Help rescue my pumpkin bread!

My son requested some pumpkin bread for his visit home from college. I whipped it up & baked 2 nice loaves. They didn't rise as much as I expected, but the real problem showed up when I tasted it. I forgot the sugar. Really doesn't taste that bad, just sugarless. I made another batch up. I really should not have been baking yesterday. I had those loaves in the oven a couple of minutes when I realized I left out the pumpkin :) I yanked the bread out of the oven & added the pumpkin, & they turned out surprisingly well.

I hate to waste the 1st 2 loaves. Any ideas for something I can do with them? I thought maybe some type of pumpkin trifle? Or is there such a thing as pumpkin bread pudding? That actually seems rather appealing to me, it is rather cool here & that just seems right. I've never made a bread pudding that I really liked, but I've had it that was good. Seems like someone had a recipe that everyone raved about, maybe this could work? Or any other ideas?
