'd do as LindaC suggests, portion it out into quart (or even pint) jars and use it up as needed. That way if/when it does "sugar", you can just put the jar in a sink full of warm water or into the microwave and melt it. Voila, liquid honey, ready for use again. Annie

Thanks Arley for the link. We are wine makers as well, so I am very familiar with wine yeast. I was very surprised that the regular bread yeast not only worked but did such a wonderful job.
I hope that Kathy will see this post and maybe comment how hers came out :)

Awesome! I'm so glad it worked out for you...isn't it easy? I LOVE this wine! I just gave a bottle that I made last year to a friend. It gets better with age, trust me.

In most cases, specific wine yeast is used, EXCEPT this recipe; that's why it's so darn easy!

Try this recipe with the wine, it is FABULOUS!

Date Orange Nut Spread

1 Â½ cups chopped dates
Â½ cup raisins
Â½ cup sweet white wine (I used my homemade Orange Spiced Meade)

Cover and chill dates, raisins, and white wine for 8 hours.

Â½ tsp grated orange rind
1 large, naval orange, peeled and cut into chunks
1/3 cup honey
Â½ cup almonds, toasted
Â½ cup walnuts, toasted
Â½ tsp ground cinnamon
Â¼ tsp ground cardamom
Process marinated date mixture in a food processor with the orange rind, orange, honey, nuts, and spices to a texture you like (I like mine with a few chunks). Add more wine if needed in processing.

Serve with goat or gorgonzola cheese on bread crisps.
