Chocolate Pecan Pie Squares

1½ cups all-purpose flour

1 Tbsp sugar

¼ tsp salt

¾ cup chilled unsalted butter, cut into small pieces

Filling:

2 cups pecan halves, toasted and coarsely chopped

3 Tbsp all-purpose flour

1½ cups semisweet chocolate, cut into small pieces

¾ cup butter

1 cup brown sugar, firmly packed

5 eggs

¾ cup corn syrup

¼ cup molasses

1½ Tbsp Kahlua or strong coffee

2 tsp vanilla

½ tsp salt

Topping:

2 cups whipping cream

2 Tbsp icing sugar

2 Tbsp Kahlua or strong coffee

Make pastry by combining flour with sugar and salt in a food processor. Add butter and process on/off until dough starts to come together. Turn dough on to counter. Knead slightly. Press dough to fit a 9"x13-inch baking dish lined with parchment paper. Bake in a preheated 350F oven for 25 to 30 minutes or until lightly browned. Cool.

Meanwhile, combine pecans, chocolate and flour in a large bowl.

In a food processor, cream butter and brown sugar until light. Add eggs, one at a time. Add corn syrup, molasses, Kahlua, vanilla and salt. Combine with pecans and chocolate.

Spread mixture in prebaked crust and bake 25 to 30 minutes or until a knife inserted into the centre comes out clean. Cool completely. Cut into large squares if you want to serve as a pie or small squares if you want to serve this as a cookie.

Whip cream until light. Beat in sugar and Kahlua. Place a dollop on each square before serving.
