Cooking with Salt and Pepper?

Greetings,

I've been getting lot of recipes online lately. There are so many available at so many sites it's almost easier to do a search for a specific dish or ingredients... BTW, Thanks for the Meatloaf recipes. Anyway, the one problem I seem to be be having is with salt and pepper levels. I try not to use too much salt, and I like a bit extra pepper but my results with these downloaded recipes tends to be too much or not enough of both. It doesn't help that I have a tendency to "tweak" recipes to suit my tastes.

An example: I recently got a craving for "Mom's Old Fashioned Tuna Noodle Casserole". You know, Campbell's Creme of Mushroom soup, tuna, and noodles. To the base recipe I added a rounded cup of sauteed, sliced mushrooms, a cup of peas, an extra can of tuna, 1/2 cup of sour creme, and a few more noodles. I also tried to increase the salt and white pepper to compensate. Results??? BLAND!!!

I've already written in some changes to the recipe and tweaks for the next time but I'm still uncertain about the salt and white pepper and I *really* don't want to do this recipe 6-12 times before I get it right.

Is there some guideline I can use or develop for determining a (mostly correct) proportion of salt and pepper? Without having to do the recipe multiple times to get it right?
