Boxed cake mix and pumpkin! Photo!

Wow, I had a lot of success with this! Here is the recipe as I doctored it--it made 19 muffins (we ate two of them before I could take a pix):

Easy Pumpkin Spice Muffins

1 box white cake mix (I had Pillsbury)
2 eggs
1/4 C oil
one can of pumpkin (not pumpkin pie filling--I had a large can of pumpkin which was 29 ounces, so I used half of it, which was about 15 oz of pumpkin)
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
brown sugar

Put cake mix in a mixing bowl.

Add the eggs and oil and mix to blend with an electric mixer.
Add the pumpkin & spices and vanilla, and blend.

Use a scoop and fill cupcake papers.
Top with brown sugar.

Bake at 350 degrees for 20 to 22 minutes.

They look perfect.

I mean the ones in the picture. Except the two you ate, which may not be perfect. I can't tell.

sooz, you have them packaged up so nicely, are you having a bake sale or do you actually think they'll last long enough to go into the freezer? (grin)

I know muffins freeze well, but they just don't last that long here and it's far too easy to take one from the freezer and thaw it in the microwave. Soon there are none in the freezer. Again....

If I'm making the basic cake (white, yellow, chocolate, etc.) I always sift the powder mix first. I use applesauce instead of oil and I always add vanilla no matter what flavor cake I'm making. If I use the whole egg (I usually use the whites only), I beat the whites separately from the yolk before adding anything else. I've been told that my cakes have the texture of wedding cakes. Now as for variations I have added peanut butter and chocolate (a personal favorite) to a white cake, sour cream to a chocolate cake, strawberries to a white cake (omit water) and I am currently making pumpkin bars from a spice cake mix (which led me to your site because I was looking for a way to turn a white cake into a spice cake so I can double it). Use four eggs instead of three, add a can of pumpkin and a quarter of a cup of applesauce (or oil if you prefer), omit water. Bake as directed on the box.

aprile421, Yes, dump cake is made with cake mix, pie filling, canned crushed pineapple, and nuts like almonds or pecans, which are optional. sooz, I have a cobbler recipe that might be of some use to you. Express Fruit Cobbler 2 20 oz. cans fruit pie filling 1/2 cup (1 stick) butter, softened 1 18 oz. box white cake mix (I have used the 16 oz. with no trouble) 1 egg Preheat oven to 350 degrees. Spread pie filling in a 9 x 13 inch baking pan. In a large bowl, cream butter to smooth texture. Add dry cake mix and egg and blend well. (Mixture will be very stiff). Spoon mixture over pie filling. Bake for 40 minutes or until golden brown. Cut into squares. Serves 16. It is very good with some Cool Whip or ice cream over top :-). This one is really good! Paula Deen's Ooey Gooey pumpkin cake 1 (18 1/4-ounce) package yellow cake mix 1 egg 8 tablespoons butter, melted Filling: 1 (8-ounce) package cream cheese, softened 1 (15-ounce) can pumpkin 3 eggs 1 teaspoon vanilla 8 tablespoons butter, melted 1 (16-ounce) box powdered sugar 1 teaspoon cinnamon 1 teaspoon nutmeg Directions Preheat oven to 350 degrees F. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey. Cool completely before cutting.

I made something similar but I saw a recipe posted on FB using the same ingredients, the pumpkin, the cake mix, the pumpkin spice and 1 tsp cinnamon. After the cake is baked, cool and then poke holes in it using the end of a wooden spoon then pour a can of condensed milk and refrigerate. I then used cream cheese frosting and scattered Skor bits across the top. It was really good and meant to be shared because it is a lot of cake. The recipe on FB also called for mixing the icing with cool whip, spread on the cake, sprinkle with Skor bits then drizzle with caramel sauce. My cousin made the same recipe and made muffins or big cupcakes which she baked with sugared pumpkin seeds on top. She thought they would be good with cream cheese frosting in the middle.

Oh, Archie, you're too funny! The ones in our respective tummies were "perfectly good!" (g)

Annie, no bake sale this time! I had them packaged up for our electrician and his son (his apprentice electrician) as I always try to make goodies for them so they got one box each, and for our friends who are in the process of moving into their first house (we're returning their round loc-n-loc container with muffins inside) --we've been helping out with moving by providing our pick-up truck but no "muscles."

The five on the plate got sent to a member of hubby's darts team who had a recent surgery. The box was labeled with the fellow's name and "plus team" on it, but when hubby came home from the darts game, he told me that the (post surgery) fellow did not share & took them home with him! :O)

You're so right about goodies like this not lasting very long in the freezer. Freezing is certainly not a deterrent!

All in all, it was a really good, quick, easy recipe!
