Oh my gosh!! You gotta make these!!!

Made the Cherry Enchiladas Glenda posted on Todays Recipe Thread. OMG!!!!! They are very,very,very GOOD!! I didn't do the best wrapping them, next time I will do better. There will be lots of next times with this recipe!

DH gave them a thumbs up too!

So that tells you they ARE good, he is a horrible fussbutt!!!

Yep! I liked the cheese on them. I think they'd have been good with just the cheese and skip the Cool Whip. But we had both.

Well, for to long promises of rain didn't deliver, and thus, I was out on a bike ride. I wrote this about it: What are the best biking friends? The kind, you can call up and they are ready in next to no time to go for a ride with you. The kind that once it starts raining, ride with you in the rain, and "yoo hoo" when the thunder claps. The kind that say: lay the bike down... when you are stopped at a red light, during a down pour, and make swimming motions... and say: Lets go for a swim. Thanks Esther! She is that kind of riding friend. She rode to the Paseo Arts Festival with me, even made me a peanut butter sandwich... and wasn't perturbed at all, when it started raining. We were the only gals leaving at the festival (on a bike) during a nice heavy downpour. What a hoot! Of course, I had started riding from home to the Memorial Day Lakes to Lakes ride. Stopped to help Sherry with a flat, and then called Esther once we got to the second lake. I had a FABULOUS ride. Thanks to both Sherry and Esther!

1Kgrace345, I kept going back and forth pondering over getting a Presto canner or the All American...I really could have gotten the Presto many years earlier, but I wanted to save my money and just wait. I have two mirro canners that I have had since I was married in 1970 that my grandmother gave to me that she used and they were literally falling apart. The handles were gone, and they no longer had handles to replace them, so I was having to lift the pot by the hot metal...last year I burned my hand really bad...but I kept on canning. I just bought those new gloves made out of well, what ever that is...my brain just backfired...I hate when that happens...darn it. My husband (behind my back) took them both to the dump...that made me really MAD because they were my grandmothers, and I would have like to have kept them for old times sake, anyways. But, he bought me this new one today..and I just about had a flying flip when he said we were going to town to get one...I got ready faster than lighting! I understand how you would still feel like you were a proud parent of your All American, lkgrace!! LOL If my husband wasn't looking at me on the way home I would have petted mine...LOL!!!

Granlan - Out here between Amarillo and Canyon we received between 2/10 and 3/10 inch of rain yesterday evening. Oh, everything smelled so good and I actually watched rain run off the roof of the shop! Our pastures are dry as a bone and I welcome any and all rain we get. Oh yes, we had a new Beefalo heifer yesterday morning. She's a cutie. Here's prayers for more rain in Oklahoma and Texas! We all need it..........

Oh good to hear...I'm trying them this week end. I sent it on to my sisters and they all replied with "you try'em first". They sounded so good to me. Good to hear reviews!

It's a Southern Living recipe that I made when visiting my son in North Carolina.
I'd make them the nite before, heat up for Sunday morning, before heading to church.

I think the blueberries would work as well. Maybe without the cinnamon.

I think they would taste good with a dollop of sour cream like blintzes too.

Glenda I missed your posting of that recipe. Would you post it again so I can try them also? Your recipes always go over so well and the pineapple casserole was a big hit can't wait to try cherry enchiladas. Thanks, Molly

Pat, I didn't put the cheese on until I took them out of the oven. AND spoon the syrup over them when serving. That melts the cheese as well.
Don't think the cheese will be good with the blueberries, but will be great with apple pie filling as well.
